1 1/4 pounds beef stew meat
4 potatoes, unpeeled, cut into 1-inch pieces
1/2 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1 can (28 ounces) baked beans in barbecue sauce

Steps:

In 3 1/2- to 4-quart slow cooker, mix beef, potatoes, onion, salt and pepper. Spread beans over beef mixture.
Cover and cook on low heat setting 8 to 10 hours or until beef is tender.

Hearty, filling and man-pleasing describes this stew. Link sausage, cumin, chilies, and chili powder is what gives this soup its Southwest flavor. This dish is quick, easy, and tastes best when it simmers in a slow cooker or even on the stove all day. Bake some Mexican cornbread, toss a simple green salad, and you have a great meal.

Ingredients

2 pounds ground beef
2 (16 ounce) packages kielbasa sausage, sliced into 1/2 inch pieces
2 cloves garlic, chopped
1 onion, chopped
2 (14.5 ounce) cans peeled and diced tomatoes, drained
4 medium baking potatoes, peeled and diced
2 (15 ounce) cans pinto beans, with liquid
2 (15.2 ounce) cans whole kernel corn, with liquid
1 (14.5 ounce) can diced tomatoes with green chile peppers, with liquid
1 (10 ounce) package frozen mixed vegetables
4 cups water
2 teaspoons ground cumin
2 teaspoons chili powder
salt and pepper to taste

Steps:

Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. Season with cumin, chili powder, salt and pepper. Cover, and simmer over medium-low heat for at least 1 hour. Stir occasionally. The longer this stew cooks, the better it gets.

1 pound lean ground beef
1 small onion, chopped
2 cloves garlic, minced
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup vegetable broth
½ cup tomato-vegetable juice cocktail
2 tablespoons sherry wine
2 teaspoons Worcestershire sauce
4 potatoes, peeled and diced
1 (8 ounce) can whole kernel corn, drained
1 cup frozen green peas, thawed
1 cup diced carrots
1 (4.5 ounce) can mushroom pieces and stems, drained
1 teaspoon dried celery flakes
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon dried marjoram
½ teaspoon dried thyme

Steps:

Cook and stir ground beef in a skillet over medium heat with onion and garlic until the meat is completely browned, about 10 minutes. Drain excess grease.
Stir cream of mushroom soup, vegetable broth, vegetable juice cocktail, sherry, and Worcestershire sauce together in a slow cooker. Add beef mixture; stir in potatoes, corn, peas, carrots, mushroom pieces, celery flakes, salt, black pepper, marjoram, and thyme. Set cooker to Low, cover, and cook until vegetables are tender and sauce has thickened, about 8 hours. If preferred, set cooker on High and cook 4 hours.

1 tablespoon canola or vegetable oil
1 cup chopped onion
1 pound lean ground beef or ground chuck
1 can (15 ounces) prepared chili beans
1 can (15 ounces) pork and beans
1 can (12 to 15 ounces) cream-style corn
1 can (15 ounces) tomato sauce
Optional: 1 green or red bell pepper, chopped
Garnish: sour cream, shredded cheese, chopped avocado

Steps:

Heat the oil in a large skillet over medium-high heat until it begins to shimmer.
Add the onion and bell pepper, if desired. Sauté for 5 minutes or until the vegetables start to soften.
Add the ground beef and cook, stirring often and breaking up any large clumps of meat, until no pink remains. Drain well.
Combine the beef mixture in the slow cooker with the beans, cream-style corn, and tomato sauce; cover and cook on low for 5 to 8 hours.
