1 jar (7.25 ounces) roasted red bell peppers, drained
1/4 cup grated Parmesan cheese
1/4 cup Italian dressing
1 jar (26 ounces) marinara sauce

Steps:

  • Place meatballs in 3- to 4-quart slow cooker. Place bell peppers in blender; cover and blend until smooth. Add cheese and Italian dressing; cover and blend until mixed. Add marinara sauce; pulse until just blended. Pour sauce over meatballs.
  • Cover and cook on Low heat setting 6 to 7 hours.
  • Stir before serving. Meatballs will hold on Low heat setting up to 2 hours; stir occasionally.

1 cup evaporated milk
1 tablespoon Worcestershire sauce
1 envelope onion soup mix
2 pounds ground beef
SAUCE:
1/2 pound sliced fresh mushrooms
1-1/2 cups ketchup
3/4 cup packed brown sugar
3/4 cup water
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
2 tablespoons chopped onion
1 tablespoon Worcestershire sauce

Steps:

  • In a large bowl, combine the milk, Worcestershire sauce and soup mix. Crumble beef over mixture and mix well. Shape into 1-in. balls. , Place meatballs on a rack in a shallow baking pan. Broil 4-6 in. from the heat for 5-8 minutes or until browned. In a Dutch oven, combine sauce ingredients. Bring to a boil. Reduce heat; add meatballs. Simmer, uncovered, for 1 hour or until the meat is no longer pink.

1 cup vegetable broth or 1 cup chicken broth
1/4 cup plain yogurt (can use Greek)
1 lb ground chicken or 1 lb ground turkey
1 egg, slightly beaten
2 teaspoons garlic cloves, minced
1/8 cup fresh parsley, minced
1 1/2 teaspoons fresh thyme leaves
1 teaspoon smoked paprika
2 teaspoons kosher salt
1/8 cup vegetable oil
1 cup chickpeas, drained if from a can
Greek yogurt, for serving
fresh parsley, for garnish

Steps:

  • First make the red pepper sauce by pureeing the peppers in a food processor; whisk together with broth and yogurt.
  • To make the meatballs, get a large bowl and combine the ground meat, egg, garlic, minced parsley, thyme, and smoked paprika; use your hands to gently mix.
  • Form into 8 2-inch meatballs.
  • Heat the oil in a large skillet until shimmering, over medium high heat; brown meatballs on all sides, about 8 minutes.
  • Push the meatballs to one side, add red pepper sauce and chickpeas; bring to a boil, then reduce heat to low and simmer until sauce reduces slightly, about 10 minutes.
  • Season with salt.

1 beaten egg

1 (14.5 ounce) can diced tomatoes
1 ½ cups beef broth
½ cup red wine
1 teaspoon dried basil
½ teaspoon ground cayenne pepper
2 bay leaves
3 cloves garlic, minced
1 (16 ounce) package frozen pepper and onion stir fry vegetable blend

Steps:

  • Thoroughly combine ground beef, rice, milk, egg, garlic, basil, and salt in a bowl. Form the mixture into about 16 1-1/2 inch meatballs.
  • Heat olive oil in a skillet over medium heat, and brown the meatballs well on all sides, about 15 minutes.
  • Place the spaghetti sauce, diced tomatoes, beef broth, red wine, basil, cayenne pepper, bay leaves, and 3 minced garlic cloves in slow cooker, and stir to combine. Put the meatballs into the slow cooker, and stir gently to cover with sauce. 1 lb lean ground beef
4 eggs, divided
1/4 cup milk
3/4 cup shredded parmesan cheese
1 cup Italian seasoned breadcrumbs, divided
1 teaspoon italian seasoning
2 cups vegetable oil (or other frying oil)
1 (7 1/4 ounce) jar roasted red peppers, drained
1/2 cup Catalina dressing
1 teaspoon italian seasoning

Steps:

  • Preheat oven to 425 degrees.
  • Lightly spray heavy duty baking sheet with cooking spray.
  • In a large bowl, combine beef, 3 eggs, milk, Parmesan cheese, 3/4 cup bread crumbs and Italian seasoning. Mix thoroughly and shape mixture into 1-inch meatballs.
  • In a small bowl, lightly beat 1 egg with 1 tablespoon water to make egg wash; in another small bowl, add remaining bread crumbs.
  • Dip meatballs in egg mixture, then roll in bread crumbs and place them on prepared baking sheet.
  • Heat oil in a heavy-bottom saucepan over high heat. Using a sloted spoon, carefully add meatballs to oil. Fry until golden brown, working in batches.
  • Remove meatballs from oil and arrange in a single layer on prepared baking sheet. Bake for 15-20 minutes.
  • For red pepper sauce, combine all ingredients in a blender and puree until smooth.

1 pound ground round (15 percent fat)
1/2 pound sweet Italian sausage
1/3 cup plain dry bread crumbs
2 eggs, lightly beaten
2 large garlic cloves, minced
1/3 cup grated Pecorino Romano cheese
1 3/4 cups canned crushed tomatoes in heavy purée

Steps:

  • Remove ground round and sausage from refrigerator 30 to 60 minutes before cooking, if possible. Place bread crumbs in large bowl and stir in 1/3 cup water. When absorbed, blend together with eggs, garlic, 1/4 cup grated Romano, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
  • Preheat oven to 425°F. Add meats to bread crumb mixture and combine well with fork. Form into 12 even balls. Lay in 1 layer in 8 x 14-inch baking dish so each is separated by about 1 inch.
  • Stir 1/4 cup water into crushed tomatoes and season with 1/8 teaspoon salt and pepper to taste. Pour tomatoes over and around meatballs. Sprinkle tops with remaining 1 1/3 tablespoons grated Romano. Bake in center of oven until meatballs are just cooked through, about 18 minutes. Serve hot.
