Steps:
- Beat together the butter, sugar, and cinnamon until creamy. Beat in the eggs until light and fluffy. Fold in the pineapple and bread cubes and pour into the slow cooker.
- Cook covered on low heat for 6-7 hours. Sprinkle with chopped pecans immediately before serving, and top with whipped cream if desired.

PINEAPPLE BREAD PUDDING (CROCKPOT)
I love pineapple so I love anything with pineapple in it. This is a recipe I found stuck in one of my old cookbooks. It was given to me by a co-worker years ago and I have always liked it. I have even replaced the pineapple with apple pie filling when that was all I had.

Steps:
- 1. In a bowl, beat butter, sugar and cinnamon with an electric mixer. Add eggs and beat until fluffy.
- 2. Fold pineapple and bread cubes into the creamed mixture.
- 3. Pour into the crockpot. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
- 4. Before serving top with chopped pecans, whipped topping and/or powdered sugar if desired. Serve warm.
ISLAND BREAD PUDDING
Steps:
- Spray the inside of a 4 or 5-quart slow cooker with butter-flavored cooking spray.
- In a large bowl, combine bread cubes, pineapple, and dried tropical mix.
- In a medium bowl, whisk together coconut milk, rum, nectar, sugar, eggs, cinnamon, and salt. Pour over bread mixture. Stir until well combined and bread is saturated.
- Transfer to slow cooker. Dot with butter. Cover and cook on low setting for 3 to 4 hours.

- In a bowl, beat sugar, margarine and cinnamon with mixer. Add eggs and beat until well blended. Fold bread cubes and pineapple into creamed mixture. Pour into crock pot. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours. Before serving, top with chopped pecans and whipped topping if desired. Serve warm.
PINEAPPLE BREAD PUDDING
Steps:
- Preheat the oven to 350 degrees F. Butter a 1.5-quart casserole dish.
- In a large bowl with an electric mixer, cream together the butter and sugar until light and fluffy, about 3 minutes. Then add the eggs one at a time, incorporating fully between each addition. With the mixer on low, beat in the pineapple just until incorporated. With a rubber spatula, fold in the bread. Pour it into the prepared dish.
- Bake in the oven until golden brown and set, 50 to 60 minutes.

- In blender or food processor, fitted with a metal blade, combine all the custard ingredients. Set aside.
- Combine raisins and crushed pineapple (and the juice); set aside.
- Place about 1/3 of bread cubes in slow cooker, place 1/3 of raisin/pineapple mixtures. Repeat 2 more times. Then pour the custard mixture over all. pressing so all the bread soaks in the custard mixture.
- top with butter, cinnamon.
- Cover and cook on LOW 6 hours.

- Place it in a well buttered 9 by 13 casserole.
