Steps:
- Heat the oil in a large frying pan and gently fry the onion for 5 minutes, or until lightly browned, stirring frequently. Add the garlic and curry paste and cook for 30 seconds more, stirring constantly.
- Transfer to the slow cooker and add the butternut squash and carrot. Sprinkle over the flour and toss together. Add the tomatoes, chickpeas, frozen spinach, sugar and stock.
- Stir well, cover with the lid and cook on low for 9-11 hours, or until the vegetables are tender and the spices have mellowed. Stir well before serving with freshly cooked basmati rice, yoghurt and assorted chutneys and pickles.

- Place the cauliflower, courgette, potato, red pepper, onion, chickpeas, tomatoes, milk, vegetable stock and curry paste into the slow cooker. Season generously with salt & pepper and give it a really good mixing.
- Place on the lid and switch on your slow cooker. Low for 8 hours or 4 hours for high.
- When the time is over, mix thoroughly the add in the frozen peas and let stand for a few minutes to cook them through.
- Your work is done! Enjoy along with rice, naan bread and maybe even some chopped fresh coriander and red chilli.

- Trim any excess fat from the chicken thighs
- Crush the garlic cloves and place into the slow cooker with the curry powder, turmeric, paprika and chilli powder (if using)
- Add the chicken thighs into the mixture and stir to evenly coat
- Next, pour in the water and stock cube
- Mix together until everything is combined
- Cook on low for 5 hours or high for 3
- Once cooked, take 3 tbsp liquid from the slow cooker and mix with 2 tbsp cornflour
- Stir through the cornflour mixture, breaking up any large pieces of chicken as you do so
- Drain the chickpeas then add to the curry
- Close the lid and continue to cook for a further 15 minutes
- Then serve! I love to eat this dish with naan bread and some fresh coriander

- To a 4-quart or larger slow cooker, add the lentils, chickpeas, onion, garlic, potatoes, vegetable broth, curry powder, cayenne pepper if using, and salt. Stir, place the lid on the slow cooker, and cook on low for 7-8 hours (high for about 4 hours), until the potatoes and lentils are cooked through. It'll be relatively thick until you do the next step.
- About 30 minutes before eating, start cooking your rice and stir in the coconut milk and peas. Continue cooking on low for another 20-30 minutes.
- Taste and add additional salt if desired.
- To serve, add some rice to your bowl plus the curry. Top with fresh cilantro. That's it!

- Put the coconut milk, curry paste, bouillon powder, chilli, ginger, garlic, butternut squash, pepper and aubergine into the slow cooker pot and stir well. Cover with the lid and chill overnight.
