SLOW GRILLED LEMON CHICKEN RECIPE:
Steps:
- Preheat your Barbecue grill.
- If using charcoal, the grill is ready when the coals have a gray-white ash coating. Using a poker, divided the coals into two piles, pushing each to one side of the grill. Place a pan between the coals beneath the grate to catch fat drippings and help prevent flare-ups.
- If using a gas grill, leave the middle burner off and heat the side burners to medium (350 degrees F). If possible, place a pan between the flames beneath the grate to catch fat drippings and help prevent flare-ups. here was not enough room to on my gas grill to do this, but I didn't have any problems with this.
- While the grill heats, prepare the chicken breasts.
- In a medium-size bowl, combine the lemon juice, olive oil, soy sauce, egg, pepper, garlic, and salt.
- Using your hands, rub the lemon sauce generously on both sides of the chicken. Pat on the salt over the lemon sauce. NOTE: Do not be afraid of using so much salt, as a lot of it dissolves and melts off into the fire.
- Arrange the chicken breasts over the center of the grill so the chicken pieces are not over the flames or hot coats. Cover the grill (leaving any vents open), cook for 30 minutes, and walk away. Do not open the lid of the grill for 30 minutes - Walk away!
- After 30 minutes, open the grill, turn the chicken pieces over, recover the grill, and cook for another 30 minutes without opening the grill.
- After 30 minutes, open the grill and insert your meat thermometer at the thickest part of the chicken pieces without touching the bone. Remove the chicken from the grill when the meat thermometer registers an internal temperature of 165 degrees F (juices will run clear when cut with the tip of a knife). Let the chicken breasts rest for 10 minutes before serving.

- In a large ziploc bag, combine chicken, olive oil, lemon zest, lemon juice, garlic, parsley, salt, and pepper.
- Seal the bag and shake it all up until well combined.
- Place bag in the refrigerator and marinate for about 4 hours or overnight.
- Preheat the grill to about 375F to 400F.
- Brush grill grates with olive oil.
- Remove chicken breasts from marinade and place them on the hot grill; cook without touching it until the chicken breasts start getting some grill marks, about 5 minutes.
- Turn the chicken breasts over, cover the grill, and let finish cooking, about 7 more minutes, depending on the thickness of the chicken. Chicken is done when a meat thermometer registers 165 degrees Fahrenheit.
- Remove chicken from grill; cover and let rest for 5 minutes before cutting.
- TO PREPARE ON A CAST IRON GRILL PAN
- Preheat oven to 350.
- Grease a grill pan with cooking spray and set it over medium-high heat.
- Add chicken pieces and cook for 4 minutes; flip, and continue to cook for 2 more minutes, or until lightly browned.
- Place grill pan in the oven and cook for 18 to 20 minutes, or until chicken is cooked through.
- Remove from oven and let rest 5 minutes.
- Serve.

- Start a charcoal, wood or gas fire in a grill big enough to bank coals to one side once they get hot. With a gas grill, turn heat to high on one side and leave other side off; if there are three burners, you can set the two side ones to medium or even low and cook in the middle. When grill is hot, put chicken on least hot part, skin-side up, and cover grill. Let chicken cook for about 20 minutes.
- When bottom of chicken is lightly seared and meat is beginning to look cooked, turn meat over in the same part of grill. Cover again and check after about 10 minutes. When skin is lightly browned, turn again. Continue to cook in the least hot part of grill until chicken looks close to done.
- At this point, you can set chicken aside for a couple of hours, if you wish. When ready to serve, move chicken to hot side of grill. With a gas grill, simply ignite the burner that is under chicken. Cook attentively, turning chicken until it is brown and crisp all over, 5 to 10 minutes. Serve hot, warm or at room temperature; just before serving, drizzle with lemon juice and sprinkle with salt and lots of pepper. Serve, if you like, with chipotle-peach salsa.

- Combine all ingredients except chicken in a blender and blend until emulsified.
- Prepare chicken:
- Put chicken pieces in a nonreactive bowl or dish or a large sealable plastic bag. Add marinade and turn chicken once or twice to coat. Marinate, covered and chilled, at least 8 hours. Bring chicken to room temperature 30 minutes before grilling and discard marinade.
- To cook chicken using a charcoal grill:
- Open vents on bottom of grill and on lid. Light a large chimney starter of charcoal (80 to 100 briquettes). Leaving about one quarter of grill free of charcoal, bank lit charcoal across rest of grill so that coals are about 3 times higher on opposite side.
- When charcoal turns grayish white (about 15 to 20 minutes) and you can hold your hand 5 inches above rack for 3 to 4 seconds, sear chicken on lightly oiled grill rack over coals, uncovered, turning occasionally, until browned, 4 to 8 minutes total. Move chicken to side of grill with no coals underneath and cook, covered with lid, turning occasionally, until just cooked through, about 12 minutes for wings, 18 to 20 minutes for breasts, and 20 to28 minutes for dark meat. Transfer chicken as cooked to a platter.
- To cook chicken using a gas grill:
- Preheat all burners on high, covered, 10 minutes, then adjust heat to moderately high. Sear chicken on lightly oiled grill rack, uncovered, turning over once, until well browned, 4 to 8 minutes total. Turn off 1 burner (middle burner if there are 3) and arrange chicken on rack above shut-off burner. Cook, covered with lid and turning over occasionally, until just cooked through, about 12 minutes for wings, 18 to 20 minutes for breasts, and 20 to 28 minutes for dark meat. Transfer chicken as cooked to a platter.

- Remove any giblets etc. from the cavity of the chicken, sometimes in a small bag.
- Stuff chicken with 1 sprig of rosemary, 1 lemon (quartered) and 4 cloves garlic.
- Season all sides of the chicken with salt and pepper.
- Remove both ends of a lemon, cut in half to create very thick slices.
- Line the bottom of the slow cooker with 4 lemon slices, 4 whole garlic cloves and a sprig of rosemary.
- Put the chicken in the slow cooker.
- Cut 2 garlic cloves in half and put all four pieces on top of the chicken along with the 2 remaining lemon slices.
- Garnish with 1-2 more sprigs of rosemary. Put the lid on the slow cooker and set to high for 4 hours.

TAJíN GRILLED CHICKEN
Tajín is a Mexican seasoning made from dried, ground red chiles, sea salt and dehydrated lime juice. It is great sprinkled over fresh cut fruit like mango and pineapple, or rimmed on an ice cold margarita. But it is also an easy way to add chile and lime to your favorite grilled meats, rubs or sauces. In this dish, the lime in the Tajín balances out the sweetness from the agave syrup, while the red chiles complement the smoky flavor of the chipotles. - Prepare a grill for medium-high, direct heat; clean the grates well, then brush them with vegetable oil. Alternatively, heat a grill pan on medium-high and brush the pan with oil.
