Crispy Garlic Butter Parmesan Smashed Potatoes are fluffy on the inside and crispy on the outside, smothered in garlic butter and melted parmesan cheese! Much like buttery and garlicky French fries or crispy hot chips. Those crispy edges that send you over the edge!

2 lbs | 1kg potatoes Yukon Gold or Carisma
A light spray of olive oil
3 tablespoons melted butter
4 cloves garlic (, crushed)
1 tablespoon fresh chopped parsley
Kosher Salt and Black Pepper to taste
2 tablespoons Parmesan Cheese

Steps:

  • Pre-heat your oven to broil (or grill) settings to medium-high heat (about 200°C | 400°F).
  • Place potatoes in a large pot of salted water. Bring to the boil; cook, covered for 30-35 minutes or until just fork-tender. Drain well.
  • Lightly grease a large baking sheet or tray with cooking oil spray. Arrange potatoes onto the sheet and use a potato masher to LIGHTLY flatten the potatoes in one piece (not too hard or they will end up mashed).
  • Mix together the butter, garlic and parsley. Pour the mixture over each potato. Sprinkle with salt and pepper and lightly spray with olive oil spray.
  • Broil (or grill) until they are golden and crispy (about 10-15 minutes). Remove from oven, sprinkle over the parmesan cheese and return to the oven until the cheese is melted.
  • To serve, season with a little extra salt and parsley, and serve immediately.

1.5 lbs. baby red or baby Yukon gold potatoes
1 tablespoon olive oil
4 tablespoons unsalted butter
1/2 teaspoon salt (divided)
1/2 tsp garlic powder
1/4 tsp EACH dried parsley, dried oregano, dried basil, dried thyme, pepper
1/4 cup freshly finely grated Parmesan cheese
2-3 tablespoons chopped chives
sour cream (optional)

Steps:

  • Add potatoes to a large pot and fill with water to about 2-inches above potatoes. Cover and bring to a boil, then reduce heat to medium, and continue to cook (covered) for 25 minutes or until potatoes are fork tender.
  • Meanwhile, preheat oven to 425 degrees F and lightly grease a large baking sheet with sides.
  • Drain and rinse potatoes in cool water. Pat dry (for crispy skins) and add potatoes to a large microwave-safe bowl. Drizzle potatoes with 1 tablespoons olive oil and ¼ teaspoon salt. Stir to evenly coat then transfer potatoes to baking sheet, evenly spaced apart. Using a potato masher, fork or back of a glass, gently smash the potatoes to about ½" thickness. *MAKE AHEAD: If making ahead, stop at this point, let potatoes cool completely and wrap tightly in plastic wrap; refrigerate.
  • To the same bowl you tossed the potatoes in oil (don't wipe out) add butter and melt in the microwave. Stir in ¼ teaspoon salt and all remaining seasonings. Drizzle potatoes evenly with butter mixture. If you have extra, wait a few minutes for the potatoes to absorb the butter then coat again.
  • Bake potatoes at 425 degrees F for 30-40 minutes (depending on size) or until deeply golden. Add Parmesan and continue to bake until melted, about 2 minutes. Garnish with chives and serve immediately.

  • Heat oven to 450°F. Spray 18x13-inch rimmed pan with cooking spray.

5 pounds small red potatoes
½ cup olive oil, or more as needed
8 large cloves garlic, minced
1 ½ teaspoons salt
¾ teaspoon ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • Place potatoes into a very large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 40 minutes. Drain.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Arrange potatoes close together in a 9x13-inch baking dish. Use a fork to press about 1 inch deep in the center of each potato until inner flesh is exposed.

12 scallions
6 tablespoons pure olive oil
Salt and pepper to taste
16 new potatoes, quartered
1 head roasted garlic
1 stick butter, softened

Steps:

  • Preheat the oven to 450 degrees. Brush the scallions with 2 tablespoons of the oil and sprinkle with salt and pepper. Place on a sheet pan and roast 10 minutes. Remove from the oven and chop coarsely. Toss the potatoes with remaining olive oil and sprinkle with salt and pepper. Roast until just a bit overcooked but not brown or dry, about 25 minutes. As soon as they come out of the oven, place the potatoes in a large mixing bowl and add the garlic, scallions, and butter. Smash with vigorously with a potato masher to achieve a rustic texture, the mixture should not be smooth. Season to taste with salt and pepper. To keep the smashed potatoes warm, put them in a bowl or pan, cover, and place the bowl in a large pan of warm water.

1 lb small red potatoes (about 20 golf ball sized potatoes) or 1 lb gold potato (about 20 golf ball sized potatoes)
1/3 cup melted butter
3 -4 tablespoons kosher salt, divided
1 -2 tablespoon fresh ground black pepper
6 slices cooked bacon (optional)
1/2 cup shredded cheddar cheese (optional)

Steps:

  • Preheat oven to 450* F.
  • Bring a large pot of water to a boil, with 2 tbsp salt. Add potatoes, and boil until quite tender, but not falling apart.
  • Line two baking sheets with parchment. Once potatoes are soft, place on baking sheets, leaving ample space between them.
  • Use a flat bottomed glass to smash each potato to 1/4" thickness.
  • Melt butter, and drizzle or brush over potatoes. Sprinkle with salt and pepper.
  • Bake for 30 minutes, until crispy. Meanwhile, fry the bacon and shred the cheese. Dice the bacon.
