Spicy Homemade Barbecue Sauce With Molasses image

Our flavorful barbecue sauce is a nice choice for pork, chicken, or shredded beef barbecue, and has a sweet and hot flavor.

1 1/2 cups ketchup
1/2 cup water
1/2 cup molasses
1/4 cup cider vinegar
2 to 3 tablespoons hot sauce (such as Texas Pete's or Frank's)
1 tablespoon Worcestershire sauce
2 teaspoons prepared mustard
1 teaspoon freshly ground black pepper
1 teaspoon onion powder

Steps:

  • Gather the ingredients.
  • Combine all ingredients in a medium saucepan over medium heat. Bring to a boil, stirring constantly.
  • Reduce heat to low and simmer, uncovered, until thickened and slightly reduced-about 5 to 10 minutes. Stir occasionally.

1 tablespoon canola oil
2 cloves garlic, minced
1/2 onion, diced
1 cup ketchup
1/3 cup molasses
1/3 cup brown sugar
4 tablespoons minced chipotle peppers in adobo sauce
4 tablespoons distilled vinegar
1 tablespoon Worcestershire sauce
Dash salt

Steps:

  • Heat the oil in a saucepan over medium-low heat. Add the garlic and onions and cook for 5 minutes, stirring, being careful not to burn them. Reduce the heat to low. Add the ketchup, molasses, brown sugar, chipotle peppers, vinegar (or less to taste), Worcestershire sauce and salt and stir. Allow to simmer for 20 minutes. Taste after simmering and add whatever ingredient it needs (more spice, more sugar, etc.).

Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

½ cup apple cider vinegar
6 tablespoons packed brown sugar
¼ cup molasses
¼ cup honey
¼ cup Worcestershire sauce
2 tablespoons rum
2 tablespoons prepared yellow mustard
1 tablespoon liquid smoke flavoring
1 tablespoon ground red chile pepper
2 tablespoons freshly ground black pepper
2 tablespoons garlic powder
1 teaspoon ground allspice
4 cups ketchup

Steps:

  • Mix vinegar, brown sugar, molasses, honey, Worcestershire sauce, rum, mustard, liquid smoke, ground chile, black pepper, garlic powder, and allspice together in a heavy saucepan over medium heat. Bring to a boil, reduce heat, and simmer until sauce is smooth and brown sugar is dissolved, about 5 minutes.
  • Stir ketchup into sauce and bring to a boil. Reduce heat and simmer, stirring occasionally, until sauce is dark and thickened, about 30 minutes.

4 tablespoons unsalted butter
1/2 cup finely chopped yellow onion
1 garlic clove, peeled and finely chopped
1 1/3 cups ketchup
1/2 cup apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon liquid smoke
1 cup packed dark brown sugar
1 tablespoon Tabasco sauce
1/4 cup molasses
kosher salt & fresh ground pepper

Steps:

  • Melt butter in a medium saucepan over medium heat. Add onion and garlic and saute until softened, about 6-8 minutes.
  • Add the ketchup, vinegar, worcestershire, liquid smoke, and brown sugar. Stir until fullly mixed and bring to a simmer. Add the tabasco and the molasses. Simmer 25-30 minutes, until sauce is a medium thickness. Season to taste with salt and pepper.
  • Let sauce cool for 1 hour, then puree until smooth in a blender. Serve warm or at room temperature.Store in an airtight container in the refrigerator.

I was sent some pomegranate molasses as a sample to try and loved its sweet and sour, tangy kind of taste. I reckoned that it would work brilliantly in a barbecue sauce -- and our kids agreed. You can use as a barbecue mop in the last 30 minutes of cooking your meat on the barbecue or marinate chicken or other meat in sauce for at least 30 minutes before cooking in oven or on barbecue. Do not grill or bake for longer than 45 minutes, as the sugar syrups and tomato ketchup are likely to burn and make the food taste bitter.

1 tbsp olive oil
½ small onion , finely chopped
2 garlic cloves , chopped
100ml apple cider vinegar
85g dark soft brown sugar
1 ½ tsp mustard powder
1 ½ tsp smoked paprika
1 ½ tsp celery salt
2 tsp hot chilli powder
1 tbsp Worcestershire sauce
2 tsp chipotle paste
2 tbsp tomato purée
1 tbsp liquid smoke (optional - see tip, below)
350ml passata
75ml black treacle

Steps:

  • Heat oil in a large saucepan. Add onion and garlic and cook for 5 mins or until soft. Add the rest of the ingredients.
  • Bring to the boil, turn down to simmer for 15 mins, then leave to cool.
