An eye-catching dish, this refreshing salad is a great main course for a summer lunch or light dinner. The dressing's Dijon flavor goes nicely with the turkey, and the apples add crunch. -Carolyn Johns, Lacey, Washington

5 tablespoons olive oil
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1/2 teaspoon lemon-pepper seasoning
SALAD:
6 to 8 cups watercress or torn romaine
1 medium carrot, julienned
10 cherry tomatoes, halved
8 ounces sliced deli smoked turkey, cut into strips
4 medium apples, sliced
1/3 cup chopped walnuts, toasted

Steps:

  • Whisk together first four ingredients. , Place watercress on a platter; top with carrot, tomatoes, turkey and apples. Drizzle with dressing; top with walnuts. Serve immediately.

3 tablespoons mayonnaise
2 tablespoons prepared Dijon-style mustard
1 tablespoon cider vinegar
1 teaspoon white sugar
¼ teaspoon salt

Steps:

  • Place cooked turkey meat, celery, green onions and red bell pepper in a blender or food processor. Finely chop using the pulse setting.
  • Transfer the turkey mixture to a medium bowl. Mix in mayonnaise, prepared Dijon-style mustard, cider vinegar, white sugar and salt. Cover and refrigerate 8 hours, or overnight, before serving.

2 garlic cloves, halved
2/3 cup reduced-sodium fat-free chicken broth
1/4 cup chopped fresh parsley
2 tablespoons fresh lemon juice
2 tablespoons apple cider vinegar
1 tablespoon olive oil
2 teaspoons Dijon mustard
1/2 teaspoon fresh ground black pepper
6 cups torn romaine lettuce leaves
1 (5 ounce) bag spring mix mesclun
3 large apples, cored and diced
1 fennel bulb, thinly sliced
1 cup halved red seedless grapes
1 lb smoked turkey breast, sliced into strips
1/3 cup toasted chopped pecans
1/3 cup crumbled goat cheese (optional)

Steps:

  • To prepare vinaigrette, drop garlic through food chute with food processor on; process until minced.
  • Add chicken broth and next 6 ingredients (through black pepper); process until well blended. Set aside.
  • To prepare salad, combine romaine and mesclun mix on a serving platter. In a large separate bowl, combine apples, fennel, and grapes.
  • Pour about + of the vinaigrette over the apple mixture and toss gently to coat. Spoon the apple mixture over lettuce.
  • Arrange the smoked turkey over the salad and sprinkle with the pecans and goat cheese if desired.
  • Spoon the remaining vinaigrette over the salad. Serve immediately.

1 cup diced cooked turkey
3/4 cup chopped unpeeled apple
1/2 cup sliced celery
2 tablespoons raisins
1/3 cup Italian salad dressing
1 tablespoon brown sugar

shredded lettuce or cabbage

Steps:

  • In a bowl, mix together the first 4 ingredients; set aside.
  • In a small bowl, stir together the salad dressing and brown sugar; pour over the turkey mixture and gently toss.

Mix together tender green or red leaf lettuce with shredded red cabbage for flavor and textural contrast. Tart dried cherries or cranberries add sharpness to balance the sweet-tasting turkey and a chewy texture to contrast the tender greens, crisp apples, and crunchy nuts. Toast the almonds in a skillet over medium heat to intensify their flavor. NOTE: If you like, walnuts can be used in place of almonds in this main-course salad.
