ALMOST-FAMOUS BARBECUE CHICKEN PIZZA

- Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
- Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
- Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. Lightly brush the dough with olive oil, cover with another piece of parchment and set aside to let rise slightly, about 30 minutes.
- While the dough rises, mix 2 tablespoons barbecue sauce and 1 teaspoon olive oil in a small bowl. Put the chicken in a baking dish, season with salt and pepper and brush with the barbecue sauce mixture. Bake on the middle oven rack until cooked through, about 20 minutes. Let cool, then cut into 1/2-inch cubes.
- Uncover the dough and spread with the remaining 1/3 cup barbecue sauce, leaving a 3/4-inch border. Top with the chicken, gouda, mozzarella and red onion. Slide the pizza (on the parchment) onto a pizza peel or another inverted baking sheet, then slide onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, 20 to 25 minutes. Sprinkle with cilantro.

- Prepare the homemade pizza dough. Allow dough to rise for 1-2 hours.Feel free to use a homemade or premade gluten free pizza crust if you'd like to keep this recipe gluten free. The process of making gluten free pizza crust differs from regular pizza crust, so be sure to read and follow the directions thoroughly for the best results.
- Heat oven to 350 degrees.
- Place chicken breasts on baking pan. Drizzle olive oil over chicken breasts and add garlic powder, smoked paprika, cayenne pepper, kosher salt, and pepper. Make sure chicken is coated in spices.
- Bake chicken breasts for 20-22 minutes (or until internal temperature has reached 165 degrees Fahrenheit) and remove from oven. Set aside.
- Place BBQ sauce, tomato sauce, garlic powder, smoked paprika, oregano, thyme, kosher salt and pepper in a small bowl. Stir until combined.
- Chop button mushrooms, fresh spinach, and cilantro. Dice the chicken into chunks. Shred Gouda cheese.
- Bring the oven temperature up to 425 degrees.
- Roll out 2 pizza crusts. Place the pizza crusts on two separate pizza pans. On each crust place 1/2-3/4 cup of sauce, sliced mushrooms, spinach, chicken, and Gouda (in that order).
- Bake pizzas for 10-12 minutes or until cheese is golden and bubbly.
- Remove from oven and garnish with pickled jalapenos and cilantro. Slice and serve.

- Preheat the smoker to 250°.
- Rub: Combine all of the ingredients and set aside.
- Spritzer: Add the apple juice, cider, and water to a spray bottle and shake. Set aside.
- Sauce: In a small saucepot add in the BBQ sauce, butter and 1 cup of the spitzer mix. Keep warm.
- Rub the olive oil all over both sides of the chicken creating a thin layer.
- Next, generously season the chicken on both sides with the rub. There will be 2-3 tablespoons leftover.
- Add the chicken to the smoker and cook for 1 hour. Spray the chicken with 4-5 sprays each of the spritzer and do so after that every 20-25 minutes or until it reaches an internal leg temperature of 150° to 155°.
- Sauce the chicken using a brush and smoke until it reaches an internal leg temperature of 165°.
- Remove from the smoker and let rest for 20-30 minutes before serving.
- Serve alongside BBQ sauce.
