SMOKY BEEF AND BACON CHILI
A smoky, spicy, hearty chili with bacon and ground beef. Serve with your choice of toppings--sour cream and Cheddar cheese work well.

Steps:
- Melt butter in a large pot over medium heat. Add bacon and cook until bacon begins to brown, about 4 minutes. Add onion, cover, and cook until translucent, 4 to 8 minutes. Add garlic; cook and stir for 2 minutes.
- Increase heat to medium-high. Add ground beef and cook and stir until browned and crumbly, 6 to 10 minutes. Stir in chili powder, paprika, cumin, salt, and cayenne pepper; cook for 2 to 4 minutes. Add tomatoes, beer, tomato sauce, Worcestershire, and hot sauce; stir well.
- Reduce heat to medium-low. Cover partially and cook until reduced, 30 to 45 minutes. Stir in black and kidney beans. Cook for an additional 10 to 15 minutes. Serve hot.

SMOKY VEGGIE CHILI
This is a recipe that has stuck with me for many years. It always makes me think of that time of year when summer's ending and you're taking out the soup pots. This chili is packed with veggies like beans, mushrooms and kale which contain plenty of phytonutrients and protein. You'll get a balance of sweetness from the yams and smokiness from the paprika and chipotle. All together it's a simple, one-pot family meal.

- Set a medium stockpot or Dutch oven over medium-high heat. (Don't use a nonstick pot.) Dice onion, and add it to the dry pot. Stir continuously until the onion begins to turn translucent, browns slightly, and begins to stick. Add 1/2 cup vegetable stock, to deglaze the onions.
- Meanwhile, dice the sweet potato and set it aside. To the onions, add ground cumin, chili powder, smoked paprika, and chopped chipotle chile. Add diced sweet potato and remaining 2 cups of vegetable stock. Simmer over medium heat until the sweet potatoes begin to soften, about 6-8 minutes.
- While the sweet potatoes are cooking, dice the zucchini and mushrooms. Crush the canned tomatoes by hand, and add them to the pot.
- Add diced veggies. Rinse the canned beans, then add them to the pot. Season chili with salt to taste. Simmer over medium-low heat until vegetables are slightly tender, about 20 minutes. Coarsely chop kale and cilantro, and add to the pot.
- Serve hot, garnished with an optional dollop of dairy-free sour cream, sliced avocado, and chopped scallions.
SMOKY KENTUCKY CHILI
A uniquely Kentucky take on what is in my opinion the best winter recipe. If you can't find bourbon-smoked spices, you can substitute any kind of smoked spices. The bourbon barrel aging process adds a lovely deep almost woodsy flavor that complements the spicy flavor of the chili.

- In a large nonstick saute pan, brown the beef and turkey. Season with smoked salt and smoked pepper. Drain and add to a large pot or slow cooker insert.
- In the same pan, toast the garlic with bourbon-smoked chili powder, chipotle chili powder, cumin, oregano, coriander, smoked paprika, and turmeric until fragrant. Add to pot or slow cooker insert and stir to combine with meat mixture. Add beer, beef stock, crushed tomatoes, black beans, pinto beans, Worcestershire sauce, and chipotle pepper sauce. Stir to combine.
- Simmer on low in large pot or cook in slow cooker on low for at least 2 hours, longer if possible. Make sure to taste the chili before serving and adjust the seasonings as necessary.
- Serve chili with sour cream, shredded cheddar cheese, diced onions, tortilla strips, or any other toppings of your choice.

SMOKY VEGAN CHILI
This recipe is a long-time favorite in my house. It's quick to make and is very healthy. The adobo chili is a must. You can find them in a small can in the Mexican food aisle of most grocery stores. This chili freezes well, so double the recipe if you want.

- Heat olive oil in a large pot over medium heat. Cook and stir onion in hot oil until tender, about 5 minutes.
- Stir burger crumbles and browning sauce with the onion until onion and crumbles are coated with sauce; add stewed tomatoes, vegetable broth, chili beans, tomato sauce, tomato paste, chipotle chili, and salt.
- Bring mixture to a low boil, reduce heat to medium-low, and cook until the tomatoes and beans are softened, 15 to 20 minutes.

- In a large skillet, heat oil over medium-high heat; add beef and cook in batches until no longer pink, 7-10 minutes, breaking into crumbles. Remove with a slotted spoon; drain. Add green pepper, onion and carrot; cook and stir until slightly browned, about 2 minutes. Add garlic; cook 1 minute longer. - Heat the oil in a casserole or shallow saucepan over a medium heat, then fry the beef for about 10 mins until any fat has been released and the beef has started to brown. Add the onion and fry for another 8-10 mins until the onions have softened and started to brown slightly. Add the garlic and stir for another minute.
- Stir in the cumin seeds, ground coriander, oregano and a good grinding of black pepper, and continue to fry the mixture for a few minutes until fragrant. Add the vinegar, then the chipotle and tomato pastes, and stir everything together. Tip in the tomatoes and a can of water, then add the yeast extract and crumble in the stock cube. Stir well and bring the mixture to a simmer. Cook for 20 mins, stirring occasionally.
- When the chilli has thickened, tip in the beans and half the liquid from the can. Simmer for 20 mins more, taste for seasoning, then serve with rice, and top with the soured cream, jalapeños, coriander leaves and onion.

- Preheat your grill or smoker to 225 degrees with thin blue smoke from soaked wood chips or chunks.
- While your grill preheats, prepare your meat and vegetables for smoking. Lay a large piece of aluminum foil on a baking sheet. Evenly spread the onions, peppers, and garlic across the foil and drizzle with the olive oil. Set an elevated cooling rack over the vegetables. Gently spread your ground beef into a large patty, about 1/2 inch thick, and set on the cooling rack.
- In a small bowl. combine all of the spices. Sprinkle liberally over both the vegetables and ground beef. Set the baking pan on the grate of your smoker, close the lid and smoke at 225 for about an hour.
- Heat a large pot over medium heat. Slowly transfer the vegetables and meat into the pot and stir with a wooden spoon or spatula, breaking up the meat into smaller pieces. Pour in the can of tomatoes, beef broth, and beans.
