CHEESE GRITS BOWLS WITH SMOKED SAUSAGE
Cheese Grits Bowls with Smoked Sausage are full of grits, cheese, and smoked sausage and topped with a fried egg. Such a hearty and delicious way to start the day!

Steps:
- Add water, salt, pepper, and garlic powder to a medium saucepan. Bring to a boil. Whisk in grits. Reduce heat to medium-low and cover. Whisk occasionally. Cook for about 20 to 30 minutes. Add more water if grits get too thick.
- Add butter, heavy cream and cheese and stir until melted. Remove from heat and keep warm.
- While grits are cooking, cook sausage in a nonstick skillet coated with a little oil. When browned, remove from heat and keep warm.
- In the same nonstick pan you cooked the sausage in, melt 1 tablespoon of butter. Crack the eggs in and cook until egg yolks start to set.
- For each grits bowl, place about 1 cup of grits in a bowl. Top with sausage and an egg. Sprinkle with a few green onions and a little extra cheese.

- Place grits in a serving bowl; cover with the sausage mixture. Top with hot sauce.

GRITS 'N' SAUSAGE CASSEROLE

- In a saucepan, bring water to a boil. Slowly whisk in the grits and 1/2 teaspoon salt. Reduce heat; cover and simmer for 5 minutes, stirring occasionally., In a large bowl, combine grits, sausage and 1-1/2 cups cheese. Beat the eggs and milk; stir into grits mixture. Add the butter, pepper and remaining salt., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, about 1 hour. Sprinkle with remaining cheese; bake 15 minutes longer or until cheese is melted. Let stand for 5 minutes before cutting.

Being married to a Southerner...I had to learn how to make and use grits...he just loves this casserole...use any sausage you want...he likes when I use Beddar Cheddar smoked sausage...this is one delicious casserole...its not just for breakfast, we have this anytime... see, even us Northern girls can cook grits...Lol! Steps:
- 1. Preheat your oven to 350 degree F. Spray a 3 quart casserole dish with nonstick cooking spray or grease. Set aside. Saute the sausage in 1 tsp oil just till it starts to get some caramelization as it's already cooked. If using raw sausage cook until no longer pink, and starting to brown. Drain if needed.
- 2. In a large saucepan, bring the 4 cups water to a boil. Stir in the grits and salt, reduce heat to medium. Cook for 2 1/2 - 5 minutes; stirring frequently, until nice and creamy.
- 3. Stir in the cheddar cheese and butter until cheese is melted.
- 4. Now, stir in the beaten eggs, milk and sausage. Pour into prepared baking dish.
- 5. Sprinkle evenly with Monterey Jack cheese. Place in oven and bake for 25 - 30 minutes or until set and cheese is turning golden.
- 6. Enjoy!
