4 tomatoes, diced
2 onions, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
3 jalapeno peppers, diced
1 lime, juiced
¼ teaspoon garlic powder, or to taste
salt and ground black pepper to taste
1 bunch fresh cilantro, finely chopped

Steps:

  • Preheat a smoker grill to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's directions.
  • Combine tomatoes, onions, bell peppers, and jalapeno peppers in an aluminum grill pan. Place on the grate of the preheated smoker grill; smoke for 3 hours.
  • Remove vegetables from the smoker and place in a blender. Blend to desired consistency. Mix in lime juice, garlic powder, salt, and pepper. Add fresh cilantro for decoration.

2 cloves garlic, peeled
1 small red onion, peeled and quartered
1 jalapeno, seeded and quartered
8 plum tomatoes, quartered
1 cup cilantro leaves, washed and dried
Juice of one lime
2 tablespoons olive oil
Salt and pepper

Steps:

  • Combine garlic, onion and jalapeno in a blender or food processor and process until finely chopped. Add tomatoes and blend. Add cilantro, lime juice and oil and continue blending. Transfer salsa to a bowl and season with salt and pepper.
  • Roasted salsa variation: Place the garlic, onion, jalapeno and tomatoes on a sheet pan and roast for 30 minutes at 400 degrees, then proceed as directed.

1 1/2 pounds plum tomatoes, halved lengthwise
4 large fresh Anaheim chilies,* halved lengthwise, seeded
1 large onion, quartered lengthwise
1 large yellow bell pepper, quartered
1 head of garlic, top 1/3 cut off, head left intact
1/4 cup corn oil
2 cups hickory-wood chips, soaked in water 1 hour, drained
1 9-inch-diameter disposable aluminum foil pie pan
1/3 cup chopped fresh cilantro
1/4 teaspoon cayenne pepper

Steps:

  • Combine first 5 ingredients in large bowl. Add oil; toss gently to coat. Sprinkle generously with salt and pepper.
  • Prepare barbecue (medium-high heat). Arrange hickory chips in foil pie pan; place directly atop coals. Allow chips to begin smoking, about 10 minutes. Grill vegetables until tender, turning frequently, about 10 minutes for tomatoes, 20 minutes for chilies, onion, and bell pepper, and 35 minutes for garlic. Transfer vegetables to cutting board. Cool. Remove any loosened peel from tomatoes, chilies, and bell pepper. Peel garlic. Coarsely chop all vegetables; transfer to medium bowl. Mix in cilantro and cayenne pepper. Season with salt and pepper. (Can be made 8 hours ahead. Cover; chill. Bring to room temperature before serving.)

Then optional for those that like it real hot use ghost chilies. This makes nice little gifts, just pack a basket with it and some chips, avocados, cheese, beer or margarita mix etc.

10 cups meaty tomatoes, diced seeded and peeled (I don`t peel more vitamins and easier)
2 cups bell peppers (red or green)
2 cups onions, diced
4 jalapenos, seeded and deveined veins can stay in if you like it hot
2 -4 chipotle chiles in adobo
6 garlic cloves
1 -3 teaspoon salt, to taste
1 (12 ounce) can tomato paste
1 (4 1/2 ounce) can diced green chilies (for extra heat) or 2 fresh ghost bell peppers (for extra heat)
2 tablespoons sugar, use to taste if tomatoes are sweet can skip
1 fresh lime, zest and meat
1 cup vinegar, 5% acidity
1 cup packed cilantro, chopped

Steps:

  • In a food processor, process with the metal blade the meat of lime, jalapenos, garlic, and chipotle peppers and ghost chilies if using till minced fine.
  • Combine all ingredients in a large saucepan stir to mix well and cook for 10-15 minutes.
  • Ladle into hot jars leaving 1/2 headspace.
  • Remove any air bubbles.
  • Clean rims and adjust lids.
  • Process in a boiling water canner for 15 minutes.
  • Remove from bath and cool in a wind free area.
  • Label and store in a cool, dark, dry place.

1 cup soaked mesquite wood chips
2 medium onions
12 garlic cloves, peeled
3 teaspoons barbecue seasoning, divided
2 pounds tomatillos, husks removed (about 12)
2 pounds plum tomatoes (about 8)
6 jalapeno peppers
1-1/2 cups cider vinegar
1-1/4 cups packed brown sugar
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/3 cup minced fresh cilantro

Steps:

  • Add wood chips to grill according to manufacturer's directions. , Cut onions in quarters; place in a small bowl. Add garlic and 1-1/2 teaspoons barbecue seasoning; toss to coat. Arrange on grilling grid; place on greased grill rack. Grill, covered, over medium heat 10-15 minutes or until tender, turning occasionally., Meanwhile, cut tomatillos, tomatoes and jalapenos in half; place in a large bowl. Add remaining barbecue seasoning; toss to coat. Grill in batches, covered, over medium heat 4-6 minutes or until tender, turning occasionally., When cool enough to handle, chop vegetables. Transfer to a Dutch oven; stir in vinegar, brown sugar, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until slightly thickened. Immediately stir in cilantro. , Carefully ladle hot mixture into 4 hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

My son John likes a smooth salsa and he and my Husband like it extra HOT. So this is made smooth and spicy, But I take it over the top and raise the HEAT in 3 of the jars by adding more pureed Chipotle in adobo sauce. You can skip this step by just filling the jars as the recipe calls for,

2 cups red bell peppers, seeds and stem removed and rough chopped
2 cups onions, rough chopper
4 -6 chipotle chiles in adobo, taste before you add more
1 -3 teaspoon salt, to taste
1 (12 ounce) can tomato paste
2 tablespoons sugar, use to taste if tomatoes are sweet can skip
2 fresh limes, zest and meat (white pith and seeds removed)
1/2 cup packed cilantro, chopped and or 1/2 cup chopped basil
6 garlic cloves
1 tablespoon cumin
10 cups fresh pureed organic tomatoes (seeds removed and leave skins for on extra benefits before blending)

Steps:

  • Place all the ingredients except for the pureed tomatoes in a blender and blend till smooth making sure all the garlic in broken down. Depending on you blender you may have to do in batches.
  • Place all the ingredients in a heavy bottom pot bring to a boil then simmer 15 minutes stirring occasionally.
  • Ladle into hot jars leaving 1/2 inch headspace. Wipe jars and adjust lids and process in water canner for 15 minutes. Cool over night, label and store out of sunlight.
  • FYI: An extra step is not necessary but for my family it is! I saved 3 cups to kick up the heat for my son and husband by adding 3 more pureed chipotles in adobo sauce.
  • I did add 2 more tablespoons bottled lemon juice to the remaining three cups. and brought back up to a boil then simmered while the other jars were in the water bath, This is extra hot so no need to do unless you have family members like mine that request it hotter!

  • Start by tossing tomatoes,(I used a carton of cherry tomatoes but any will do) 2-3 jalapeños, 2-3 garlic cloves, onto a smoker tray lined with foil or parchment paper. If you like a super smokey flavor you can put the onion into the smoker as well, I prefer the onion added fresh after the peppers, tomatoes, and garlic are smoked.
  • Get the smoke going in your smoker and turn smoker to medium-high heat. (around 300 degrees) Smoke the vegetables for 45 mins. (I used apple wood bisquettes however any type will work fine) If you are using a Trager type grill you can use a metal pie pan and place ingredients directly over the coals.
  • Remove the tray from the smoker and place ingredients into the food processor or blender. If you prefer a more mild salsa then remove the seeds from the jalapeno before adding it to the bowl. Add in a handful of fresh cilantro, 1/2 of a large red onion, and a tsp of salt.
  • Squeeze in the juice of 1 lime. Massage the lime before cutting to get the most juice for your squeeze.
