SMOKED SALMON PIZZETTES

Steps:
- Special equipment: a 2-inch round cookie cutter
- Put an oven rack in the center of the oven. Preheat the oven to 450 degrees F.
- On a lightly floured work surface, roll the pizza dough into a 1/4-inch thick round. Using a 2-inch round cookie cutter, cut out 15 circles. Arrange the circles on a heavy baking sheet. Using the tines of a fork, prick the dough all over. Drizzle with olive oil and bake until golden brown, about 7 to 10 minutes. Remove from the oven and cool for 10 minutes.
- In a small bowl, mix together the mascarpone cheese, sour cream and capers until smooth. Season with salt and pepper, to taste. Spoon about 1/2 teaspoon of the mascarpone mixture into the center of each pastry round. Top with a piece of smoked salmon and press gently.
- Arrange the pizzettes on a platter and sprinkle with chopped chives just before serving.
GRILLED SMOKED-MOZZARELLA AND YELLOW SQUASH PIZZETTES

- Prepare grill. Thinly slice squash. Halve and thinly slice tomato lengthwise. In a large nonstick skillet heat oil over moderate heat until hot but not smoking and cook squash with salt and pepper to taste, stirring frequently, 2 minutes. Add tomato and cook until squash is barely tender, 2 to 3 minutes. Remove from heat and stir in basil.
- Divide dough into 4 pieces. On a floured surface with floured hands rotate and stretch each piece into a 4-inch round. (Do not roll out, as dough has too much elasticity and will shrink.) Put rounds in one layer on cornmeal-dusted baking sheet.
- Grill rounds, cornmeal sides up, on a lightly oiled rack set 5 to 6 inches over glowing coals until undersides are golden, 2 to 3 minutes. If crusts puff up in the center, prick with a fork to allow air to escape. Flip crusts over with a metal spatula and top each with one fourth squash mixture. Sprinkle pizzettes with mozzarella and grill until undersides are golden and cheese is melted, about 2 minutes.
HOMEMADE SICILIAN PIZZETTE RECIPE BY TASTY
Here's what you need: store bought pizza dough, crushed san marzano tomatoes, parmesan cheese, fresh basil, pancetta, red onion, extra virgin olive oil, salt, pepper

Steps:
- Upon bringing your dough home from the store, place it in a bowl that has been lightly greased with olive oil.
- Place the dough inside the bowl and cover the dough with a kitchen cloth.
- Let the dough sit for approximately 1.5-2 hours, or until the dough rises and expands.
- Once risen, place the dough onto a baking sheet and cut it into 2 halves.
- Begin stretching the dough in a circular manner on the baking sheet.
- After some pan stretching, put each of your fists underneath the dough and gently stretch the dough out in a circular direction.
- One stretched into a circular shape, grease your baking sheet liberally with olive oil and place your dough back onto the baking sheet.
- Next, brush the top of your dough with Olive Oil and layer as follows:
- Crushed San Marzano tomatoes
- A sprinkling of salt and pepper
- Sprinkling of parmesan cheese
- Pieces of fresh basil
- Pieces of cubed pancetta
- Pieces of chopped red onion
- A light drizzle of olive oil
- Ensure that all the ingredients are distributed evenly throughout the entire circumference of the pie.
- Bake in a convection oven at 500°F for 25-35 Minutes or until pizzette is golden brown.

- Divide the pizza dough into 4 even pieces. Roll each piece into an oval and brush with the vegetable oil. Working 1 or 2 at a time, grill each piece of dough until nice grill marks form on the first side, about 2 to 3 minutes. Flip the dough and continue to cook on the other side until the dough is cooked and toasted on the second side. Remove the pizza crust to a baking sheet and keep warm in the oven while you continue with the remaining dough.
- When all the crusts are cooked, spread 2 tablespoons of fudge on each crust and spread it evenly almost all the way to the edge.
