This is an awesome curry for those who like their curries very hot indeed. It's from Pat Chapman's excellent "Curry Club" recipe book and is one of my favourites. Serve it with plain or pullao rice (and with a yoghurt raita, in case it is too hot!) Update note re some reviews: Chef #379274 from New Orleans, Indian cooking usually uses birdseye chilies, fresh or dried - I usually use dried as they store really well. Re the salt comment - I'm not sure why you'd think lack of salt in a recipe means it's an oversight? You don't need added salt in most Indian recipes as it's salty enough with the salt that's in most ingredients anyway (ketchup, tinned tomatoes etc). Of course feel free to add salt if you like things salty - and want to harden your arteries and kill the flavour!: ) Chef johnthetrevor, this is an authentic Indian recipe with a beautiful flavour - it's not just about the hotness - if you prefer using commercilly bought vindaloo paste, don't bother with this recipe, just follow the instructions on your jar of paste! :)

1 1/2 lbs meat or 1 1/2 lbs poultry, chopped into 1 inch cubes
1 large onion, finely chopped
8 garlic cloves, finely chopped
1 ounce fresh ginger, finely chopped
3 tablespoons ghee or 3 tablespoons oil
14 ounces canned tomatoes
1 tablespoon tomato ketchup
1 tablespoon tomato puree
12 dried chilies (birdseye work well) or 12 fresh chili peppers (birdseye work well)
1 teaspoon cumin, ground
1 teaspoon coriander, ground
3 teaspoons chili powder (dried, ground chiles such as cayenne)
1 teaspoon dried fenugreek leaves (optional)
1 teaspoon garam masala

Steps:

  • Fry the meat in a pan in half the ghee or oil, until sealed (5 to 10 minutes). Set aside.
  • Fry the onion, garlic and ginger until golden in remaining ghee or oil.
  • Mix the spices with a little water to make a paste.
  • Add to the onion mixture and cook for 10 minutes.
  • Add the tomato (tinned, ketchup and puree) and chilies.
  • Cook for a further 10 minutes.
  • Combine the meat and all ingredients in a casserole dish and cook in a pre-heated oven at 400 deg F, Gas 6 for 45 to 60 minutes. (Alternatively, add meat back to the pan with the mixture and cook covered on low heat for an hour. At this stage you can also just throw it all into the slow cooker if you prefer.).

1 1/4 to 1 1/2 pound piece flank steak
1/2 cup high temperature oil, such as peanut, canola or safflower, plus 2 tablespoons
2 shallots, peeled and thinly sliced
3 tablespoons cornstarch
Salt
1 pound whole-grain or whole-wheat spaghetti
6 ounces or 1/3 pound shiitake mushrooms
1 red bell pepper
1 red hot chile pepper
3 to 4 cloves garlic, grated or chopped
4 to 5 scallions, thinly sliced on an angle
3 tablespoons curry paste, mild to medium heat (recommended: Patak's)
3 tablespoons fish sauce
2 cups chicken stock
1 cup shelled frozen edamame, thawed
1 cup loosely packed, basil leaves, thinly sliced or torn
1 lime, zested and juiced
Freshly ground black pepper

Steps:

  • Put the flank steak in the freezer for a few minutes to aid in thinly slicing safely.
  • Heat 1/2 cup oil in a small skillet over medium heat. Dredge the shallot slices in the cornstarch and shake off any excess. Add the shallots into the heated oil and remove them to a paper-towel lined plate when they become a light golden-brown color.
  • Bring a large pot of water to a boil over medium heat. Salt the water and add the pasta. Cook to al dente.
  • While pasta water comes to a boil, stem and thinly slice the mushrooms, and seed and thinly slice the sweet and hot peppers.
  • Remove the meat from the freezer and thinly slice into 1/4-inch wide by 2-inch pieces.
  • Heat the remaining 2 tablespoons of oil in large skillet or wok over medium-high heat. Add the beef and cook in a single layer for 2 to 3 minutes. Turn the meat over and add shiitakes, sweet and hot peppers, garlic and scallions. Stir-fry 2 to 3 minutes, then add the curry paste, fish sauce and stock and bring to a boil. Add in the edamame, and cook for 1 minute to heat through, then add the basil.
  • Drain the pasta and put into a large serving bowl. Add the beef mixture, the lime zest and lime juice. Toss vigorously and season with some black pepper, to taste. Garnish with the fried shallots sprinkled on top.

2 cups milk, coconut
3 tablespoons curry paste, red, thai
2 garlic cloves, crushed
1 lb steak, braising, cut 3/4-inch chunks
2 kaffir lime leaves, fresh (I use frozen when I can't get fresh)
3 tablespoons lime juice, fresh squeezed
2 tablespoons fish sauce
1 chili, red, large, fresh, seeded and sliced thinly
1/2 teaspoon turmeric, ground
1/4 teaspoon salt, sea
1/2 teaspoon pepper, black
2 tablespoons basil, fresh, chopped
2 tablespoons cilantro, fresh, chopped
1/3 cup coconut, toasted, shredded (garnish)
4 cups rice, steamed

Steps:

  • Bring the coconut milk to boil, in a large pan.
  • Lower the heat and simmer for 10 minutes, or until it has thickened.
  • Now stir in the curry paste and garlic, simmer 5 minutes.
  • Add the beef to the pan and bring to a boil, stirring constantly.
  • Lower the heat add the lime leaves, juice, fish sauce, chili, turmeric and salt.
  • Cover the pan and simmer 25 minutes.
  • Please add a little water if the sauce looks dry.
  • Lastly you will add the basil and cilantro, taste and season with salt and pepper if you desire.
  • Garnish with the toasted coconut and serve with steamed rice.

Excellent and easy slow cooker beef curry recipe. You can make it as spicy or mild as you would like. Star anise is the key to the flavor. Serve over basmati rice.

1 (14.5 ounce) can diced tomatoes, undrained
1 large onion, sliced
1 cup beef broth
1 cup coconut milk
3 tablespoons curry powder
3 cloves garlic, pressed
2 bay leaves
1 teaspoon minced fresh ginger root
1 teaspoon cayenne pepper, or more to taste
1 whole star anise
salt and ground black pepper to taste
1 (1 1/2-pound) flank steak
½ lime, juiced

Steps:

  • Combine diced tomatoes with their juices, onion, beef broth, coconut milk, curry powder, garlic, bay leaves, ginger, cayenne pepper, star anise, salt, and pepper in the bottom of a slow cooker. Stir to combine. Add flank steak to the mixture.
  • Cover and cook on Low until beef is tender and cooked through, about 8 hours. Add lime juice just prior to serving.
