This version of the classic French dessert is an adaptation of one attributed to Jean-Jacques Rachou, a former owner and chef of La Côte Basque, a restaurant The Times once called "the high-society temple of classic French cuisine." These acclaimed soufflés were a specialty at the restaurant, which closed its doors in 2004, after 45 years of serving guests like Jacqueline Kennedy Onassis, Babe Paley and Frank Sinatra. Done right, they are airy, perfectly textured and deftly sweetened. The key is the density of the egg whites; they must be whipped until the peaks are firm but not too full of air.

1 tablespoon soft butter
1/2 cup plus 3 tablespoons granulated sugar
5 eggs, separated
1/3 cup grated orange rind
2 tablespoons Grand Marnier

Steps:

  • Preheat oven to 450 degrees.
  • Rub the butter on the bottom and sides of four 1-cup souffle dishes. Sprinkle 1 tablespoon of sugar over the insides of the souffle dishes.
  • Place the egg yolks in a bowl and add 1/2 cup sugar, the orange rind and the Grand Marnier. Beat briskly until well blended.
  • In a large, deep bowl, preferably copper, beat the egg whites until stiff. Toward the end, beat in the remaining 2 tablespoons sugar. (You can use an electric stand mixer, but keep an eye on the egg whites. They should not be too stiff.)
  • Spoon the egg-yolk mixture into the whites, folding in rapidly. Place equal portions of the mixture in the prepared souffle dishes.
  • Put the dishes on a baking sheet, and place on the bottom of the oven. Bake for 10 to 12 minutes, and serve immediately.

1 tablespoon butter, melted
1 tablespoon white sugar
5 teaspoons butter, melted
5 teaspoons all-purpose flour
¼ cup cold milk
2 egg yolks
1 teaspoon freshly grated orange zest
1 tablespoon brandy-based orange liqueur (such as Grand Marnier®)
⅛ teaspoon vanilla extract
2 egg whites
¼ cup white sugar, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Brush the insides of 2 (8-ounce) ramekins with 1 tablespoon melted butter and sprinkle with 1 tablespoon sugar. Place on a baking sheet lined with aluminum foil.
  • Melt 1 tablespoon butter and 2 teaspoons butter in a saucepan over medium-low heat; cook and stir flour in the melted butter until golden brown and fragrant, about 2 minutes. Pour in milk and cook, stirring continuously, until smooth and thick, 3 to 4 minutes. Remove from heat and transfer to a mixing bowl.
  • Stir orange zest and 1 tablespoon brandy-based orange liqueur into butter mixture until combined. Add egg yolks and 1/8 teaspoon vanilla; mix until smooth.
  • Whisk egg whites in a large bowl until frothy. Slowly add half the 1/4 cup sugar and whisk until combined; add remaining sugar and continue to whisk until meringue is thick and holds it shape, but is not stiff.
  • Fold half the meringue into egg yolk mixture until combined. Gently fold in second half until well mixed. Transfer to the prepared ramekins, allowing 1/4-inch of space at the top.
  • Bake in the preheated oven until risen and browned, 16 minutes.

1 1/2 cups heavy cream

1/2 cup heavy cream
4 tablespoons unsalted butter
3 tablespoons orange liqueur, such as Grand Marnier

8 large eggs, separated
Powdered sugar, for dusting

Steps:

  • For the crepes: Preheat the oven to 400 degrees F.
  • Whisk together the eggs, butter, heavy cream, sugar, orange liqueur and orange zest in a large mixing bowl. Whisk in both flours until incorporated and a pourable batter forms. Let the batter rest at least 10 minutes and up to 1 hour.
  • Heat a 9-inch nonstick crepe pan over medium heat, then add a thin layer of batter (about 1 cup). Spread around the pan to cover. Cook until the top is dry and edges begin to curl up, about 1 minute. Flip and cook another minute. Repeat to make additional crepes using all the batter. Set aside.
  • For the souffle batter: Combine the heavy cream, butter, orange liqueur, flour, brown sugar and orange zest in a small saucepan over low heat. Cook, stirring constantly, until thickened, about 5 minutes, then remove from the heat. Meanwhile, whisk the egg yolks in a medium bowl. Whisk the egg yolks into the warm mixture in a steady stream. Set aside.
  • Place the egg whites in a stand mixer and beat to soft peaks using the whisk attachment. Fold the egg yolk mixture into the egg whites.
  • Place a crepe on a parchment paper-lined rimmed sheet tray. Spoon a 4-ounce ladle of souffle batter in the middle. Fold in half, like a taco. Repeat with the remaining crepes and souffle batter. Bake until the souffle filling puffs up a little, 12 to 15 minutes.
  • Dust with powdered sugar and sprinkle with orange zest.

3/4 stick (6 tablespoons) unsalted butter plus additional for buttering ramekins
1 cup sugar plus additional for coating ramekins
1/4 cup plus 2 tablespoons all-purpose flour
1 cup whole milk
7 large egg yolks
1/4 teaspoon vanilla
1/8 teaspoon orange oil*
2 tablespoons Grand Marnier
8 large egg whites
Accompaniment:egrave;me anglaise *available at specialty foods shops

Steps:

  • Preheat oven to 400°F. Generously butter eight 1-cup (3 1/2 x 2-inch) ramekins and coat with sugar, knocking out excess sugar.
  • In a 1 1/2-quart heavy saucepan melt 3/4 stick butter over moderately low heat and whisk in flour. Cook roux, whisking, 3 minutes. Add milk and cook over moderate heat, whisking, until mixture is very thick and pulls away from sides of pan. Transfer mixture to a bowl and cool 5 minutes. In a large bowl whisk together yolks, vanilla, oil, and a pinch salt, and whisk in milk mixture and Grand Marnier, whisking until smooth.
  • In a large bowl with an electric mixer beat whites until they hold soft peaks. Beat in 1 cup sugar, a little at a time, and beat meringue until it just holds stiff peaks. Whisk about one fourth meringue into yolk mixture to lighten and with a rubber spatula fold in remaining meringue gently but thoroughly.
  • Spoon batter into ramekins, filling them just to rim, and arrange ramekins at least 1 1/2 inches apart in a large baking pan. Add enough hot water to pan to reach halfway up sides of ramekins and bake soufflés in middle of oven 20 minutes, or until puffed and tops are golden.
  • Remove pan from oven and transfer ramekins to dessert plates. With 2 forks pull open center of each soufflé and pour some crème anglaise into opening.
  • Serve souffl s immediately.

1 cup whole milk
3 cups chilled heavy cream, divided
1 teaspoon pure vanilla extract, divided
1 cup all-purpose flour
1/8 teaspoon salt
1 cup confectioners sugar, divided
2 teaspoons grated orange zest , divided
2 tablespoons unsalted butter, melted
1 tablespoon Grand Marnier or Cointreau

Steps:

  • Blend eggs, milk, 1/2 cup cream, and 1/2 teaspoon vanilla with flour, salt, 1/4 cup confectioners sugar, and 1 teaspoon zest in a blender until just smooth.
  • Brush a 10-inch nonstick skillet lightly with some of melted butter, then heat over medium-high heat until hot. Pour in a scant 1/4 cup batter, immediately tilting and rotating skillet to coat bottom. (If batter sets before skillet is coated, reduce heat slightly for next crêpe.) Cook until underside is golden and top is just set, 15 to 45 seconds. Loosen edge of crépe with a heatproof rubber spatula, then flip crêpev over with your fingertips and cook 15 seconds more. Transfer to a plate. Continue making crêpes, brushing skillet with butter each time and stacking on plate.
  • Beat remaining 2 1/2 cups cream, 1/2 teaspoon vanilla, 3/4 cup confectioners sugar, 1 teaspoon zest, and Grand Marnier in a large deep bowl with an electric mixer until cream holds stiff peaks.
  • Center a crêpe on a serving plate and spread with 1/4 cup cream. Continue stacking crêpes and spreading with cream, ending with a crêpe. Chill, covered, at least 4 hours and up to 24.

Steps:

  • Grand Marnier Sauce-- Mix butter and sugar heat in microwave oven on high for 1 minute.
  • Add cream, Grand Marnier and orange zest.
  • Heat for 2 minutes stir and heat for 1 more minute.
  • Chocolate Mousse Filling-- Melt the chocolate.
  • In another bowl combine sugar, yolks, and 6 tablespoons cream, and whisk well over simmering water to cooking to thicken.
  • Whisk half the whipped cream into the chocolate, then fold nto the cream mixture.
  • Add remaining whipped cream and fold in, then chill, until ready to use.
  • For the crepe batter-- whisk the eggs well then add the milk and whisk.
  • Whisk in remaining ingredients.
  • Let sit 20 minutes then strain.
  • Ladle small amounts (1 to 2 ounces) of crepe batter into buttered crepe pan and cook on both sides.
  • Repeat until all the batter is used.
  • Let the crepes cool before filling.
  • To fill, place chocolate mousse in each crepe and fold it over to enclose the mousse.
  • Spoon some Grand Marnier Sauce around the crepes.
  • Garnish with orange sections.

  • In top of a double boiler or a metal bowl over simmering water whisk egg yolks and sugar until blended. Stir in liqueur, water, orange juice and zest. Cook over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, about 10 minutes, stirring constantly but gently. Do not allow to boil. Immediately transfer to a bowl., Place bowl in an ice-water bath for a few minutes, stirring custard occasionally. Cool to room temperature. In a large bowl, beat cream until it begins to thicken. 3 tablespoons unflavored gelatin, softened in 6 tablespoons water
3/4 cup boiling water
9 egg yolks
2 1/4 cups orange juice
2 cups sugar
2/3 cup Grand Marnier
4 egg whites
1 pint heavy cream
Ground praline (see recipe)

Steps:

  • Dissolve gelatin in the boiling water.
  • Beat yolks until light. Add orange juice, sugar, Grand Marnier and gelatin, and beat about 3 minutes. Refrigerate until mixture begins to thicken.
  • Meanwhile, make waxed-paper collar for a souffle dish 7 1/2 to 8 inches in diameter. Collar must stand 2 inches above rim of dish.
  • Beat egg whites to stiff peaks.
  • Clean beaters and bowl and beat cream to soft peaks. Fold beaten whites and cream into yolk mixture.
  • Spoon mixture into collared souffle dish, cover with aluminum foil and freeze overnight. When souffle is mostly frozen (it never freezes completely) wrap well in foil. It may be left in freezer 2 weeks.
  • To serve, remove collar and roll edge of souffle in ground praline.

125 g plain flour
450 ml milk
2 1/2 tablespoons unsalted butter, plus extra
melted butter, to grease
4 eggs
40 ml Grand Marnier
50 g caster sugar
icing sugar, to dust
whipped cream, to serve (optional)

Steps:

  • Place 100g of the flour, 300ml of the milk, 1 tablespoon of the butter, 1 of the eggs and 1 egg yolk in the bowl of a food processor and process to combine. Transfer to a jug and set aside to rest for 15 minutes.
  • Lightly grease a 15cm crepe pan with melted butter. When hot, pour in enough batter to cover the base of the pan. Cook for 1 minute each side until golden. Stack the crepes with a sheet of baking paper between each layer until you are ready to use them. (Place in an airtight container if storing for more than 1 hour.)
  • Preheat the oven to 200°C Place remaining butter in a saucepan, add remaining flour and milk and cook over low heat, whisking constantly, until thick. Remove from heat, beat in 2 egg yolks and the Grand Marnier.
  • In a separate bowl, whisk 2 egg whites until stiff, slowly add the caster sugar and continue to whisk until thick and glossy. Fold the egg whites into the Grand Marnier mixture. Place 2 tablespoons of the filling on one half of each crepe, fold over the other half to enclose. Carefully place filled crepes on a large greased baking tray and bake for 10 minutes until well risen.
  • Dust with icing sugar and serve immediately with cream if desired.
