2-1/2 cups all-purpose flour
3 teaspoons baking powder
2 teaspoons sugar
1 teaspoon garlic powder
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 cup cold butter, cubed
1-1/2 cups shredded cheddar cheese
3/4 cup 2% milk
1/2 cup sour cream
TOPPING:
6 tablespoons butter, melted
1-1/2 teaspoons garlic powder
1 teaspoon minced fresh parsley

Steps:

  • Preheat oven to 450°. In a large bowl, whisk the first 7 ingredients. Cut in cold butter until mixture resembles coarse crumbs; stir in cheese. Add milk and sour cream; stir just until moistened., Drop by 1/4 cupfuls 2 in. apart onto greased baking sheets. Mix topping ingredients; brush over tops. Bake 12-15 minutes or until light brown. Serve warm.

1 ½ cups shredded mozzarella cheese
½ (8 ounce) package cream cheese, softened
⅔ cup almond flour
2 large eggs
4 teaspoons baking powder
½ teaspoon garlic powder
1 cup shredded Cheddar cheese
1 teaspoon butter, or as needed

Steps:

  • Combine mozzarella cheese and cream cheese in a large microwave-safe bowl. Heat in the microwave on high power until slightly melted, about 45 seconds. Remove from microwave and stir. Repeat, heating for about 20 seconds more. Remove from microwave again and stir; consistency should be very sticky and cheese should be completely melted. Return to microwave, if necessary, until all cheese is melted.
  • Mix almond flour, eggs, baking powder, and garlic powder together in a bowl. Add mixture to the large bowl with the melted cheeses and mix well. Add Cheddar cheese and stir into the dough.
  • Lay a sheet of plastic wrap on a flat surface and dust lightly with almond flour. Pour dough onto the middle of the plastic wrap and roll up to form a ball. Place in the refrigerator until slightly hardened, 20 to 30 minutes.
  • Preheat the oven to 425 degrees F (220 degrees C). Grease a dark baking sheet with butter.
  • Remove dough from the refrigerator and cut into 8 equal-sized pieces. Roll each into a ball and place on the prepared baking sheet, spacing equally and avoiding the sides, as biscuits will spread while cooking.
  • Bake in the preheated oven until golden brown, checking at 10 minutes. Remove from oven immediately and cool completely before serving, about 15 minutes.

2 c flour
1 Tbsp + 1 1/2 tsp. baking powder
1 tsp salt
1/2 tsp baking soda
1 1/2 c sour cream, i would not suggest subbing light
1 Tbsp + 1 tsp. vegetable oil
4 Tbsp soft butter

Steps:

  • 1. In medium-sized bowl, whisk first 4 ingredients til well mixed.
  • 2. Add sour cream in spoonfuls on top, add oil and mix til all is just moistened with a spoon. Switch to using your hands turning the dough to get all the last of the dry stuff on the bottom of the bowl. Knead 8 times on floured surface.
  • 3. Roll thick to only about an 8" circle. Just a few passes with your (floured) rolling pin. Cut out 6 biscuits with a biscuit cutter or a floured glass. Get 2 more out of the last of the dough. (Bunch it back together, knead it just a bit, pat or roll it and cut.) Pitch any last little tidbit if any left. I place mine on my old round metal pizza pan covered with foil and sprayed with butter-flavored Pam. But a cookie sheet will work just fine.
  • 4. Place little pats of butter on top, or spread it a little if the butter is VERY soft and doesn't deflate the biscuits while doing so. Bake in hot, preheated 425 oven for 12-15 minutes (ovens vary) or til golden brown on top. Remove from oven and butter tops again with other half of butter. Serve warm with more butter and homemade jam or honey. Makes 8 tall sour cream biscuits.

Yeast-leavened biscuits that are easy to make and even easier to eat!

1/2 cup whole milk (heated to 110 - 115 degrees F.)
1 teaspoon active dry yeast
1/2 teaspoon sugar
4 cups unbleached all-purpose flour (20 ounces)
1 tablespoon table salt
8 ounces (2 sticks) cold unsalted butter
5 ounces Gruyère or other grating cheese
2 large eggs (lightly beaten with a fork)
1/2 to 1 cup sour cream
1 large egg yolk
1 teaspoon water
2 to 3 ounces finely grated Gruyère or other cheese

Steps:

  • To heat the milk, measure it into a 1-cup heatproof glass measure with pouring spout and microwave it for about 20 seconds. The milk should feel nicely warm to a fingertip. Not hot, or you'll kill the yeast! Sprinkle in the yeast and sugar, give a quick stir, and let stand until the liquid rises and is bubbly, about 10 minutes.
  • Put the flour and salt into the large bowl of a stand mixer and stir to combine. Attach the flat beater. If using cold butter, add the pieces and mix on low speed for about 3 minutes until the butter is in pea-sized bits. If using frozen shredded butter, just mix it in on low speed for about 1 minute.
  • Add the 5 ounces of cheese, the eggs, softened yeast, and 1/2 cup sour cream. Mix on low speed with the flat beater until the dough masses on the blade. If the dough seems dry, add a bit more sour cream. Beat on medium speed 1 minute. The dough should be nice and smooth and non-sticky.
  • If making the dough by hand, stir everything together with a wooden spoon until the dough gathers into a coherent mass. Add more sour cream if the dough seems too dry.
  • Turn the dough out onto a lightly floured surface. If you've made it by hand, knead briefly to make sure it is nice and smooth and non-sticky. If made with the mixer, just coat it lightly with the flour.
  • Line a large baking sheet (17 x 12 inches) with cooking parchment. Adjust an oven rack to the lower third position but do not turn the oven on. NOTE: This is what I do according to Marika's directions. If your oven takes a long time to heat up, preheat the oven to 400 degrees before baking the biscuits, and check for doneness 15 to 20 minutes from the time you put the biscuits in the oven.
  • Roll the dough 1/2-inch-thick (no thinner!) on the lightly floured surface. An 11- to 12-inch diameter circle will give you the right thickness. Make a shallow cross-hatched pattern, about 1/2-inch, with a sharp knife all over the dough surface.
  • For the topping, combine the egg yolk and water in a small bowl, and brush all over the rolled dough. Sprinkle the cheese on top and press it very gently to stick to the yolk.
  • With a floured cutter, stamp out rounds with a 1 1/2- to 1 3/4-inch diameter. If the biscuits stick to the cutter, nudge them loose with the tip of a paring knife. If you wish, cup the palms of your hands around each biscuit to smooth the sides. Gather the leftover dough and reshape into a ball. Roll out and cut our circles as before. I don't bother glazing them with egg yolk or topping with cheese because these ingredients are mixed into the dough during reshaping of the scraps.
  • Arrange the biscuits in rows about 1/2-inch apart on the baking sheet. Put the pan in the oven and turn the oven on to 400 degrees. Bake about 25 minutes, until the pogácsa are nicely browned on their tops and bottoms. Cool completely and store airtight.
  • Pogácsa may also be frozen for up to 1 month. Thaw and reheat in a moderate oven for 5 to 8 minutes to refresh them.

  • Whisk together the flour, baking powder, salt, sugar and baking soda. Cut in the softened cream cheese and butter until you have coarse crumbs. (I put my cream cheese and butter in a bowl and microwave about 30 seconds to soften it. You don't want it melted, just softened, and microwaves vary. If you try this just do it a few seconds at a time until it feels soft when you touch it.)
  • Add the milk and mix into a dough. Turn out onto a floured surface. Add enough flour until you can handle and knead the dough. Knead until it is elastic and you can roll it out to about 1/2 inch. Cut out your biscuits and place on sprayed baking sheet. Bake in preheated 425 degree oven 20 to 25 minutes. I got exactly 28 biscuits using the 2 inch cutters. I do brush tops with melted butter but it's not necessary
