BALSAMIC SOAKED BACON WRAPPED SCALLOPS

Steps:
- Heat a slotted broiler pan in a preheated 450 degrees F oven.
- Pat scallops dry and quarter them. Combine the vinegar, sugar, garlic and ginger and marinate the scallops 10 minutes. Arrange the bacon slices in a single layer. On each half-slice of bacon, place 2 slices of water chestnuts. Top with a scallop piece and wrap with the bacon, secure with toothpick. Place scallops on sides, exposed side facing out. Draw garlic and ginger from vinegar and drizzle over scallops then bake 10 minutes, turning once.
SOUS VIDE SCALLOPS WITH GARLIC AND LEMON BUTTER
Steps:
- Fill a medium pot with warm water, attach the sous vide and set temperature to 123 degrees F (51 degrees C) and timer to 30 minutes.
- Remove the tough muscle from the side of the scallops, if present, and lightly season with salt and pepper. Transfer scallops in a resealable plastic bag and remove all the air using the water immersion method.
- Place the scallops in the pot when the temperature has reached 123 degrees F (51 degrees C). Cook until timer goes off.
- Remove scallops from the bag and pat dry; if scallops are wet, they will not sear well.
- Heat oil in a small skillet over medium-high heat until it shimmers. Add scallops and sear until lightly brown, about 2 minutes. Turn and cook for 1 more minute. Remove from skillet and move to a warmed dish.
- Add garlic to skillet and cook until fragrant, about 30 seconds. Deglaze skillet with white wine and lemon, scraping up any browned bits. Mix in parsley and Cajun seasoning; simmer sauce for 2 minutes. Stir in butter until just melted. Spoon sauce over scallops, sprinkle with green onion tops, and serve.

I love making these appetizers at Christmas time. Always well received!! I'm guessing on the servings, depends on the size of the scallops.

Steps:
- Cut bacon strips in half.
- Wrap a piece of bacon around each scallop; secure with toothpick.
- Arrange the wrapped scallops on a baking sheet.
- Broil 5 inches from heat for 3 minutes per side, or until bacon is crisp.
- In small skillet, melt butter; add garlic and saute 1 minute,.
- Add broth and bring to a boil.
- Cook 2 minutes.
- Place scallops in large bowl; pour broth over, Gently toss to coat.

Steps:
- Preheat oven to 425 degrees.
- If you prefer, the bacon can be pre-cooked for a couple of minutes in the microwave to insure it will be crispy by the time the scallops are done.
- Do not overcook the scallops as they will be rubbery.
- Cut each piece of bacon in half to make 24 pieces.
- Roll a piece of bacon around each scallop and secure on wooden skewers.
- Place scallops on a rimmed baking sheet.
- Sprinkle with Old Bay and creole seasoning.
- Both seasonings contain salt, so don't overdo it!
- Amounts listed are what I used.
- Bake at 425 degrees for 15-18 minutes, or until the scallops are done.
- The bacon should be crispy.
- While the scallops are cooking, combine the ketchup, brown sugar and vinegar in a saucepan to make the dipping sauce.
- Mix well and cook until the sugar is dissolved.
- Serve the scallops with the dipping sauce.
SOUS VIDE SCALLOPS (BACON-WRAPPED SCALLOPS) RECIPE

- Wrap each scallop with one slice of bacon. Put the scallops in a single layer in the vacuum bag. Add thyme and chopped shallots. Seal under vacuum in a plastic bag according to the manufacturer's instructions (I used Foodsaver). *For regular scallops, just season with salt and pepper and seal them in the bag* For medium rare scallops (preferred), cook at 125 °F (52 °C) in a water bath for about 20-40 minutes. For medium scallops (still delicious), cook at 140 °F (60 °C) in a water bath for about 20-40 minutes. The benefit of cooking at 140 °F is that you can cook it with other items (such as chicken breast) that need to be cooked at that temperature at the same time. Remove the scallops from the bag, dry well with paper towels, and briefly sear in a pre-heated grill pan on high heat just until nicely browned. Serve!
