NORTH AFRICAN VEGETABLE RAGOUT



North African Vegetable Ragout image

The heat of chile, spices of North Africa and earthiness of kale beautifully complement sweet butternut squash in this hearty ragout. Bright, rich and healthy, this recipe is easily prepared in 30 minutes making it a delicious option for a weeknight. If you prefer an even richer stew, hot Italian sausage may be added. Most likely, however, you will find that the meatless version is substantial and satisfying enough to win over any carnivore. Use vegetable broth if you wish to keep it vegetarian. Be sure to serve the ragout with couscous to soak up the liquid.

2 tablespoons olive oil
1 large yellow onion, coarsely chopped
2 garlic cloves, minced
2 red jalapeno chiles or 2 serrano chilies, stemmed, seeded, finely chopped
1 small butternut squash (peeled, seeded, cut in 3/4 inch cubes about 4 cups)
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground cinnamon
3 1/2 cups chicken stock, divided
1 (14 ounce) can crushed plum tomatoes with juice
1 (15 ounce) can chickpeas, drained and rinsed
2 teaspoons salt
3 cups kale leaves, tough stems removed, torn in pieces
2 cups couscous

Steps:

  • Heat 1 tablespoon olive oil over medium heat in a deep saute pan or stock pot. Add onion and saute until beginning to soften, 2 minutes. Add garlic and chiles and saute until fragrant, 30 seconds. Add butternut squash and dry spices; saute 2 minutes.
  • Add 1 1/2 cups chicken stock and tomatoes with juices. (The squash should be just covered with liquid. Add extra chicken stock if necessary.).
  • Bring to a boil and reduce heat and simmer, partially covered, until squash is tender but firm, 15-20 minutes. Add chickpeas and 1 teaspoon salt. Continue to simmer, 10 minutes. Stir in kale and simmer until leaves are wilted and bright green, 2 minutes.
  • While the ragout is simmering bring 2 cups chicken stock to a boil in a medium saucepan, add couscous, 1 tablespoon olive oil and 1 teaspoon salt. Cover and remove from heat. Let sit 5 minutes. Fluff with fork.
  • To serve, spoon couscous into a bowl or shallow plate, leaving a well in the center. Ladle ragout into the center. Garnish with fresh cilantro or parsley leaves.
  • TO MAKE WITH SAUSAGE:.
  • As a first step, slice 8 ounces hot Italian sausage into 1/2 inch pieces. Saute in deep saute pan until golden brown on all sides.
  • Transfer sausage to a plate lined with a paper towel. Pour off all but 1 tablespoon rendered fat. Add onion and proceed with instructions above, substituting the sausage fat for the olive oil.
  • Return sausage to the ragout with the chickpeas.

3 tablespoons olive oil
white and pale green parts of 12 scallions, cut crosswise into 1 1/2-inch-long pieces
1/2 pound baby zucchini (about 22), halved lengthwise
1/2 pound baby yellow pattypan squash (about 22), halved lengthwise
1 1/2 cups fresh corn (cut from about 3 ears)
1 cup chicken broth
3 cups vine-ripened small cherry tomatoes, halved
2 teaspoons chopped fresh tarragon leaves

Steps:

  • In a 12-inch heavy skillet sauté garlic in oil over moderately high heat, stirring just until fragrant. Add scallions, zucchini, pattypan squash, corn, and salt and pepper to taste and sauté, stirring occasionally, until zucchini and squash are golden in spots, about 4 minutes.
  • Add broth and simmer ragout, covered, 3 minutes, or until squash is just tender. Add tomatoes and tarragon and simmer, covered, 1 minute, or until tomatoes are softened.
  • Season ragout with salt and pepper and serve warm or at room temperature.

1 large zucchini (sliced into 1/2-inch lengthwise)
1 large summer squash, sliced into 1/2-inch lengthwise
1 vidalia onion, cut into 1/2-inch rings
1 large tomatoes, diced into 1/2-inch pieces
1 teaspoon ground fennel
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 large shallot, minced
4 large garlic cloves, minced
2 ounces extra virgin olive oil
6 ounces marinara sauce

Steps:

  • Mix fennel, coriander, pepper, cumin and garlic powder.
  • Brush zucchini, summer squash and onion with half of the oil and sprinkle with the coriander spice mix on both sides.
  • Grill vegetables until al dente.
  • Allow vegetables to cool and slice into 1/2" pieces.
  • In sauté pan, add remainder of olive oil, shallots, garlic and grilled onion until caramelized.
  • Add zucchini, summer squash, tomato and marinara sauce.
  • Simmer for 5 minutes. Salt and pepper to taste.
  • Use within 2 days.

Carrot, Squash and Potato Ragout With Thai Flavors image

This is inspired by a recipe in Patricia Wells's "Vegetable Harvest." The flavors are both sweet and pungent. Serve it on its own or over rice; Thai purple sticky rice looks particularly pretty against the orange vegetables but any type of rice will do. I'm very happy serving this over brown rice.

1 tablespoon extra virgin olive oil
1 tablespoon minced fresh ginger
1 red or yellow onion, thinly sliced
Salt to taste
1 to 2 serrano or Thai green chiles, minced (to taste)
1/2 pound tofu, cut in dominoes or dice
1 teaspoon curry powder, preferably a sweet blend
1 3-inch piece of lemon grass stalk, crushed (use a rolling pin or a meat tenderizer)
4 medium carrots, peeled and sliced thin (about 3/4 pound or 2 cups)
3/4 pound butternut squash, peeled and cut in small squares (about 2 cups)
3/4 pound yellow-fleshed potatoes such as Yukon gold or fingerlings, cut in small dice, or if using fingerlings, sliced about 1/2 inch thick
2 cups chicken or vegetable stock
1 cup light coconut milk, shaken to blend
1 to 2 tablespoons fresh lime juice (to taste)
1/4 cup chopped cilantro

Steps:

  • Heat the oil over medium heat in a heavy lidded skillet or wide saucepan and add the ginger and onion. Cook, stirring often, until the onion begins to soften, about 3 minutes. Add a pinch of salt, the tofu and the chiles, stir together, cover and cook gently for another 3 minutes, until the onion is soft but not browned. Add the curry powder, stir together, and add the lemon grass, carrots, squash, potatoes, and stock. Add salt to taste, bring to a simmer, cover and simmer 20 minutes, or until the vegetables are tender but not mushy.
  • Meanwhile place the coconut milk in a saucepan and bring to a boil. Reduce by half.
  • Stir the coconut milk into the vegetable ragout and combine well. Cover and simmer gently for 5 minutes. Remove the lemon grass stalk. Taste and adjust seasonings. Just before serving stir in the lime juice. Serve in wide bowls, with rice if desired, garnishing each bowl with chopped cilantro.

1/2 pound "baby" pattypan squash,* trimmed
1/2 pound baby carrots, trimmed
3/4 cup shelled fresh peas
1/2 stick (1/4 cup) unsalted butter
1/2 pound pearl onions, blanched in boiling water for 1 minute, peeled, and trimmed
2 thyme sprigs
1 bay leaf
1 cup chicken broth
1/4 pound fresh morels,* washed well, patted dry, and trimmed
3 tablespoons minced fresh parsley leaves
1 1/2 tablespoons minced fresh mint leaves
1 large garlic clove, minced
*available seasonally at specialty produce markets and some supermarkets

Steps:

  • In a kettle of boiling salted water boil the fiddleheads for 4 minutes, or until they are crisp-tender, transfer them with a slotted spoon to a bowl of ice and cold water to stop the cooking, and transfer them to paper towels to drain. In the kettle boil the squash and the carrots for 3 minutes, or until they are crisp-tender, transfer the vegetables with the slotted spoon to the bowl of ice and cold water to stop the cooking, and transfer them to paper towels to drain. In the kettle boil the peas for 2 to 3 minutes, or until they are just tender, and drain them.
  • In a large heavy skillet combine 2 tablespoons of the butter, the onions, the thyme, the bay leaf, 1/4 cup of the broth, and salt and pepper to taste and simmer the mixture, covered, for 5 minutes. Add the morels, halved lengthwise or sliced crosswise, and 1/2 cup of the remaining broth and simmer the mixture, covered, for 10 minutes, or until the morels are tender. Add the fiddleheads, the squash, the carrots, and the remaining 1/4 cup broth and simmer the mixture, covered, for 1 minute. Add the peas, the parsley, the mint, and the garlic, simmer the ragout, covered, for 1 minute, and stir in the remaining 2 tablespoons butter, cut into bits, stirring until the butter is just melted. Discard the bay leaf and season the ragout with salt and pepper.
  • To clean fresh-picked fiddleheads:
  • Snap off the crisp, bright green fiddlehead tops from ostrich ferns, leaving about 2 inches of stem attached. Rub off the dry brown casings by hand or put the fiddleheads in a wire salad basket and whirl the basket outdoors to remove the casings. Let the fiddleheads soak in a sink half full of cold water, changing the water several times to remove any grit or casing particles, and drain them. The fiddleheads keep, covered and chilled, for 1 week.
