- Combine tomato sauce and salsa in a medium saucepan. Stir in ham; heat through.
- Heat oven to 350 degrees F. Coat a 2-quart rectangular baking dish with nonstick cooking spray. Cut tube of polenta into 8 slices. Arrange polenta slices in baking dish. Spoon salsa mixture over polenta. Bake, uncovered, for 25 minutes or until heated through. Sprinkle with shredded cheese. Bake for 5 minutes more or until cheese is melted.
- Serves 4.

A great casserole recipe with that "South of the Border taste". Recipe adapted from the 1977 Better Homes and Gardens All Time Favorite Casserole Recipes.

- Pre Heat oven to 375 degrees.
- In a large skillet, cook onion and green pepper in butter til tender but not brown.
- Cut Hot Dogs into 1/2-inch pieces. Stir into skillet along with beans, corn, tomato sauce,olives, garlic, sugar, chili powder and a dash of pepper.
- Simmer uncovered, til thickened, about 30 minutes.
- Add cheese. Stir until melted.
- Turn misture into a greased 9 x 13 casserole dish.
- Place 2 cups cold water in a sauce pan. Stir in corn meal and 1/2 teaspoons salt. Cook and stir until very thick (1/2 to 1 minute after mixture comes to a boil).
- Spoon over the hot mixture forming a lattice design.
- Bake at 375 degrees for 25 to 30 minutes.

OLD-SCHOOL TAMALE PIE

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Stir tomatoes, tomato sauce, corn, olives, chili powder, garlic, cumin, salt, red pepper flakes, and black pepper into the skillet. Bring to a low boil, about 5 minutes. Reduce heat to medium-low and let simmer for 5 minutes. Stir in 1 cup Cheddar cheese and continue to simmer until melted, 3 to 5 minutes. Remove from heat and transfer mixture to the prepared baking dish.
- Heat milk, butter, sugar, and salt for topping in a large saucepan over medium heat until butter has melted, 2 to 3 minutes. Reduce heat to low and stir in cornmeal a little at a time, stirring vigorously with each addition, until smooth and thickened. Remove from heat and stir in 1 cup Cheddar cheese. Drizzle in beaten eggs slowly, stirring vigorously until combined. Pour mixture over filling in the prepared dish, smoothing evenly over the surface.
- Bake in the preheated oven until top is golden brown and filling is bubbly, 30 to 40 minutes. Allow pie to rest for 10 to 15 minutes before serving.

- In a 3-qt. slow cooker, combine broth and cornmeal. Let stand for 5 minutes. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in chili powder and cumin. Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Spray a 9x13-inch casserole dish with cooking spray.
- Cook and stir ground beef in a Dutch oven over medium-high heat until meat starts to brown and release juices, about 5 minutes.
- Reduce heat to medium and stir in poblano peppers, salt, salsa, oregano, and chipotle powder; cook and stir until seasoned beef is crumbly and no longer pink, about 10 minutes.
- Mix one package of corn muffin mix in a large bowl with 1 egg and 1/3 cup of milk. Whisk to combine. In a separate large bowl, mix the second package of corn muffin mix with 1 egg, 1/3 cup of milk and half the Cheddar and Monterey Jack cheeses.
- Spread the prepared corn muffin mixture without cheese into the prepared baking dish. Sprinkle corn over the muffin mix, followed by remaining half of the cheeses, then the beef mixture.
- Spoon the corn muffin mix with cheese on top of the beef and carefully spread over the top with a fork, leaving about half an inch from the edges of the pan.
- Bake in the preheated oven for 50-60 minutes, until golden brown.

- In a large pot, whisk together 6 cups water with the cornmeal. Bring to a boil while continuously stirring. Turn the heat on low, stir in 1 1/2 teaspoons salt and lard or butter (lard is preferred by Mexican cooks). Cover and simmer about 30 minutes, stirring from time to time.
- Meanwhile, in a large sauté pan, brown the sausage over medium heat, breaking up with a wooden spoon. Once browned, transfer sausage to a bowl and set aside. Add the chile powder and cumin to the sauté pan; let spices toast for several minutes while stirring. Add the celery, onions, garlic, green pepper, and 1 1/2 teaspoons salt. Stir and cook until the vegetables are soft and the brown bits are scraped off the bottom of the pan. Add the beef into the pan and break up the meat; cook until the raw color disappears. Add the tomatoes, breaking them up with your hands over the pan and pour in juices. Add sausage back in and stir in corn; bring to a boil and let the mixture simmer for 15 minutes.
- Lightly oil a 12 x 9 x 2-inch baking dish and place in a rimmed baking sheet in case the dish bubbles over. Warm cornmeal over low heat and stir well until smooth, adding a few tablespoons of water if necessary. Spread about two-thirds of the cornmeal mixture on the bottom and up the sides of the pan. Spoon in the filling and distribute the olives evenly around.
- Spoon the remaining cornmeal evenly over the top and sprinkle with the cheese all over. Bake in a 375°F oven until browned and bubbling, about 1 hour. For a darker golden crust, broil for the last 5 minutes.
