How to Make the Best Southern Fried Corn

Provided by Angela Roberts

Categories     Side Dish

Time 30m

Number Of Ingredients 6

8 ears of corn
2 tablespoons bacon grease
4 tablespoons butter (more if you need it)
salt (if you need it)
1 to 2 tablespoons black pepper
splash of heavy cream

Steps:

  • Cut the corn off the cob with a sharp knife.
  • Using the sharpest knife, cut down into the cob to get the milk of the corn.
  • Heat up the bacon grease and add two tablespoons of softened butter.
  • If you like the corn to be a bit caramelized, cook longer, stir less frequently.
  • If you like corn to be creamier, cook for about ten minutes, and at the end add the remaining two tablespoons butter.
  • At this point, you can add a splash of heavy cream if you want a creamier corn.
  • Add a little bit of salt, and a lot of black pepper.
  • Serve immediately.

SHERRI'S SOUTHERN "FRIED" CORN

Sherri's Southern

Not being from the South, I asked a friend how she makes fried corn. I was surprised at her instructions. This sounds almost too easy, but it is delicious. And after all that scraping, its nice to pop it in the microwave and have it done in no time. My family likes pure and simple flavors, but I'm sure this would be great with onions or peppers or whatever else you might like to spice it up with. You could use a little butter instead of the traditional bacon. But we like it just as well without, and it is so good for you this way.

SOUTHERN FRIED CORN RECIPE - (4.5/5)

Southern Fried Corn Recipe - (4.5/5) image

Provided by Becky Jo

Number Of Ingredients 7

6 to 8 ears fresh corn (sweet corn is best)
1 tablespoon bacon drippings
2 tablespoons butter
1/2 cup milk
1 tablespoon cornstarch
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Shuck and silk your corn. Make sure to remove all of the silks and then with a sharp knife cut the corn off into a bowl. Once the kernels are all cut off, take your knife and scrape down the cob to remove any juice that is left in it. This is what makes the corn creamy, so don't skip this step. In a skillet heat together the bacon drippings and the butter. If you don't understand where you get the bacon drippings, because we haven't cooked any bacon, you might not be ready for this recipe. But if you are not a bacon grease collector, like most good southern cooks are, cook about five or six pieces of bacon and use the drippings for this corn. Add the corn and let it cook on medium heat for about 15 minutes. Mix the cornstarch and the 1/2 cup cold milk until smooth. Pour that mixture into the corn and bring it up to a bubble. Stir and cook just until it thickens. Add the salt and pepper and stir again and serve.

  • With your corn shucked and cleaned, place it standing up in a large bowl or pan in your sink. (Cutting corn off the cob is quite a task and a messy one at that. I think it’s best to do it in the sink. You’ll thank me later when it’s time to clean up.) Run a sharp knife down the cob cutting the kernels off.
  • Next, we’re going to scrape all the starch and “goody” out of the remaining kernels. This is what gives fried corn it’s unique texture and flavor. Simply turn the back of your knife nearly perpendicular to the cob and scrape down the sides.
  • Heat a skillet (preferably cast iron – I always use my great-grandmother’s – it’s one of my most prized possessions – it’s second to be grabbed in case of a fire after my kid) over medium heat and add bacon grease and two tablespoons of butter (or 4 tablespoons of butter if you’re not using the bacon grease – but you should use the bacon grease). Once melted, add corn. Salt and pepper to taste.
  • Reduce the heat to medium low and stir frequently, cooking for 20 to 30 minutes - or until it's cooked to your liking. Immediately before removing from heat, add remaining butter and stir until melted.
