SOUTHERN OVEN-FRIED CHICKEN RECIPE
A family favorite, true comfort food, and an easy dinner recipe, easy Southern Oven-Fried Chicken, has crispy, fried to perfection crust, juicy, flavorful meat, fewer calories, and less mess than classic fried chicken.

Steps:
- First, mix two cups of water and two tablespoons of kosher salt in a large bowl to brine the chicken. Next, add the thighs and make sure they are completely submerged. Cover, and refrigerate for at least four hours, up to 24 hours.
- When you are ready to bake the thighs, preheat your oven to 400 degrees F.
- Remove the poultry from the refrigerator, drain, and pat dry with paper towels.
- Place the butter in a 9x13 metal roasting pan.
- Place the pan in the oven to allow it to heat up and the butter to melt. Watch it carefully, and don't let the butter burn; you want the thighs to start cooking as soon as they hit the pan.
- While the pan is heating, place the flour, remaining salt, and pepper in a large plastic storage bag. Add the thighs, a piece at a time, and shake well until it's thoroughly coated. Shake off any excess flour and repeat with the rest of the chicken.
- Remove the pan from the oven and place the thighsn in it, skin side down.
- Oven-fry the chicken for 30-40 minutes, or until the bottom is golden brown and crispy.
- Remove from the oven and use a spatula and turn the chicken over. Cook for an additional 20 minutes.
- Remove the chicken from the oven, and drain on paper towels.
- If desired, season with additional salt and pepper and serve immediately.

- Preheat oven to 365ºF.
- Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside.
- Combine flour, salt and cayenne pepper together in a medium-size bowl.
- Place buttermilk and corn flakes crumbs in 2 separate shallow bowls.
- Roll chicken breast halves in flour mixture and evenly coat each side.
- Next dip chicken into buttermilk and then corn flakes crumbs.
- Place coated chicken breasts in prepared baking dish.
- Bake until chicken is tender and no longer pink, about 20 minutes (there is no need to flip the chicken during baking).
- NOTE: The first time I made this my chicken breasts were about 6-8 ounces a piece.
- It ended up taking about 45-50 minutes to cook.
FABULOUS SOUTHERN-STYLE OVEN FRIED CHICKEN
I devised this to resolve my southern husband's taste for fried chicken with a HEALTHY, non-deep-fried version, with no wheat, milk, eggs, or processed or artificial ingredients. It's a delicious EASY recipe that works for chicken legs, thighs, or breasts. Make PLENTY in the summer to eat as is, or use leftovers for chicken SALAD!

- For moistest results soak chicken pieces in a bowl of salted water for 15 minutes before cooking.
- Line baking tray with foil and spray lightly with oil.
- Grind dry ingredients in coffee grinder or with pestle and mortar.
- Pour into a bowl and add water little by little while stirring until a smooth runny paste is achieved. You may need more or less water.
- Remove chicken from soaking water, and pat dry if necessary.
- Dip into the rosemary coating until covered, and place on baking tray. This will seal in the juices.
- Bake at 365º for one hour.
- Once it's in, put your feet up for at least ten minutes, drink a glass of cold water, breathe deeply - and relax. Your chicken is safe.
- Suggestions: Serve with brown rice and greens, or if you have cooked breasts or thighs, then serve the chicken chopped into a salad with cucumbers, roma tomatoes and red onion, topped with Chimichurri sauce - a purée of cilantro, lemon juice, olive oil, garlic and salt.

- Sprinkle the chicken pieces with salt and pepper, and place them in a deep-sided baking dish.
- Whisk together the buttermilk, hot pepper sauce, and 1 teaspoon of cayenne pepper in a bowl. Pour the mixture over the chicken, stir to coat all sides of the chicken pieces, and cover the dish with plastic wrap. Refrigerate for about 2 hours to marinate.
- Remove the chicken pieces from the buttermilk mixture, and shake off excess. Discard the remaining buttermilk mixture.
- Place the flour, 1 tablespoon of cayenne pepper, garlic powder, paprika, and salt and pepper to taste in a large plastic zipper bag, and shake well to combine. Place 2 or 3 pieces of chicken at a time into the plastic bag, and shake well to coat the chicken pieces with seasoned flour.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Gently place chicken pieces into the hot oil, and fry until chicken is cooked through and golden brown, 8-10 minutes (breasts and wings) or 13 to 15 minutes (thighs and drumsticks). Drain the fried chicken on paper towels.

- Take chicken pieces and remove skin.
- Mix hot sauce and milk in a bowl.
- Take chicken and soak in milk mixture for about 1/2 hour.
- In a medium bowl put corn flake crumbs, garlic powder, onion powder, pepper, and paprika; mix until well combined.
- Preheat oven to 350°F.
- Line a cookie sheet with tin foil sprayed with Pam.
- Coat chicken with crumb mixture and press chicken hard to get that corn flake mixture adhered to it.
- Place chicken on cookie sheet and spray Pam on each piece of chicken.
- Put in oven and bake for 1 1/2 hour or until golden brown and crispy.
- Serve with sugar snap peas, buttermilk biscuits and country gravy.

GREAT SOUTHERN OVEN FRIED CHICKEN
I am a retired caterer. I have used this recipe for many years. Everyone I have served it too seems to just love it and always come back for seconds. Its one of the simplest and easiest fried chicken recipes you will ever prepare. The Ritz cracker crumbs were used many years ago as a last minute substitute for saltines. I think this was a one of my best substitutes ever. Needless to say I never used saltines again. I hope you enjoy!

- Spray a sheet cake style pan with non stick canola spray.
- Preheat oven to 400°F
- Wash chicken thoroughly and lay on paper towels and pat dry.
- Melt butter in a medium sized dish.
- Place Ritz cracker crumbs in a large bowl.
- Mix all seasonings together in a small bowl.
- Dip chicken pieces in the butter then immediately into the cracker crumbs.
- Place chicken in the sprayed pan.

- Strip skin from chicken pieces.
- Pour buttermilk over chicken in plastic or glass container. turn chicken pieces to coat evenly. Cover and refrigerate several hours or overnight.
- Preheat oven 425F Smear 9x13 with oil. set aside.

I love this chicken recipe--after messing around with oil fried chicken, I found this recipe and it's exactly what I was looking for, darn close to "real" fried chicken without the hassle of oil frying. There is marinating time, but otherwise super easy. Don't be intimidated by th amount of hot pepper sauce in the marinade, the chicken will pick up only some of the heat.

- Whisk buttermilk, oil, hot pepper sauce, mustard, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in large bowl to blend well. Add onion, then chicken and turn to coat.
- Cover, chill at least 3 hours or up to 1 day, turning chicken occasionally. I usually get a big gallon ziploc bag and place the marinade and chicken in the bag.
- Place racks on 2 large rimmed baking sheets.
- Whisk breadcrumbs, cheese, flour, thyme, paprika, cayenne and 1 teaspoon salt in large baking dish to blend.
- Remove chicken from marinade, allowing, excess to drip off. Add chicken to breadcrumb mixture and turn to coat completely.
- Arrange chicken, skin side up, on racks on baking sheets.
- Let stand 30 minutes.
- Preheat oven to 425°F Drizzle butter over chicken.
- Place chicken in oven and bake until crisp, golden and cooked through about 50 minutes.
- Serve warm or at room temperature.
