2 teaspoons olive oil
3 celery stalks, chopped
2 carrots, chopped
1 onion, chopped
1 garlic clove, minced
1/4 teaspoon dried thyme
4 cups reduced-sodium chicken broth
1 1/2 cups chicken breast, skinless, cooked and chopped
1/4 pound green beans, trimmed and cut into 1/2-inch lengths
1/4 cup fresh parsley, chopped
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon ground pepper
1 cup water

Steps:

  • Heat a large saucepan over medium heat until hot. Swirl in the oil, then add the celery, carrots, onion, garlic, and thyme. Cook, stirring occasionally, until the vegetables are softened, 5 to 6 minutes. Add the broth and chicken. Bring to a boil; reduce the heat, cover, and simmer 10 minutes. Add the green beans and simmer until the vegetables are tender, 10 to 15 minutes. Stir in the parsley. Meanwhile, combine the flour, baking powder, salt, and pepper in a medium bowl. Stir the water into the flour mixture just until moistened. Drop the dough, by rounded teaspoonfuls, onto the simmering stew, making 12 dumplings. Cover and simmer until the dumplings have doubled in size and are cooked through, 15 to 20 minutes.

1/2 cup low-fat buttermilk
2 teaspoons hot pepper sauce
8 (5 ounce) skinless chicken thighs (bone-in)
1/2 cup seasoned bread crumbs
1/2 cup ground almonds
1/4 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 425°F.
  • Line roasting pan with foil, spray with nonstick cooking spray.
  • Combine buttermilk and hot pepper sauce in 9x13-inch baking dish.
  • Place chicken in buttermilk mixture, turning to coat, set aside.
  • Combine the bread crumbs, almonds, salt, pepper on a shallow plate.
  • Dip the chicken into the crumb mixture, turning to coat all sides.
  • Discard excess buttermilk mixture and bread crumb mixture.
  • Place chicken on rack and lightly spray with nonstick spray.
  • Bake 20 minutes, then lightly spray chicken again with nonstick spray.
  • Bake until chicken is golden and thermometer reads 180°F when inserted in thigh, about 25 minutes longer.
  • 5 Points per serving (1 chicken thigh).

1/3 cup flour, all-purpose
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
3 ounces buttermilk
1/2 cup corn flake crumbs
1 lb boneless skinless chicken breast, uncooked

Steps:

  • Preheat oven to 365ºF. Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside.
  • Combine flour, salt and cayenne pepper together in a bowl. In 2 separate bowls, place the buttermilk and corn flakes crumbs .
  • Evenly coat each side of the chicken breast halves in the flour mixture. Next, dip the chicken into the buttermilk and then corn flakes crumbs.
  • Place the coated chicken breasts in the baking dish from step 1. Bake about 25 to 30 minutes (there is no need to flip the chicken during baking). Yields 1 breast per serving.

My personal rendition of a WW recipe that I love because it packs all the flavors of NOLA while managing to be both fast and light. The level of heat here varies so much based on your brand of Cajun spice and sausage - so taste and adjust accordingly. For those who *do* count points, try finding the lowfat chicken andouille sausage. Half the points of the regular so you can add more to the dish. (Points confirmed on WW Recipe Builder.)

cooking spray
1 lb boneless skinless chicken breasts or 1 lb chicken breast tenders, 1 inch pieces
1/4-1/2 teaspoon cajun spices (try Cajun Spice Rub Mix Recipe)
1/4 teaspoon garlic powder
1/4 lb andouille sausage, thinly sliced
1 red pepper, cut into 1/4 inch slices
1 onion, cut into 1/4 inch slices
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon tomato paste or 1 tablespoon ketchup

Steps:

  • Cut chicken into 1 inch or slightly smaller cubes. Season with garlic powder and Cajun spice mix.
  • Place nonstick over medium high heat. Give a quick shot of cooking spray and add the seasoned chicken. Cook for a minute and add the andouille sausage. Continue to cook for three to four minutes until the chicken is opaque.
  • Remove chicken and sausage from pan and cover to keep warm. Gently wipe the pan to remove the excess oil. Add the onions and peppers to the pan and cook for four to five minutes.
  • Stir the canned tomatoes and tomato paste into the skillet. Return the chicken and sausage and simmer for six to eight minutes.
  • Serve with hot cooked rice for additional points.

Arrange chicken in basket, leaning pieces against side of basket as needed to fit. Air fry 5 minutes. Turn breasts being careful not to disturb coating. Air fry until crust is golden and crispy and instant-read thermometer inserted into chicken registers 165°F, 5 minutes longer. Serve with hot sauce.
