Southwestern Breakfast Quesadilla Recipe with Eggs, Black Beans & Salsa image

This quesadilla, packed with southwestern flavors, is a healthy and protein-packed way to start the day.

2 teaspoons olive oil
1 red bell pepper (seeded and diced)
1/2 cup black beans
4 eggs
4 egg whites
6 tablespoons water
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 whole wheat tortillas
1/2 cup grated Cheddar cheese
2 tablespoons minced cilantro
salsa (for serving)

Steps:

  • Heat olive oil in a large skillet over medium heat. Add the red bell pepper and cooking, stirring occasionally, until the red pepper is just tender, 3 to 4 minutes.
  • Add the black beans and stir to combine.
  • In a medium-sized bowl, whisk together the eggs, egg whites and water.
  • Pour the eggs into the skillet with the red bell pepper mixture. Cook, scraping the pan occasionally, until the eggs are scrambled and just set. Season with the salt and pepper.
  • Heat a medium-sized skillet over medium-high heat. Lay 1 whole wheat tortilla in the pan, and top half of the tortilla with ¼ of the cheese, egg mixture and cilantro.
  • Fold over the other side of the tortilla to form a half-circle. Press down with a spatula as the cheese melts to seal the quesadilla.
  • When the bottom is golden brown, flip the quesadilla and brown on the other side.
  • Remove from the pan, cut into thirds and serve with salsa.
  • Repeat with the remaining tortillas, cheese, egg mixture and cilantro.

2 tablespoons olive oil, plus extra for griddle
1 small red bell pepper, diced
1/2 red onion, diced
3/4 cup corn kernels, (about 1 ear)
2 teaspoons red pepper flakes
1 teaspoon ground cumin
Salt and freshly ground black pepper
1/2 cup freshly chopped cilantro leaves
Four 10-inch "burrito size" flour tortillas
One 16-ounce can refried black beans
1 cup grated Pepper Jack cheese
Lime-Cilantro Sour Cream, recipe follows
1/2 cup sour cream
1/4 cup freshly chopped cilantro leaves
1/2 lime, juiced
Pinch salt

Steps:

  • In a large skillet, heat oil over medium-high heat. Saute red pepper and onion until soft, about 5 minutes. Add corn, red pepper flakes, cumin, and salt and pepper to taste. Toss to incorporate and saute for 3 minutes. Transfer to a bowl and add the cilantro. Preheat a long, 2-burner cast iron griddle, or a large saute pan over medium heat. Lay 2 tortillas on a work surface and spread each evenly with refried black beans. Place tortillas, bean side up, on the griddle (begin with 1 if using a saute pan). Sprinkle onion-red pepper mixture evenly over the top of each, then sprinkle evenly with the cheese. Cover with another tortilla coated with refried black beans and cook until cheese melts, about 4 minutes. Flip quesadillas to toast the other side. Slice each quesadilla into 8 wedges, sprinkle with cilantro, and serve with Lime-Cilantro Sour Cream.
  • In a small bowl, mix all ingredients together until combined. Season, to taste, with salt if needed.

1 teaspoon olive oil
1/2 cup diced onion
1 red pepper, diced
1 jalapeno pepper, seeded and diced
8 eggs, lightly beaten
1/4 teaspoon salt
1/4 teaspoon pepper
2-3 green onions, chopped
1/4 cup fresh cilantro, chopped
6-8 small (taco sized) flour tortillas
1 1/2 cups shredded pepper jack cheese

Steps:

  • Heat oil in a large, non-stick skillet over medium heat. Add the onions and peppers and cook until vegetables are just soft, about 5 minutes.
  • Add the eggs to the skillet, along with the salt and pepper, and cook, stirring frequently, until eggs are scrambled and just done. Stir in the green onions and cilantro. Remove pan from heat.
  • Spoon the egg mixture onto half of each tortilla, then sprinkle with cheese. Fold tortillas in half.
  • Spray a grill pan with non-stick cooking spray and heat over medium-high heat. Add quesadilla to pan, 2-3 at a time, and cook until golden, 1-2 minutes per side. Alternately, quesadillas can be baked in the oven at 350 degrees for 10-15 minutes.
  • Serve warm with salsa, sour cream and guacamole, if desired.

This Southwestern Breakfast Quesadillas recipe is simple to make, full of great flavor, and it also freezes and reheats well!

Number Of Ingredients 10

1 pound ground breakfast sausage (I recommend spicy!)
1 small red bell pepper, cored and diced
1 small white onion, peeled and diced
1 jalapeno, seeded and finely diced
6 eggs, whisked
4 Old El Paso large flour tortillas (burrito-sized)
2 cups shredded Mexican-blend cheese (or your favorite kind of cheese)
1/2 cup rinsed black beans
1/2 cup whole kernel corn
optional: serve with salsa and/or sour cream

Steps:

  • Preheat oven to 400 degrees F.
  • Brown the breakfast sausage in a large saute pan according to package instructions, crumbling it with a spoon as it cooks so that it is ground into small pieces. Transfer the cooked sausage to a separate plate with a slotted spoon, and set aside. Reserve 1 tablespoon of grease, then discard the rest.
  • Add the tablespoon of grease back to the saute pan, along with the diced bell pepper, onion, and jalapeno. Saute over medium-high heat for about 5 minutes, or until the onion is soft and cooked through. Transfer mixture to a separate plate, and set aside.
  • Return saute pan to the stove and add the whisked eggs. Reduce heat to medium and cook for 4-5 minutes, stirring frequently, until the eggs are scrambled and cooked. Remove from heat and set aside.
  • Lay two tortillas out on a parchment-covered baking sheet so that they are not touching. Sprinkle ½ cup of shredded cheese evenly on top of each tortilla. Then portion the scrambled eggs evenly between the two tortillas, spreading them out evenly on top of the cheese. Continue likewise with the bell pepper mixture, cooked sausage, black beans, corn, and the remainder of the shredded cheese (in that order). Top with the remaining 2 tortillas.
  • Bake for 8-10 minutes, or until the cheese is melted all the way through the quesadillas, and the tortillas begin to crisp slightly around the edges. Remove from the oven, then cut into sixths with a knife. Serve immediately with salsa and/or sour cream on the side for dipping.

12 (10-inch) flour tortillas
2 pounds turkey sausage, recipe follows
1 1/2 pound mozzarella, shredded
3/4 cup roasted red bell peppers, cut into 1/4-inch long strips
1 cup basil pesto, recipe follows
2/3 cup chicken broth
2 ounces chipotle chiles in adobo sauce
2 pounds ground turkey
1 tablespoon ground sage
1 tablespoon dried oregano
1 tablespoon ground cumin
3 tablespoons salt
2 tablespoons freshly ground black pepper
1 cup fresh basil leaves, firmly packed
1/2 cup extra-virgin olive oil
1/2 cup pecans or pine nuts
1/4 cup Parmesan, grated
1 tablespoon salt

Steps:

  • Arrange flour tortillas on a table. Six of the tortillas will be sandwich tops and 6 will be bottoms. Sprinkle the turkey sausage evenly on 6 bottom tortillas. Next, sprinkle 4 to 5 ounces of mozzarella cheese over the turkey sausage. (As the quesadillas cook, the cheese will melt and act as glue to hold the quesadilla together.) Add 5 or 6 strips of red bell pepper over the mozzarella and turkey sausage. Finally, spread a thin layer of basil pesto on each of the remaining 6 flour tortilla tops and press it firmly on top of the bottom tortilla section.
  • Preheat your grill to low heat. Place the quesadillas on the grill and cook until grill marks are present and the quesadilla turns golden brown, about 5 minutes. The inside should be warm and the cheese should be melted. Once finished cooking, remove the quesadilla from the grill, cut into 6 wedges, and serve with your favorite salsa.
  • Place the chicken broth and chipotle chiles with adobo sauce in a blender, and puree until smooth, about 1 minute. In a large skillet over medium high heat, begin cooking the turkey sausage. Then add in the chipotle chile mixture and cook until the meat is crumbly and well done, about 10 to 15 minutes. Toward the end of the cooking, add in your sage, oregano, cumin, salt, and pepper. Cool the sausage mixture before spooning it onto the tortillas.
  • Put the basil and olive oil into a food processor and blend until smooth. Next, add the pecans, Parmesan, and salt. Continue to blend until smooth, adding more olive oil, if necessary, to achieve a smooth consistency.

4 slice turkey bacon or other meat, diced
4-6 large eggs (I combined with Eggbeaters- not necessary)
1/2 medium bell pepper, diced
1/2 medium onion, diced
1 Tbsp fresh rosemary, minced
2 medium tomatoes, chopped
3 medium flour tortillas
2 Tbsp salsa or more (we made ours)
3/4 c cheese, shredded (Colby jack) (your choice)
1/4 tsp garlic salt
1/4 tsp pepper
1/2 tsp salt
2 Tbsp olive oil, light
2 Tbsp butter, unsalted

Steps:

  • 1. Saute on medium-high heat: Turkey bacon, bell pepper, onion, rosemary, garlic salt, pepper, and salt in olive oil for about 7-min; cover with a lid for 3-min.
  • 2. Place into a bowl and stir in salsa.
  • 3. Using the same pan, lower heat to medium heat, add butter, spread around pan, lay 1 tortilla in the bottom.
  • 4. Add cheese top of tortilla.
  • 5. Then add half of the meat mixture on top of cheese.
  • 6. Add more cheese.
  • 7. Then another tortilla. Repeat another layer of cheese, meat mixture, cheese, and last tortilla. (Cheese acts as adhesive to keep quesadilla together.)
  • 8. Spread fresh tomatoes over top of quesadilla.
  • 9. Whip eggs with 2-tablespoons water. Pour over the quesadilla and tomatoes; cover pan.
  • 10. Turn the burner down to high-low heat; cook until egg is set.
  • 11. Slice and serve with favorite fruit!
