SOUTHWEST BREAKFAST BURRITOS

Southwest Breakfast Burritos image

My wife and I love eating Mexican so I came up with this recipe so that we could have a little more variety in our morning meals. We are busy people and don't have time to make elaborate meals in the morning. In the past we have bought frozen breakfast burritos, but they are not very tasty and I knew they could be improved upon. This recipe will make a large batch of the burrito fixins that you can freeze, or store in the refrigerator so that you can make great breakfast burritos whenever you please.

Provided by Norm Walker

Categories     Breakfast and Brunch     Eggs     Breakfast Burrito Recipes

Time 1h5m

Yield 20

Number Of Ingredients 13

12 eggs
⅔ cup milk
½ teaspoon salt
2 tablespoons butter
1 pound bulk pork sausage
2 tablespoons minced garlic
½ red onion, diced
1 tomato, diced
¼ cup chopped fresh cilantro
1 (3.5 ounce) can diced jalapenos
1 (1 ounce) package taco seasoning
1 ½ cups shredded Cheddar cheese
20 (6 inch) flour tortillas

Steps:

  • Whisk together the eggs, milk, and salt in a large bowl. Heat butter in a large skillet over medium-high heat. Pour in the egg mixture; cook and stir until eggs are completely set, about 5 minutes. Chop the cooked eggs and place in a large bowl. Set aside.
  • Heat a large skillet over medium heat and stir in the sausage and garlic. Cook and stir for 5 minutes, then add the onion. Continue cooking and stirring until the sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Combine the sausage with the eggs, tomato, cilantro, jalapeno, and taco seasoning. Allow mixture to cool to room temperature, then stir in the Cheddar cheese.
  • Place a tortilla onto your work surface, then spoon some of the filling halfway between the bottom edge and the center of the tortilla. Flatten the filling into rectangle shape with the back of a spoon. Fold the bottom of the tortilla snugly over the filling, then fold in the left and right edges. Roll the burrito up to the top edge, forming a tight cylinder. Repeat with the remaining ingredients.
  • Tightly wrap individual burritos with plastic wrap and freeze until ready to serve. Heat in the microwave until hot, 3 to 4 minutes, before serving.

SOUTHWESTERN BACON QUICHE

Southwestern Bacon Quiche image

Bacon, green chiles and pepper jack are baked into a cilantro-and-chile powder custard in a homemade crust.

Provided by Food Network Kitchen

Time 3h

Yield 6 to 8 servings

Number Of Ingredients 15

1 3/4 cups all-purpose flour, plus more, for dusting
2 tablespoons sugar
1/2 teaspoon fine salt
1 1/2 sticks (12 tablespoons) unsalted butter, diced and kept very cold
4 teaspoons cider or white vinegar
1/3 cup ice water, plus more, if needed
1/2 cup chopped scallions
1 cup shredded pepper jack cheese
1/2 cup chopped cooked bacon
1/2 cup roughly chopped canned green chiles
1 1/4 cups half-and-half
3 large eggs
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh cilantro
1/2 teaspoon chile powder

Steps:

  • For the crust: Put the flour, sugar and salt in a food processor fitted with a metal blade and pulse to combine. Add about a third of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, while pulsing quickly a few times, add the ice water through the tube. Squeeze some dough between your fingers; it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly; do not overwork the dough or the crust will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
  • Lightly dust a work surface with flour. Then roll the dough on the floured surface into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Press a piece of foil over the chilled crust, then fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
  • For the filling: Sprinkle the scallions evenly into the crust. Combine the pepper jack, bacon and chopped green chiles in a medium bowl and sprinkle in an even layer over the scallions.
  • For the custard: Whisk together the half-and-half, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl. Stir in the cilantro and chile powder.
  • Pour the custard over the filling. Lower the oven temperature to 350 degrees F and bake until set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

SOUTHWEST SONORAN SUNRISE BREAKFAST QUICHE

Southwest Sonoran Sunrise Breakfast Quiche image

Ready, Set, Cook! Special Edition Contest Entry: I love a breakfast casserole that can be kept in the refrigerator and everyone can help themselves to it in the morning ! I created this so we could have a tasty, satisfying breakfast that would be fast and versatile. This would also be delicious with a side of salsa and hearty bread toasted. I actually make this every week and it is easy to change it up using different seasonings and vegetables. Reheats in the microwave easily, can even put in a pita or tortilla and take it on the go! Great brunch dish too...

Categories     Egg     Bake     Lunch     Healthy

Yield Servings

Number Of Ingredients 15

1 1/2 c Flour
3/4 c Butter, unsalted
1 t Salt
Water
2 Bell peppers (1 red, 1 yellow)
1 Onion, brown
1 c Corn, roasted
1 1/2 c Black beans, cooked, reserve liquid
1/2 c Green onions
2 cloves garlic, minced
1 1/4 c Cheddar and/or Jack cheese
1/2 lb. Chorizo
8 Eggs
1 t White pepper
1 T Salt

Steps:

  • Mix flour, butter, and salt together with a fork, or in an electric mixer. Add just enough water to bind, usually 1-2 T. Roll flat to 1/4", and place in pie tin. Make sure to poke the bottom with a fork before putting the veggies inside! Dice the bell peppers and onion, between 1/4 and 1/2". Mix the peppers and onions with the corn, green onions and garlic.Saute until the onions are translucent. Spread the veggies evenly into the pie crust. Saute the Chorizo until mostly browned, drain, and add to the crust with the beans and 1 c cheese. (I like to use the same pan as the vegetables to get a little more flavor!) Beat the eggs with no more than 1/2 c of liquid from the beans. Add salt and pepper. Pour egg mixture over the veggies, and sprinkle remaining cheese over the top. Bake at 375 until cooked through, roughly an hour. If you have a thermometer, the internal temperature should be at 165 degrees. The quiche can be garnished with sour cream, avocados, a nice pico de gallo, or a simple salad.
