ROASTED HALIBUT WITH SAFFRON-FENNEL BUTTER

Steps:
- Combine 1 tablespoon butter and the saffron in a small microwave-safe bowl and microwave until the butter melts, about 1 minute. Let cool 5 minutes. Place the remaining butter and the fennel seeds in a food processor and pulse until smooth. Add the melted saffron butter, 1 teaspoon salt and a few grinds of pepper and continue pulsing until the butter is bright yellow. Transfer to a piece of plastic wrap and form into a 4-inch log; freeze until firm, about 20 minutes. (The saffron butter will keep in the refrigerator for up to 2 weeks.)
- Meanwhile, preheat the oven to 425 degrees F. Toss the sliced fennel, garlic, the juice of 1/2 lemon, 1 tablespoon olive oil and 2 tablespoons water in a 9-by-13-inch baking dish. Sprinkle with 2 tablespoons water and season with 1/2 teaspoon salt and a few grinds of pepper. Cover with foil and bake until the fennel is tender, about 20 minutes.
- Toss the tomatoes with the remaining 1 tablespoon olive oil and season with salt and pepper. Scatter the tomatoes over the fennel. Set the halibut on top of the vegetables; drizzle with the juice of the remaining 1/2 lemon and season with salt and pepper.
- Bake, uncovered, until the halibut is firm and no longer translucent, about 12 minutes; remove from the oven and top each piece with a thin slice of saffron butter. Return the halibut to the oven and bake until the butter just begins to melt, about 2 more minutes. Serve with fennel fronds.
REGAL ALASKAN'S BLACKENED SHRIMP OR HALIBUT
This recipe was given to me by a chef at the Regal Alaskan Hotel in Anchorage, Alaska, while on a fishing trip. This is by far the best tasting fish or shrimp I have ever had, and tons of people agree with me. I have used this recipe several times for large parties and have yet to find anyone not completely satisfied. If you cook the food properly it will not come out burnt, but will have some charring on the outside and be perfect on the inside. My favorite is the blackened shrimp with the cajun hollandaise sauce, it is to die for. (If you don't wish to make the blacken seasoning, I've found Cajun's Choice blackened seasoning to be the best store bought blackened seasoning on the market)

- This recipe is designed to feed however many people you want. Just adjust the amount of melted butter, blacken seasoning, and hollandaise to accommodate the number of servings you need.
- For Blacken Seasoning: Mix all ingredients in a bowl making sure to mix everything very well.
- For Cajun Hollandaise Sauce: Saute the ham and shrimp in butter until the shrimp is cooked thoroughly.
- Add the blacken seasoning to taste and allow the mixture to cool.
- After the ham and shrimp mixture has cooled, fold together the shrimp/ham mixture, diced tomato, green onion, and hollandaise sauce.
- For the Blackened Shrimp or Halibut: For this recipe it is best to use a cast iron skillet or griddle on a bbq grill or an outdoor propane cooker, I prefer a large cast iron skillet and a propane cooker.
- For shrimp: peel, de-vein, and butterfly the shrimp.
- For halibut: cut halibut filets to 1/4 to 1/2 inch thickness.
- Heat cast iron skillet to 700 degrees (the skillet will smoke and the bottom will start to turn white) Dredge butterflied shrimp, or halibut filets, in butter then coat one side with blacken seasoning.
- Place shrimp (or halibut) seasoning side down in the skillet and coat the other side with blacken seasoning.
- Cook for 2 1/2 minutes and then turn the shrimp (or halibut) and cook until desired doneness (usually only takes about another minute or two) Serve shrimp on a pool of Cajun Hollandaise Sauce, reserving enough sauce to dip shrimp into.
- This recipe will also work for cooking steaks or thicker pieces of halibut but you need to cook as above and then finish in the oven.
- WARNING: You will create a large amount of smoke when using this cooking method.
- DO NOT ATTEMPT TO USE THIS METHOD INSIDE YOUR HOUSE OR GARAGE!
- (Unless you wish to invite your local fire department to join you for dinner.) WARNING Number 2: Cooking shrimp or halibut using this method has been known to be extremely addictive once you have tasted the results.

- Combine potatoes, salt, and chives together in a bowl.
- Place 1/4 of potato mixture on each of the fish filets, packing mixture onto fish tightly and fully.
- Heat oven to 350 degrees.
- Heat olive oil in a large, oven proof skillet over medium high heat. Cast iron would be ideal.
- When oil begins to shimmer, place fish filet, potato side down, into the skillet. Continue to cook potato side down until hash browns become golden brown. Place skillet in oven and continue to cook until fish is cooked though, about 12 minutes.
- Remove from oven. Serve fish potato side up.

- Sear halibut on both sides in 1 Tbs olive oil and cook until just about done; around 10 minutes total. Remove from pan and keep warm.
- Add 3 Tbs olive oil, garlic, pepper flakes and bay leaf into skillet; saute just until garlic begins to turn golden and fragrant, 1-2 minutes.
- Stir in shrimp and cook until pink, about 3 minutes.
- Deglaze pan with sherry and lemon juice, simmer briefly to reduce a bit, then finish with parley.
- Divied shrimp and sauce between fish.
- I served this over a bed of fresh cooked spinach and baked potatoe on the side. YUUUMMMY!

- Place halibut on large sheet of aluminum foil.
- Rub the garlic around fish.
- Put dabs of butter down the middle.
- Sprinkle with onion, salt, pepper, Cajun seasoning, lemon juice and parsley.
- Top with prawns.
- Seal the foil around the fish.
- Grill until done about 10 each side.
- Or oven at 350°F for 25-30 minutes.
- ~Note: If you choose to use two or more smaller steaks, adjust ingredients for each serving and wrap each steak in it's own foil packs. This is a nice way to do it for individual servings.~.

- Dredge the halibut and shrimp in the Southwest seasoning.
- Heat the oil in a sauté pan and sear the seafood on both sides.
- The fish will take about 4 minutes per side.
- The shrimp will take about 3 to 4 minutes total.
- Place rice in the center of you serving plates and place the halibut on top.
- Spoon the Avocado Salsa on the fish, followed by the shrimp and Tropical Fruit Salsa.
