1 tablespoon butter
3-1/3 cups fresh corn or 1 package (16 ounces) frozen corn
1 plum tomato, chopped
1 tablespoon lime juice
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/3 cup minced fresh cilantro

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium-high heat. Add corn; cook and stir until tender, 3-5 minutes. Reduce heat to medium-low; stir in tomato, lime juice, salt and cumin. Cook until heated through, 3-4 minutes. Remove from heat; stir in cilantro.

3 medium poblano chilies* (about 9 ounces total)
1/4 cup (1/2 stick) butter
1 1/2 tablespoons cumin seeds
1 medium-size red onion, chopped
2 16-ounce bags frozen mixed white and yellow corn kernels or one 16-ounce bag each yellow and white corn kernels, thawed, drained
2 teaspoons dried oregano
1 teaspoon (or more) chopped canned chipotle chilies**
1 large bunch radishes, trimmed, sliced into rounds
3/4 cup chopped fresh cilantro
1 tablespoon fresh lime juice
2 teaspoons grated lime peel
Lime wedges (optional)

Steps:

  • Char poblano chilies directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel, seed, and coarsely chop chilies. (Can be prepared 1 day ahead. Cover; chill.)
  • Melt butter in large nonstick skillet over medium-high heat. Add cumin seeds and stir until fragrant, about 1 minute. Add onion and sauté until almost tender, about 6 minutes. Add corn, oregano, 1 teaspoon chipotle chilies, and poblano chilies and sauté until corn is heated through, about 5 minutes. Stir in radishes, 1/2 cup cilantro, lime juice, and lime peel. Sauté until radishes are slightly softened but still retain their color, about 2 minutes. Add more chipotle chilies by 1/2 teaspoonfuls, depending on spiciness desired. Season generously with salt and pepper. Transfer to bowl. Sprinkle with remaining 1/4 cup cilantro. Garnish with lime wedges, if desired, and serve.

  • ** Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores, and some supermarkets.

1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
1 large tomato, seeded and chopped
1/2 cup chopped onion
1/2 cup chopped green pepper
1 can (4 ounces) chopped green chilies
1/2 cup olive oil
1/4 cup cider vinegar
2 teaspoons sugar
1 teaspoon chili powder
3/4 teaspoon salt
1/2 teaspoon ground cumin

Steps:

  • In a large bowl, combine the first seven ingredients. In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, chili powder, salt and cumin; shake well. Pour over pasta mixture; toss to coat. Cover and refrigerate for at least 1 hour or until chilled.

3 medium roma tomatoes (chopped)
3 teaspoons cumin
1 teaspoon oregano (dried)
1/4 cup green pepper (diced)
3 green onions (sliced)

3/4 cup mayonnaise
hot sauce

Steps:

  • Combine all ingredients in a serving bowl. Season with salt and pepper and adjust seasoning to your taste,possibly adding hot sauce to bring corn and tomatoes to a spicy level.

2 cups freshly cooked corn kernels (from about 3 medium ears)
1/4 cup finely diced red bell pepper
1/4 cup finely diced red onion
1 teaspoon minced jalapeño pepper, with seeds
3 tablespoons vegetable oil
1 tablespoon Dijon style mustard
1 tablespoon white wine vinegar
1 tablespoon granulated sugar
1 tablespoon finely chopped dill
1/4 teaspoon kosher salt
FOR THE RUB:
2 teaspoons whole black peppercorns
1 1/2 teaspoons cumin seeds
1 1/2 teaspoons chili powder
1 1/2 teaspoons brown sugar
1 1/2 teaspoons kosher salt
1 teaspoon dried oregano
1/2 teaspoon granulated garlic
1 beef sirloin steak, 1 1/2 to 2 lbs and about 1 1/4 inches thick
extra-virgin olive oil

Steps:

  • TO MAKE THE SALAD: In a large bowl combine the corn, bell pepper, onion, and jalapeno.In a small saucepan whisk together the vegetable oil, mustard, vinegar, sugar, dill, and salt. Bring to a simmer over medium high heat and pour the warm vinaigrette over the corn mixture, toss well, and allow to stand at room temperature until ready to serve.TO MAKE THE RUB: Using a spice grinder or mortar and pestle, coarsely grind the peppercorns and cumin seeds. Place in a small bowl and combine with the remaining rub ingredients.Trim the steak of any excess fat. Press the rub into both sides of the steak and allow to stand at room temperature for 20 to 30 minutes before grilling.Lightly brush or spray both sides of the steak with olive oil. Grill over Direct Medium heat until the internal temperature reaches 145°F for medium rare, 10 to 12 minutes, turning once halfway through grilling time. This is a wonderful cold salad which complements a good steak on the grill or barbeque ribs or chicken. I discovered this dish on a hot 4th of July party. It was a huge hit so I had to get the recipe!

2 (16 ounce) packages frozen corn, thawed
1 cup chopped green onions
⅔ cup chopped red bell pepper
¼ cup chopped fresh cilantro
½ cup olive oil
¼ cup red wine vinegar
2 tablespoons Dijon mustard
1 tablespoon honey
1 teaspoon minced garlic
½ teaspoon ground cumin
½ teaspoon dried thyme

Steps:

  • Combine corn, green onions, bell pepper, and cilantro in a large bowl.
  • Whisk olive oil, vinegar, Dijon mustard, honey, garlic, cumin, and thyme together in a small bowl until well combined. Add dressing to the corn mixture and toss to coat. Refrigerate for 2 hours before serving.

A recipe from the book of Splenda. I tried it and it's quite yummy. I omitted the green peas so I used 1 cup of chickpeas. I also omitted the cumin, and fresh coriander.

15 ounces black beans, drained
15 ounces corn kernels, drained
1/2 cup chickpeas, drained
1/2 cup frozen green pea, frozen (do not thaw them)
1/2 cup black olives, sliced
1 medium red bell pepper, diced
1/2 medium red onion, minced
1/2 cup jicama, diced (optional)
6 tablespoons red wine vinegar
3 tablespoons olive oil
1 1/2 tablespoons Splenda granular
2 teaspoons garlic, crushed
3/4 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon dried red pepper
1/2 cup fresh coriander, chopped

Steps:

  • In a large bowl, put black beans, corn, chickpeas, peas, olives, peppers, onion and jicama.
  • In a small bowl, whisk together the vinegar, olive oil, splenda, garlic, cumin, salt and dried red pepper. Pour on the salad and stir to coat well. Add coriander and stir again.
  • Put in the fridge at least 1 hour before serving. It will be good in the fridge for many days.
