WARM SOUTHWEST SALSA WITH TORTILLA CHIPS



Warm Southwest Salsa with Tortilla Chips image

Turn up the heat at your Mexican-themed party with a hot dip that's loaded with tomatoes, corn, black beans and flavor. Make it in 30 minutes!

2 cans (10 oz each) petite diced tomatoes with lime juice and cilantro, drained
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 cup frozen corn
1/2 cup finely chopped green bell pepper
2 medium tomatillos, husks removed, rinsed and finely chopped (about 1/2 cup)
1 jalapeño chile, seeded, finely chopped
1 clove garlic, finely chopped
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 cup shredded Mexican cheese blend (2 oz)
12 oz yellow tortilla chips
2 tablespoons chopped fresh cilantro, if desired

Steps:

  • Lightly spray 1 1/2-quart round microwavable casserole with cooking spray. In large bowl, mix all ingredients except cheese, tortilla chips and cilantro. Spoon into casserole. Sprinkle cheese evenly over top.
  • Microwave uncovered on High 5 to 7 minutes or until warm. Sprinkle with cilantro. Place casserole on large round platter; surround with tortilla chips. Serve immediately. (Salsa will be saucy; serve with slotted spoon.)

Although this recipe sounds like another one named similarly, it has different proportions so be aware they are different.This recipe is for a unique appetizer with a southwest kick. Fun to make and fun to eat. Very simple ingredients but delicious. These were eaten so fast and everyone wanted the recipe guest and family alike. The rice gives it unique texture. I use cheddar pepper jack so you can too if you have trouble finding just pepper jack. Further, I used Japanese sticky rice (not Uncle Bens or the the like) and Tostitos salsa but you can sub in your favorites. The sticky rice really binds it. Picture coming. Enjoy! ChefDLH

1 1/2 cups white rice (cooked) or 1 1/2 cups brown rice (cooked)
1 cup shredded monterey jack pepper cheese
1 beaten egg
1/3 cup salsa (Tostitos is great)
1/4 cup sour cream
salt and pepper
1/3 cup crumbled tortilla chips
cilantro leaf

Steps:

  • Preheat oven to 350 Degrees.
  • Stir together 1½ cups cooked white or brown rice, 1 cup shredded pepper Jack cheese, 1 beaten egg, 1/3 cup salsa, 1/4 cup sour cream and salt and pepper to taste.
  • Spray 24 mini muffin pan or mini bar pan with nonstick cooking spray and press equal amounts of rice mixture into each cup.
  • Top with 1/3 cup crumbled tortilla chips and bake for 15 to 20 minutes or until tops are lightly browned.
  • Top with salsa, sour cream and cilantro leaves.

2 tablespoons finely chopped sweet red pepper
1 green onion, finely chopped
1 teaspoon canola oil
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3/4 cup shredded reduced-fat Monterey Jack cheese or Mexican cheese blend
1/2 cup frozen corn, thawed
1/2 cup canned black beans, rinsed and drained
1 tablespoon chopped seeded jalapeno pepper
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
8 sheets phyllo dough (14x9 inches)
Butter-flavored cooking spray
SAUCE:
1/3 cup cubed avocado
1/4 cup reduced-fat mayonnaise
1/4 cup reduced-fat sour cream
1-1/2 teaspoons white vinegar

Steps:

  • In a small skillet, saute red pepper and onion in oil until tender. Transfer to a large bowl; stir in 1/2 cup spinach (save the rest for another use). Stir in the cheese, corn, beans, jalapeno, cumin, chili powder and salt., Place 1 sheet of phyllo dough on a work surface with a short end facing you. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Spray sheet with butter-flavored spray; cut into three 14x3-in. strips. , Place a scant tablespoon of filling on lower corner of each strip. Fold dough over filling, forming a triangle. Fold triangle up, then over, forming another triangle. Continue folding, like a flag, until you come to the end of the strip. , Spritz end of dough with spray and press onto triangle to seal. Turn triangle and spritz top with spray. Repeat with remaining phyllo and filling. , Place triangles on baking sheets coated with cooking spray. Bake at 375° until golden brown, 10-12 minutes. Meanwhile, mash avocado with the mayonnaise, sour cream and vinegar. Serve with warm appetizers.

A clever cross between wontons and tacos, these triangles are fun to serve, especially at the holidays. My mom created the recipe years ago, much to the delight of my family. 1 pound ground beef
1 medium onion, chopped
Salt and pepper to taste
1 can (16 ounces) refried beans
1-1/2 cups shredded cheddar cheese
1 cup salsa
1 can (4 ounces) diced jalapeno peppers, drained
2 packages (12 ounces each) wonton wrappers
Oil for deep frying
Additional salsa

Steps:

  • In a large skillet over medium heat, cook the beef, onion, salt and pepper until meat is no longer pink, 5-7 minutes; crumble beef; drain. Add the beans, cheese, salsa and jalapenos. Cook and stir over low heat until the cheese is melted. Remove from the heat; cool for 10 minutes., Place a teaspoonful of beef mixture in the center of 1 wonton wrapper. Moisten edges with water. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold wonton in half, forming a triangle; press edges to seal. Repeat., In an electric skillet or deep fryer, heat oil to 375°. Fry wontons, a few at a time, until golden brown, 2-3 minutes. Drain on paper towels. Serve warm with additional salsa.
