Sauteed Sablefish with Ginger-Soy Glaze image

4 (5- to 6-ounce) sablefish (black cod) fillets
3 Tbsp honey

Steps:

  • Combine first 7 ingredients in an 11 x 7-inch baking dish. Add sablefish, turning to coat. Cover and marinate in the refrigerator for 20 minutes, turning after 10 minutes.
  • Remove fish from dish and reserve marinade. Sprinkle fish evenly with salt and pepper. Heat a large nonstick skillet or sauté pan over medium-high heat. Add canola oil and lay fish in pan, skin side up. Cook 5 minutes on each side or until lightly browned and to desired degree of doneness.
  • While fish cooks, pour reserved marinade into a small saucepan. Bring to a boil and cook 7 minutes, or until marinade is thick enough to coat the back of a spoon.
  • To assemble: Place the ramen noodles on dish and place fillet on top of the bed of ramen. Brush fish with glaze and garnish with sliced green onions.

¾ cup balsamic vinegar
½ cup soy sauce
¼ cup freshly squeezed lemon juice
2 tablespoons honey
2 tablespoons finely grated ginger
1 ½ teaspoons chopped garlic
1 tablespoon toasted sesame oil
1 tablespoon chopped shallot
6 sablefish fillet pieces, skin and pin bones removed, about 5 ounces each
BALSAMIC GLAZE:
½ cup balsamic vinegar
1 tablespoon toasted sesame seeds

Steps:

  • Combine the vinegar, soy sauce, lemon juice, honey, ginger, garlic, sesame oil, and shallot in a shallow dish and stir to evenly mix. Add the sablefish fillet pieces, cover, and refrigerate for at least 12 hours. Heat the balsamic vinegar in a small saucepan over medium heat and reduce until thick enough to coat the back of a spoon, 8-12 minutes. You should have about 2 tablespoons of balsamic glaze; transfer to a small dish and set aside. Preheat the broiler. Line a rimmed baking sheet with foil. Set the top oven rack about 5 inches below the heat source. Lift the sablefish from the marinade, allowing excess to drip off, and arrange on the baking sheet. Broil until nicely browned and caramelized on top and opaque through the thickest part, 8-10 minutes. Arrange the sablefish fillets on individual plates. Drizzle with the balsamic glaze and sprinkle with sesame seeds. If you like, the sablefish may be served with a simple watercress salad, dressed with extra virgin olive oil and lemon juice.

2 tablespoons orange juice
2 tablespoons reduced-sodium soy sauce
1 tablespoon minced fresh parsley
1 tablespoon lemon juice
1 tablespoon ketchup
1 teaspoon minced fresh gingerroot
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1 teaspoon olive oil
2 garlic cloves, minced
1-1/4 pounds swordfish steak

Steps:

  • In small bowl, combine the orange juice, soy sauce, parsley, lemon juice, ketchup, ginger, oregano and pepper. Set aside 2 tablespoons mixture for basting., Stir oil and garlic into remaining mixture. Place in a large resealable plastic bag; add fish. Seal bag and turn to coat; refrigerate for 30 minutes., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill fish, covered, over high heat or broil 4 in. from the heat for 3-5 minutes on each side or until fish just turns opaque, basting occasionally with reserved orange juice mixture.

8 small white fish fillets (such as snapper)
salad greens, to serve (baby asian)

Steps:

  • Combine honey, soy, ginger and oil in a saucepan over medium heat.
  • Cook, stirring, until marinade comes to the boil.
  • Set aside to cool. Pour marinade into a ceramic dish.
  • Add fish to cooled marinade. Turn to coat.
  • Cover. Refrigerate for 30 minutes.
  • Preheat a chargrill or barbecue on medium heat.
  • Remove fish from marinade, reserving marinade.
  • Cook fish, brushing with marinade, for 3 minutes each side or until cooked to your liking.
  • Place onto plates.
  • Serve with Asian salad greens.

1 1/2 pounds 3/4-inch-thick hake or pollack fillets, cut into 2x3- or 2x4-inch pieces
1/2 cup chopped green onions
3 tablespoons minced peeled fresh ginger
3 tablespoons Shaoxing wine (Chinese rice wine) or dry Sherry, divided
2 tablespoons peanut oil or vegetable oil, divided
1 tablespoon soy sauce
Sauce
3 tablespoons sugar
2 tablespoons soy sauce
2 tablespoons Asian sesame oil
2 tablespoons Shaoxing wine (Chinese rice wine) or dry Sherry
1 tablespoon dark soy sauce
1 whole star anise
1/4 cup chopped green onions

Steps:

  • For fish:
  • Rinse fish and pat dry. Mix green onions, ginger, 1 tablespoon rice wine, 1 tablespoon oil, and soy sauce in 11x7x2-inch glass baking dish. Add fish and turn to coat. Let marinate 1 hour at room temperature.
  • For sauce:
  • Bring first 6 ingredients to boil in heavy small saucepan, stirring to dissolve sugar. Reduce heat to medium and simmer until sauce is slightly thickened and reduced to 1/3 cup, about 4 minutes. Remove star anise sauce from heat and cool.
  • Remove fish from marinade and place on several layers of paper towels to drain; reserve marinade. Pat fish dry. Heat 14-inch-diameter flat-bottomed wok over high heat until drop of water added to wok evaporates on contact. Add remaining 1 tablespoon oil to wok, then fish pieces, spreading evenly. Cover and cook 30 seconds. Uncover and loosen fish pieces with metal spatula. Reduce heat to medium and cook 1 minute. Turn fish pieces over; cook 1 minute. Add remaining 2 tablespoons rice wine and reserved marinade from fish. Cover and cook 1 minute. Remove wok from heat; let fish stand covered until just opaque in center, about 1 minute. Using metal spatula, transfer fish and sauce from wok to plate. Drizzle with some of star anise sauce. Refrigerate until cold. DO AHEAD Can be made 6 hours ahead. Cover fish and keep chilled. Cover remaining star anise sauce and let stand at room temperature.
  • Spoon additional star anise sauce over fish; sprinkle with green onions and serve cold or at room temperature.

DH and I made this for dinner a couple of nights ago and really enjoyed the combination of ginger and soy with the swordfish. From Keiko O Aoki's "Easy and Healthy Japanese Food for the American Kitchen." I should mention that I always use reduced sodium soy sauce (I prefer San-J Tamari).

4 pieces swordfish fillets
2 green onions, finely chopped
4 slices fresh lemon rind
2 small tomatoes, wedged
1/2 cup flour
4 tablespoons vegetable oil
salt, to taste
pepper, to taste
2 1/2 tablespoons butter
2 inches fresh ginger, peeled and thinly shredded
4 tablespoons white wine
2 tablespoons soy sauce

Steps:

  • To make the sauce, melt the butter in a small frying pan. Add the thinly shredded ginger and slowly saute over low heat. Add the white wine and soy sauce to complete the sauce.
  • Place the swordfish filets on a plate and sprinkle with salt and pepper on both sides. Lightly coat the filets with flour.
  • Heat the vegetable oil in a frying pan and place the swordfish filets in pan, frying until both sides are nicely browned and cooked through.
  • Serve on a plate with lemon rinds and finely chopped green onion on top. Pour the sauce on the fish. Serve with tomatoes on the side for garnish.
