SPAGHETTI SQUASH AND SAUSAGE BAKE RECIPE
Creamy, cheesy, and deliciously comforting, this spaghetti squash recipe is rich and satisfying enough to be served as a main dish but works well as a side too. It's a healthier, lower carb alternative to a pasta dish.

- Preheat oven to 400. Lightly mist a 9" x 13" baking dish with cooking spray.
- With a sharp knife, pierce some holes all over the squash. Place it in a microwave safe dish and microwave on high for about 7 minutes. This will soften the squash enough so that it can be cut in half. Let squash cool about 10 minutes before handling.
- Once squash has cooled, cut it in half lengthwise and scoop out all the seeds. Lightly mist both halves with an olive oil mister and sprinkle with salt. Place in a shallow baking dish with about 1/2 " of water (cut sides up), and roast in the oven for about 30-40 minutes, or until squash is tender.
- When squash is cool enough to handle, scrape with a fork to remove flesh in long strands, and place strands in a large bowl.
- Add the cooked sausage into the squash.
- In a medium sized sauce pan, melt butter over medium high heat. Stir in the flour to form a roux. Then slowly whisk in the milk, broth and garlic. Bring to a boil, while whisking constantly. Then lower heat to medium, stir in the parmesan and sage, and continue stirring until sauce thickens.
- Pour sauce over squash and mix well and season with salt and pepper.
- Pour squash into prepared baking dish, and sprinkle with mozzarella cheese, then top with the Panko breadcrumbs and dried parsley.
- Place in oven and bake until heated through and cheese is melted and bubbly, about 30 minutes.
- Let cool for about 5 minutes. Cut into 8 equally sized servings.

- Halve the squash lengthwise and scoop out the seeds. Put the squash, cut-side up, in a large microwave-safe bowl and drizzle with 1 tablespoon olive oil and 1 tablespoon water. Season with salt and pepper. Cover tightly with plastic wrap and microwave until tender, about 20 minutes. Scoop out the flesh into a colander (use a towel to hold the squash) and shred with 2 forks.
- Meanwhile, heat a grill pan over medium heat. Grill the sausages, turning, until cooked through, about 20 minutes.
- Heat the remaining 2 tablespoons olive oil in a skillet over medium-high heat. Add the bell pepper, onion and 1 teaspoon salt and cook until softened, about 5 minutes. ITALIAN SAUSAGE & SPAGHETTI SQUASH CASSEROLE

- This casserole will require a 9x13 inch casserole dish (you may prep it with non-stick cooking spray if desired).
- Preheat the oven to 400-degrees. Line a baking sheet with parchment paper or tin foil. Halve the squash (lengthwise or widthwise) and scoop out the seeds. Sprinkle the halves with a bit of salt. Place squash halves cut side down on a baking sheet.
- Bake squash in preheated oven for about 35-40 minutes or until it's easily pierced with a knife. Remove from oven and cool until easily handled. Use a fork to scrape out the "spaghetti" into a mixing bowl.
- To the squash, add egg (beaten), Parmesan cheese, onion powder, garlic powder, black pepper, and salt. Mix well. Set aside. Reduce oven temperature to 375-degrees in preparation for the casserole.
- In a large to medium pot, over medium-high heat, brown the Italian sausage until just done. Do not drain. Add the onion, bell pepper, and garlic. Cook for another 3-5 minutes until the onions become translucent. Remove from heat. Add the 24 oz jar of pasta sauce. Mix thoroughly. Set aside.
- Grab your casserole dish and begin layering. First, add about 2/3 cup of meat sauce to the bottom of the dish, and spread evenly. Next, layer half the spaghetti squash mixture on top of the meat sauce using a fork to evenly press it into a uniform thickness, almost as if it's acting as a lasagna noodle. Top the squash layer with half of the remaining meat sauce, and spread evenly. Now sprinkle 2 cups of the shredded mozzarella cheese over the meat sauce.
- Spread the remaining squash mixture using the same technique as above, followed by the rest of the meat sauce. Sprinkle the last 2 cups of mozzarella cheese evenly over the meat layer.
- Bake in preheated, 375-degree oven until cheese is bubbly and golden brown, about 25-30 minutes.
- Let cool for at least 10 minutes. This allows the casserole to be set up so that each serving comes out clean and beautiful. Enjoy!

I had a recipe for a 4-cheese baked spaghetti squash that I really liked, but it was hard to eat. It was baked in the shell of the squash, and then mixed together after baking. I wanted to try it as a casserole, and after a few tries, this is what I came up with.

- Preheat the oven to 350 degrees F (175 degrees C).
- Brush the squash flesh with 1 tablespoon olive oil and sprinkle 1/8 teaspoon garlic-pepper over top; rub the edges and insides to make sure it's distributed evenly. Place on a baking sheet.
- Bake in the preheated oven until tender when pierced with a fork, 45 to 60 minutes.
- Meanwhile, heat 1 tablespoon olive oil in a large cast iron pan over low heat. Add mushrooms, onion, and jalapeno and cook, stirring occasionally, for 30 minutes. Add garlic and cook for about 10 more minutes. Move everything to the outside edges of the pan; add sausage, fennel seeds, salt, and pepper to the center. Cook and stir until pork is browned, crumbly, and no longer pink, about 10 minutes. Fold in the broccoli and remove from the heat.
- Remove squash from the oven and set aside to cool a bit. Leave the oven on.
- Mix chicken base, oregano, thyme, and basil together in a large bowl. Add Parmesan cheese and mix thoroughly. Add Cheddar and mozzarella and mix until well combined; it may be a little clumpy, but as long as it's only small clumps, that's okay.
- Shred squash flesh onto a sheet pan; use an oven mitt to hold it if it's still too hot. Toss with remaining garlic-pepper and season with salt and pepper if you want to. (Just remember the chicken base has a fair amount of salt in it already.)
- Spray an 11x13-inch baking dish with nonstick spray. Spread 1/2 of the shredded squash evenly over the bottom of the dish and top with 1/2 of the pork-vegetable mixture. Repeat for a second layer. Pour cream over the entire dish.
- Bake, uncovered, in the preheated oven for 30 minutes.

- Cut the squash in half and carefully remove the seeds.
- Be sure to cut around the edge so you don't cut into the squash itself.
- Turn halves upside down in a baking pan.
- Bake at 375-degrees for approx 45 minutes, or until the inside is soft.
- Let cool and carefully remove inside of squash with fork or spoon.
- It will look a lot like cooked spaghetti and come out in strands.
- Heat some olive oil in a skillet.

- Halve squash crosswise; remove seeds.
- Place cut sides down in a 2 qt rectangular baking dish, add 1/4 c water, cover with ventilated plastic wrap and microwave on HIGH for 10-15 minutes or until squash separates when pierced with a fork. Rearrange once for even baking. DO NOT over cook squash or it will be mushy.
- In a large skillet cook sausage, mushrooms, pepper, onion and garlic over med heat until sausage is no longer pink; drain fat.
- Preheat oven to 350 degrees.
- Scape pulp from squash (about 3 c) wipe out baking dish and coat with nonstick spray.
- Spread half the squash in dish, add half the sausage mixture and half the olives.
- Sprinkle with seasoning and 1/8 tsp pepper.
- Top with half the sauce and half the cheese.
- Top with remaining squash, sausage, olives and sauce.
- Bake for 30 min, sprinkle with remaining cheese, bake for 5 more min or until cheese is melted.
- Let stand 10 minutes before serving.

- Wrap squash halves in plastic wrap. Cook 1 at a time in microwave on high until tender, about 8 minutes. Pierce plastic to allow steam to escape. Cool. Meanwhile, sauté sausage, bell pepper, onion and garlic in heavy large skillet over medium-high heat until sausage browns and vegetables are tender, breaking up sausage with back of spoon, about 12 minutes. Mix in marinara sauce.

- Preheat oven to 350 (F) degrees.
- Carefully split the spaghetti squash in half lengthwise.
- In a 3 quart casserole dish place a shallow amount of water to the bottom of the dish until the bottom is covered, just.
- Place each squash half, open face down on the casserole dish within the shallow water. Bake for 35-45 minutes, or until the squash is just soft and stringy to the touch.
- Leaving the oven on, Remove the baked squash from the oven. Carefully start scrapping the squash from the shell (it will be hot), placing the scrapped contents in a medium-large bowl. Be sure to save your shells, simply place the empty shells back in the same shallow casserole dish. These will be reused in a just a bit.
- Add the Spaghetti sauce, salt and garlic powder in with the spaghetti squash that was scrapped into the medium bowl and mix until well combined.
- Fill the shells. Start will a base layer to each shell with the spaghetti squash, add a light layer of the cubed sausage followed by a light layer of the shredded mozzarella cheese. Repeat this process until all ingredients are evenly layered between both shells. Top with any remaining cheese and add the Parmesan cheese evenly to the top. Place back in the oven and allow to heat through for an additional 10-15 minutes or until bubbly and all the cheese is melted.
- Remove from the oven and allow to sit for 3-5 minutes. Plate & Serve.
