Our Spaghetti Pie with Spagetti Squash recipe incorporates lots of spaghetti squash and is meat and dairy free.

1 tablespoon extra virgin olive oil
1 yellow onion, chopped
6 cloves garlic, crushed
10 ounces fresh spinach or frozen chopped spinach, thawed and patted dry
Unrefined sea salt, to taste
1/2 cup finely chopped fresh basil
4 cups cooked spaghetti squash (see notes above)
4 cups cooked whole grain gluten free spaghetti, such as jovial
2 cups prepared marinara sauce, such as Roa's
2 organic (pastured eggs)
(OPTIONAL) 1 lb of ground turkey, cooked

Steps:

  • Preheat oven to 350 degrees. Lightly oil the bottom of a 12″ Versa Skillet or a 9×13 casserole dish.

Not too many people would know this pie is not made with coconut, but actually uses spaghetti squash. I wasn't sure what to do with a bumper crop of spaghetti squash and this quickly became an annual answer to a now non-issue!

1 cup white sugar
3 eggs
¼ cup butter, melted
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
3 cups cooked, shredded spaghetti squash
1 (9 inch) pie shell, baked
1 pinch ground nutmeg
1 pinch ground cinnamon
1 ½ cups whipped cream for garnish

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat the sugar and eggs together in a mixing bowl until light and frothy. Beat in the butter, lemon juice, and vanilla until well blended. Stir in the spaghetti squash. Pour the mixture into the prebaked pie shell. If desired, dust the top with nutmeg and cinnamon.
  • Bake the pie in preheated oven until a knife inserted in the center comes out clean, 40 to 45 minutes. Cool on a rack before serving. Garnish with whipped cream, if desired.

1 spaghetti squash (3 lb.)
1/2 lb. lean ground beef
1-1/2 cups CLASSICO Tomato and Basil Pasta Sauce
1 tsp. dried Italian seasoning, divided
2 Tbsp. flour
3 Tbsp. butter, melted
3 eggs, beaten
1/3 cup KRAFT Grated Parmesan Cheese
2 cloves garlic, minced
1 cup KRAFT Finely Shredded Italian* Five Cheese Blend

Steps:

  • Heat oven to 350ºF.
  • Pierce squash with fork several times. Microwave on HIGH 15 min. or until tender when pierced with knife.
  • Meanwhile, brown meat in large skillet; drain. Return to skillet. Stir in pasta sauce and 1/2 tsp. seasoning; bring to boil. Simmer on medium-low heat 5 to 8 min. or until slightly thickened.
  • Cut squash in half; remove seeds. Scrape squash into large bowl. Add flour; toss to coat. Add butter, eggs, Parmesan and garlic; mix lightly. Spoon into 10-inch pie plate sprayed with cooking spray; top with meat sauce, leaving 1/2-inch rim around edge. Top with shredded cheese and remaining seasoning.
  • Bake 30 to 35 min. or until squash mixture is heated through and cheese is lightly browned.

This is my " altered" spaghetti pie recipe being allergic to wheat I often use spaghetti squash in place of noodles and as a diabetic I make other substitutions to lower fat and calories.

2 cups cooked spaghetti squash, removed from skin and separated into noodles
1/4 cup parmesan cheese
2 egg whites, beaten
1 cup plain low-fat yogurt
3/4 lb lean ground beef
1/2 cup diced onion
1/2 cup diced green pepper
2 garlic cloves
1 (14 ounce) can tomatoes, diced
1 (8 ounce) can tomato sauce
other spices (oregano, basil or your favorites)

Steps:

  • Spray 9" pie pan with non stick spray.
  • Mix squash noodles with egg whites and parmesan cheese press into pan forming crust.
  • Spread with yogurt.
  • Cook ground beef in skillet with onions, green peppers, garlic and any of the spices and or herbs that you have chosen. When meat is brown, add tomatoes and tomato sauce.
  • Add meat mixture to noodle crust and bake at 350 degrees for 20 minutes.

We love pumpkin pie, but had fresh squash in excess. So I came up with this new variation! 1 cup mashed cooked winter squash
1 cup heavy whipping cream
3 large eggs, lightly beaten

Steps:

15 oz. ricotta cheese
1 egg
3 cups marinara sauce
10 oz. frozen spinach
1 Spaghetti Squash
1 t basil
1 t oregano
.5 t black pepper
4.5 oz Colby Jack

Steps:

  • Cut the spaghetti squash in half and scoop out the seeds and pulp. Pierce slits in the rind with the knife, then microwave on high for 12 minutes. Let cool. Microwave spinach to cook, let cool, then drain/pat dry. Crack egg into a large mixing bowl and add ricotta. Mix with a wooden spoon. Add marinara and mix. Add spinach and spices. Use a fork to "shred" spaghetti squash flesh into strands. Put strands in bowl with sauce and toss to combine. Transfer to a lightly greased dish. Sprinkle the cheese on top along with the panko. Bake for 25 minutes on 375. Makes six servings (2.5-3 cups each). Number of Servings: 4

1 medium spaghetti squash
cooking spray
1 tablespoon olive oil
½ pound bulk Italian sausage
1 medium zucchini, chopped
1 medium red bell pepper, chopped
½ medium onion, chopped
1 clove garlic, minced
salt and ground black pepper to taste
1 (28 ounce) jar pasta sauce
½ cup shredded Parmesan cheese
½ cup shredded mozzarella cheese

Steps:

  • Pierce squash a few times with a very sharp knife. Place squash in a microwave-safe bowl and microwave on high power until squash is tender and a knife can easily poke through the skin, 10 to 13 minutes. Let squash rest, undisturbed, for 10 minutes.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray an 8-inch casserole dish with cooking spray.
  • Heat oil in a skillet over medium heat; stir in sausage, zucchini, bell pepper, onion, and garlic. Saute, stirring occasionally, until veggies are tender and sausage is crumbly and brown, 5 to 7 minutes.
  • Cut open squash and remove and discard all seeds. Scrape out the flesh with a fork and add to the sausage and veggie mixture. Season with salt and pepper and cook over medium heat for 5 minutes. Stir in pasta sauce and transfer to the prepared casserole dish. Top with shredded Parmesan and mozzarella cheeses.
  • Bake in the preheated oven until heated through and cheeses are melted, about 15 minutes.

  • Line a 9" pie pan with pie crust.
  • Mix all of the listed ingredients, and beat well.

  • Coat the bottom of a medium skillet thinly with olive oil, and heat thoroughly over medium high. Add all the zucchini that will fit in a single layer, and fry on one side for 3 to 5 minutes, until golden brown. Flip over and fry on the other side, remove to paper towels to drain, and sprinkle lightly with salt. Repeat the process, adding more oil to the pan as needed, until all the zucchini are fried. Set aside.
  • For a very firm pie, place tomato sauce in a fine mesh strainer set over a bowl and stir once or twice, to drain excess water.
  • Heat a teaspoon of oil in the skillet from the zucchini over medium heat. Add onion and cook 7 to 10 minutes, stirring occasionally, until softened and moderately browned.
