This amazing Hawaiian comfort food classic is made by topping rice with a fried burger, which is then smothered with a rich, brown gravy and finished with a fried egg. Seriously, how did it take until 1949 for someone to think of this combination? We all get hangry sometimes, so whether you're a broke student or an older professional who just wishes you were, this cheap, filling bowl of goodness is the perfect solution. Garnish with green onions.

2 (4 ounce) patties ground beef
1 pinch salt and freshly ground black pepper to taste
1 pinch cayenne pepper
1 ½ cups beef stock
4 teaspoons soy sauce
1 teaspoon Worcestershire sauce
2 drops sesame oil, or to taste
2 teaspoons ketchup
2 teaspoons white sugar
4 teaspoons cornstarch
2 teaspoons unsalted butter, divided
2 tablespoons minced green onions, white and light green parts only
2 eggs
2 cups hot cooked white rice

Steps:

  • Season patties with salt, pepper, and cayenne.
  • Whisk beef stock, soy sauce, Worcestershire sauce, sesame oil, ketchup, sugar, and cornstarch together in a bowl.
  • Melt butter in a skillet over medium-high heat. Cook patty in the hot skillet until a browned crust forms on the bottom, about 5 minutes. Flip; toss in green onions and cook the other side until both beef and onions are browned, 4 to 5 minutes more. Remove patty and most of the green onions to a plate.
  • Pour beef stock mixture into the skillet. Stir, scraping up browned bits from the bottom, until thickened, about 2 minutes. Reduce heat to low and reserve gravy until needed.
  • Melt remaining butter in another skillet over medium heat. Add eggs to the skillet and fry side-by-side until whites are set and yolks are still runny.
  • Divide rice between 2 serving bowls. Place patties over the rice, spoon gravy on top, and add the fried eggs.

4 cups water
½ (12 ounce) container Spam™ sliced into 1/4 inch thick slices
4 eggs, beaten
1 (10.5 ounce) can brown gravy, heated

Steps:

  • Combine the rice and water in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed.
  • Meanwhile, heat a non-stick skillet over medium heat until hot. Fry Spam™ slices until browned. Remove from the skillet, and set aside. Pour the eggs into the skillet; cook and stir until scrambled and cooked through. Set aside.
  • For each plate, place two scoops of rice, two scrambled eggs, and two slices of spam. Top with brown gravy.

2 cups long grain rice
3 1/2 cups low-sodium chicken broth
1 pound ground beef (80/20 blend)
1/4 cup diced Maui onion
Kosher salt and freshly cracked black pepper
Canola oil
1 tablespoon unsalted butter
1/4 cup roughly chopped cremini mushrooms
1/4 cup diced Maui onion
1 1/2 cups low-sodium beef broth
1 teaspoon Worcestershire sauce
1 tablespoon cornstarch
Canola oil
4 large eggs
2 to 3 tablespoons chopped fresh flat-leaf parsley, for garnish, optional
1/4 cup seeded and diced Roma tomato, for garnish, optional

Steps:

  • For the rice: Wash the rice under cold running water until the water runs clear. In a medium saucepot over high heat, bring the chicken broth to boil. Add the rice, cover and reduce the heat to low for about 15 minutes. Remove from the heat and let stand for 5 minutes. (Alternatively, add both the rinsed rice and the chicken broth to a rice cooker and turn the machine on - it will keep the rice warm until ready to serve.) Fluff with a fork and cover. Keep warm until ready for use.
  • For the burgers: Mix the ground beef, onions and some salt and pepper in a large mixing bowl. Form 4 medium patties and set aside.
  • Set a large cast-iron pan over high heat. Add a drizzle of canola oil and set the patties in the pan. Cover pan with a lid (or a second pan) to seal in the moisture and ensure juicy patties. Cook until well browned on first side, 3 to 4 minutes. Then remove the lid, flip over, replace the lid and continue cooking to desired doneness, about 3 minutes for medium-rare. Remove the burgers and keep warm.
  • For the gravy: Add the butter to the pan with the drippings. Saute the mushrooms and onions until golden brown, about 5 minutes. Add the beef broth and Worcestershire sauce, bring to a boil and reduce down for 2 to 3 minutes.
  • In a separate bowl, mix the cornstarch with 1 tablespoons water to make a smooth paste. Slowly add into the gravy, stirring constantly until thickened. Season with salt and pepper. Cover and keep warm until ready for use.
  • For the eggs: Add some canola oil to a nonstick saute pan over medium heat. Crack in the eggs and cook sunny-side up, 3 to 4 minutes. Remove and keep warm. (You can flip the eggs over-easy if you want them cooked a little more.)
  • To serve: Place the cooked rice on a plate, place the burgers on top, then the eggs and finally the gravy. Garnish with parsley and tomato if desired.

1 pound (450g) ground beef
1/2 cup panko bread crumbs
1/2 cup sweet onion (, minced)
1 egg (, beaten)
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon black pepper
vegetable oil (, for frying)
1 1/2 cup beef broth
2 tablespoons all-purpose flour
2 tablespoons butter
2 dashes Worcestershire sauce
salt and pepper (, to taste)
2 cups cooked white rice (, hot or warm)
4 eggs (, cooked sunny side up)

Steps:

  • The patties. Combine all the ingredients together and make 4 patties. Heat the oil in a skillet an fry the patties until desired doneness. I did like 4 minutes per side. Transfer to a plate.
  • The gravy. Use the same skillet you used for cooking the patties. Scrape up the browned bits of the meat. Melt the butter. Whisk in the flour and continue whisking until you get a light-brown paste. Slowly pour in the broth, whisking continually until the flour is combined with the broth. Bring to a boil, reduce to simmer, add the Worcestershire sauce and cook for 5 minutes more. Season to taste.
  • The assembly. Serve the patties over the cooked rice and top each patty with the fried egg. Pour the gravy over the top and enjoy!

  • Add beef broth and Worcestershire sauce to mushroom mixture; bring to boil.
  • In small bowl, mix cornstarch with water to make a smooth paste. Add to pan, whisking until combined and thickened.
  • Season to taste with salt and pepper.
  • Divide rice among 4 plates. Place 2 SPAM® Classic slices on top of rice. Top with gravy and 1 egg.

This Loco Moco with Spam is a fun meal. It is also a delightful breakfast-style dish for dinner. Serve the family a cheerful set of sunny side eggs, nestled next to slices of pan-seared canned Spam on a bed of sweet coconut sticky rice, all drizzled with a syrupy soy sauce blend. This easy recipe was adapted from the "Breakfast for Dinner Cookbook" by Lindsay Landis and Taylor Hackbarth (Quirk Books).

1 cup sweet rice (for the coconut rice)
1/2 cup coconut milk (canned or fresh)
1/4 cup soy sauce
2 Tablespoons brown sugar
1/2 teaspoon sriracha
1 can Spam (sliced )
1/4 teaspoon salt
1/4 teaspoon black pepper powder
2 Tablespoons vegetable oil
2 whole large eggs
1/2 teaspoon salt (divided, sprinkle 1/4 teaspoon on each egg)

Steps:

  • In a medium-sized bowl, soak the sweet rice in 1 cup water. Cover this with plastic wrap and refrigerate for 4 to 6 hours.Pour the rice and water into a medium-sized stockpot. Stir in the coconut milk. Bring to a boil over medium-high heat in about 6 to 8 minutes. Cover the rice. Lower heat to a low. Simmer for 10 minutes more till rice is soft and most of the liquid has been absorbed. Fluff the rice with a fork to keep from sticking to the bottom of the stockpot. Remove from fire. Keep covered and set aside.
  • In a small saucepan, mix together the soy sauce, 2 tablespoons water, brown sugar and sriracha. Over medium heat, simmer the sauce mixture. Stir a few times. Cook till sauce is thick and reduced to half, for about 6 to 8 minutes. Remove from stove and set aside.
  • In a separate non-stick large skillet, add the oil. When oil is hot enough, pan sear the Spam slices for 5 minutes or till the pieces are slightly brown on the edges.Take out the Spam from skillet and drain on paper towels to remove excess oil. Set aside.
  • Using the same large non-stick skillet, add enough oil to cook eggs. When oil is hot enough in about 2 minutes, add the eggs one at a time. Sprinkle a dash of salt over each egg if desired. Cover and cook eggs sunny side up for 2 minutes. Turn off heat. Keep covered. The eggs continue cooking in residual heat for about 2 minutes more.
  • Using a large serving platter, arrange a layer of the coconut rice at the bottom.Top with the Spam slices and eggs.Drizzle the sauce reduction over the entire dish. Garnish with scallions. Serve warm.
  • The sweet rice I used in this recipe is also known to Filipinos as sticky rice or "malagkit" (sticky). If sweet rice is not available, use regular white rice for this recipe. It is just as delightful.

Lived on Oahu for a few years, visited Lileha Bakery and fell in love with the Loco Moco, Spam Musubi, and Haupia pie. After making the very excellent beef patti Recipe #37413 by the papergoddess (Muchas Gracias Senora), I decided to make it into the Loco Moco.

2 cups rice
1 lb ground beef
0.5 (1 1/4 ounce) packet dry onion soup mix
1/2 cup dry breadcrumbs
1 egg
1 teaspoon Worcestershire sauce
1/8 teaspoon pepper
cooking spray
0.5 (1 1/4 ounce) packet dry onion soup mix
1 1/2 cups water
1/2 cup water (mixed with)
2 tablespoons flour
4 eggs
cooking spray
1/8 teaspoon pepper

Steps:

  • Start rice -Make Rice as per package directions.
  • Mix patty ingredients together until it holds together into 4 patties (don't mix too much).
  • Spray pan and fry patties until brown on both sides.
  • Add the remaining 1/2 packet of onion soup mix, and 1 1/2 cup water.
  • Bring to a boil and turn down the heat to a boil and simmer 20 minutes.
  • Remove the patties from the pan.
  • At this time if you think you will want more gravy you might consider adding an additional half packet of onion mix and an additional 2 cups of water.
  • Add the 2 tablespoons flour and 1/2c water. Whisk and boil until thickened to a gravy. If doubling the gravy than double the flour mixture as well.
  • Spray a shallow frying pan and fry each egg separately sunnyside up cooking with covered for 2 minutes.
  • Assemble the loco moco bottom layer of rice, then the patty, then the egg, finally top with gravy.
  • Enjoy! Aloha!
