This Andalusian food has been present in the southern region of Spain since the Middle Ages, and today it is one of the traditional soups of this country. Originally this chicken soup was made using a whole chicken, in order to give it a high caloric content and to maintain body heat during the cold days of the Andalusian winter.

2 carrots
2 garlic cloves
2 bay leaves
3 celery stalks
2 chicken backs (skin on and bone-in)
6 cups (1.5L) water
½ onion
Salt to taste
3 tablespoons olive oil
½ teaspoon oregano

Steps:

  • Grab all the vegetables, clean them, then peel and chop them.
  • In a large pot heat olive oil and add garlic and the rest of the vegetables, sauté for 2 minutes at medium heat. Stir constantly.
  • In the pot, add the chicken backs and let them brown on the outside for 3 minutes. Then add water and bay leaves.
  • Cook for 60 minutes to an hour and a half until the chicken separates easily from the bone.
  • Remove the chicken from the pot, separate the meat from the bone. Put the pieces of chicken meat back into the soup. Add oregano and give it a good mix
  • Bring the soup to a boil and serve it while hot.

2 tablespoons olive oil
3 red onions, cut into 1-inch cubes
3 cloves garlic, coarsely chopped
1 (28 ounce) can Italian plum tomatoes
1 (15 ounce) can garbanzo beans
2 cups water
2 teaspoons paprika
1 teaspoon crushed red pepper flakes
salt and pepper to taste
2 carrots, cut into chunks
1 potato, cubed
4 chicken thighs
4 ounces Spanish chorizo sausage, casing removed, sliced 1/4-inch thick (see note)

Steps:

  • Heat olive oil in a large saucepan over medium-high heat. Stir in onions and garlic, cook until the onion has softened and turned translucent. Pour in tomatoes, garbanzo beans, and water; season with paprika, red pepper flakes, salt, and pepper. Stir in carrots and potatoes, then place chicken thighs skin-side up on top of the vegetables.
  • Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the chicken is tender, about 25 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Remove chicken from the stew and set aside. Stir in the chorizo slices, then pour the stew into a glass baking dish. Place the chicken thighs on top, skin-side up.
  • Bake in preheated oven until the stew has thickened and the chicken skin is crispy, about 15 minutes.

4 Tbl. real butter (*I use Minerva Dairy Amish Butter)
1/2 of a 12 oz. bag sweet baby carrots, sliced into fourths (6 oz. or about 1 1/2 cups)
1 large rib celery, sliced
1 medium-large onion, chopped
1 sweet red cubanelle pepper, medium diced
2 -3 (as much as you like) medium or large boneless skinless chicken breasts, large dice
4 smoked andouille or italian-style chicken sausages, 1 (12 oz.) pkg., such as Al Fresco® or Aidells®, sliced
1 tsp. chili powder
1/2 tsp. coarse ground black pepper
3- 4 large cloves garlic, finely minced
6 cups chicken broth
1 (14.5 oz.) can fire-roasted diced garlic tomatoes
1/2 tsp. Slap Ya Mama® cajun seasoning
1/2 tsp. chipotle powder
1 Tbl. Better Than Bouillon Roasted Chicken base
1 large bay leaf
1 (6.9 oz.) box Zatarain's® Spanish Rice mix
3 Tbl. cornstarch mixed with 3 Tbl. cold water

Steps:

  • In stock pot, add butter and melt over medium/medium-low heat. Stir in celery, onions, peppers, chicken, sausage, chili powder and pepper. Sauté, stirring frequently, for 15 minutes. *Add minced garlic during last 5 minutes.
  • Add rest of ingredients except rice and seasoning packet (and cornstarch/cold water), bring to a boil over medium-high heat.
  • Add rice and seasoning packet, stir well, cover, reduce heat to low, and simmer for 25 minutes until rice is tender. Remove lid and stir, keep at a simmer over low heat.
  • In mug, add cornstarch. Add cold water and stir until well mixed. While soup is still simmering, add slurry mixture. Stir in well and let thicken for one minute. Remove pot of soup from heat, and let rest for at least 15 minutes uncovered, stirring occasionally.
  • Stir, ladle into bowls, and serve piping hot with garlic bread for dunking!

2 tablespoons extra-virgin olive oil (plus additional as needed)
1 teaspoon kosher salt
½ teaspoon black pepper
1 ½ pounds boneless skinless chicken thighs (about 8 thighs)
1 medium yellow onion (cut into 1/4-inch dice)
1 green bell pepper (cut into ½-inch dice)
1 red bell pepper (cut into ½-inch dice)
1 1/2 teaspoons smoked paprika
1 teaspoon dried oregano
½ teaspoon dried rosemary
1 bay leaf
4 garlic cloves (minced)
1 medium sweet potato (peeled and cut into ½-inch dice (or swap Yukon gold or russet potato))
1 28- ounce can crushed tomatoes
1 14-ounce can low sodium chicken broth
½ cup green olives (pitted and chopped)
¼ cup raisins (optional)
1 tablespoon plus 1 teaspoon sherry vinegar
For serving: cooked brown rice or steamed cauliflower rice

Steps:

  • Heat 1 tablespoon of the oil over medium-high heat in a Dutch oven or similar large, sturdy pot. Season the chicken with salt and pepper on both sides. Once the oil is hot, add the chicken thighs in a single layer. Brown for 3 to 4 minutes on each side until light golden brown, transfer to a plate. If the chicken won't all fit in a single layer, brown it in batches. The thighs do not need to be cooked all the way through.
  • Reduce the heat to medium. To the Dutch oven, add 1 additional tablespoon oil. Add the onion and cook until beginning to soften and turn golden, about 4 minutes.
  • Stir in the green bell pepper, red bell pepper, smoked paprika, oregano, rosemary, bay leaf, and garlic. Stir constantly for 30 seconds, just until the garlic is fragrant.
  • Add the sweet potato, crushed tomatoes, and chicken broth. Increase the heat and bring to a rapid simmer. Turn the heat down to low and simmer gently for 15 minutes, stirring periodically.
  • Add the olives, raisins, and reserved chicken thighs, along with any liquid that has accumulated on the plate. Partially cover the pot and let simmer 20 additional minutes, or until the chicken is cooked through and the vegetables are tender. Remove the chicken to a cutting board. Remove and discard the bay leaf. Once the chicken is cool enough to handle, dice or shred, then return to the pot. Stir in the sherry vinegar. Continue to simmer, uncovered, for another 5 minutes. Taste and adjust seasoning (I found my stew tastes a little sweet, so I like to add a pinch of salt). Sprinkle with parsley. Serve with rice or other grains or bread.

1 chicken breast (cubed)
1 teaspoon of garlic powder
1 tablespoon of dried oregano (divided)
1 teaspoon of salt

1 packet of sazon or 1 teaspoon of turmeric for color
1 teaspoon of ground cumin
1/4 cup of sofrito
4 ounces of tomato sauce
2 bay leaves
1 whole red pepper (chopped)
2 carrots (peeled and chopped)

8 cups of chicken broth (or water and chicken bullion)
1/4 cup of fresh chopped cilantro (optional)

This is a tortilla soup without tortillas! I have tried tortilla soup after tortilla soup and while they have all been good, none of them were exactly what I crave in a soup! So on a Monday night after baseball practice I pulled this recipe out of my head and to my surprise it's destined to be my favorite of all time. The Sofrito Sauce is a common Spanish rice ingredient and is found in the Spanish food aisle of most grocery stores. Goya is the brand I used. I also recommend using Tostitos Cantina Roasted Garlic Salsa! It's amazing! Serve this topped with fried tortilla strips, cilantro, avocado, sharp cheddar cheese, or any other sort of common tortilla soup topping!

1 cup water

1/4 teaspoon salt

1 tablespoon olive oil
1 medium onion, thinly sliced
1 red sweet pepper, cut into 1/4" thick strips
1 teaspoon bottled minced garlic
12 ounces red potatoes, cut into 1/2" thick wedges
1 cup chicken broth
1/2 teaspoon dried savory, crushed
1/4 teaspoon dried thyme, crushed
1 can (14.5 ounce size) diced tomatoes, undrained
1/3 cup small pimiento stuffed olives, cut up

Steps:

  • Season chicken with the salt and pepper. In a 4 qt. Dutch oven, cook chicken in hot olive oil over medium-high heat until lightly browned. Add onion and sweet pepper to Dutch oven; cook about 3 minutes or until crisp tender. Add garlic; cook for 30 seconds more. Add potatoes, broth, savory, and thyme. Bring to boiling; reduce heat. 1/4 cup broken vermicelli or thin spaghetti, 1 inch pieces
1/2 cup long-grain white rice
1 quart chicken stock
2 pieces boneless, skinless chicken breast, rinsed
1 small white or yellow onion, peeled and halved
2 tablespoons fresh flat-leaf parsley leaves, finely chopped
2 fresh bay leaves
1 tablespoon extra-virgin olive oil
5 ounces Spanish chorizo, chopped or crumbled, casing removed (recommended: Gaspar's or Trois Petit Cochons)
1 large Spanish yellow onion, chopped
2 carrots, peeled and chopped
Few ribs celery from the heart, chopped
1 red chile pepper, thinly sliced
4 cloves garlic, chopped or very thinly sliced
1/4 to 1/3 cup diced piquillo pepper or drained pimiento peppers
Salt and freshly ground black pepper
Pinch saffron threads (about 20)
1 1/2 teaspoons smoked sweet or sweet paprika
1 (15-ounce) can fire-roasted diced or crushed tomatoes or 1 (15-ounce) can diced tomatoes with green chilies

Steps:

  • Place the butter in a small pot over medium heat. Melt the butter and toast the pasta 2 to 3 minutes or until golden in color, add the rice and stir to coat. Add 1 cup stock to the pot and bring the mixture to a bubble, reduce the heat to low, cover the pot and cook 15 minutes. Stir in parsley; turn off the heat and cover. Let stand to cool. Fluff the rice with a fork then place in container and store in the refrigerator.
  • Meanwhile, place the rinsed trimmed chicken pieces in a shallow pan with the onion and bay leaves and cover with just enough water to come up to the top of the chicken, bring the mixture to a boil and reduce the heat to a simmer and gently poach to cook through, about 12 to 15 minutes. Place the chicken in a bowl and shred the meat with 2 forks. Reserve the stock.
  • While the chicken poaches start the soup by heating a Dutch oven over medium-high heat with a turn of the pan extra-virgin olive oil, add the chorizo and brown a couple of minutes. Add the onions, carrot, celery, chile, garlic, and piquillos to the pot and season with a little salt and some black pepper. Cook for 7 to 8 minutes to soften, then stir in the saffron threads and paprika to combine. Strain the chicken cooking liquids, about 2 cups, into the pot then add 3 cups stock-in-a-box, chicken, chorizo, and tomatoes. Bring the soup to a bubble, simmer a few minutes to combine flavors then cool completely, cover and place in the refrigerator for make-ahead meal.
  • To reheat and serve, place the soup over medium to medium-high heat covered, stirring occasionally until heated through. Add the rice to the soup and return the soup to a bubble. Serve in shallow bowls.
