1 small onion, chopped
2 tablespoons margarine
1 1/2 pound carrots, sliced 1/8" thick
1 cup lemon-lime carbonated beverage
salt
black pepper
1 tablespoon sugar

Steps:

  • Saute onion in butter in large pan. Add carrots and carbonated beverage. Season to taste with salt and pepper. Add sugar; cook over high heat until liquid is absorbed and carrots are slightly glazed, about 8 to 10 minutes.

I'm always looking for interesting ways to make carrots because they are one of the few veggies my toddler will eat. This is a different and delicious way to make a great carrot side dish.

2 tablespoons butter
1 tablespoon sugar
1 cup carbonated lemon-lime beverage

Steps:

  • Melt butter in saucepan over medium heat.
  • Add sugar, lemon-lime soda and carrots.
  • Cook on medium-high heat 8 to 10 minutes until carrots are slightly glazed.

1 cup distilled white vinegar
2 tablespoons white sugar
1 teaspoon salt
⅛ teaspoon ground black pepper
⅔ cup water
8 large carrots, diced

Steps:

  • In a medium saucepan, mix distilled white vinegar, white sugar, salt, pepper and water. Bring the mixture to a boil. Remove from heat and allow to cool slightly.
  • Place the carrots in sterile containers. Cover with the vinegar solution. Seal the containers, refrigerate and marinate carrots 12 hours or overnight before serving.
