- Saute onion in butter in large pan. Add carrots and carbonated beverage. Season to taste with salt and pepper. Add sugar; cook over high heat until liquid is absorbed and carrots are slightly glazed, about 8 to 10 minutes.
SPARKLING CARROTS
I'm always looking for interesting ways to make carrots because they are one of the few veggies my toddler will eat. This is a different and delicious way to make a great carrot side dish.

- Add sugar, lemon-lime soda and carrots.
- Cook on medium-high heat 8 to 10 minutes until carrots are slightly glazed.

- In a medium saucepan, mix distilled white vinegar, white sugar, salt, pepper and water. Bring the mixture to a boil. Remove from heat and allow to cool slightly.
- Place the carrots in sterile containers. Cover with the vinegar solution. Seal the containers, refrigerate and marinate carrots 12 hours or overnight before serving.
