SPEEDY WEEKNIGHT CHILI
Super-easy and great-tasting, this chili makes a big batch of great party fare. I use my food processor to chop up the veggies and cut down on prep time. It's also very tasty and lower in fat when made with ground turkey breast. -Cynthia Hudson, Greenville, South Carolina.

- In a large saucepan or Dutch oven, cook the beef, onions and green pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.

EASY WEEKNIGHT CHILI
Cocoa adds an extra level of flavor to this quick, hearty chili.

Steps:
- Heat the oil in the Rockrok® Dutch Oven over medium heat until shimmering, about 3-5 minutes.Add the onion to the Dutch Oven. Cook and stir, uncovered, until the onions are slightly softened, about 2-3 minutes.Add the ground beef and garlic. Cook over high heat for 8-10 minutes, breaking the beef into crumbles. When the beef is no longer pink, drain (if necessary). Stir in the remaining ingredients. Cover and bring to a boil over high heat. Reduce the heat to low and simmer for 15 minutes, stirring occasionally. Serve topped with sour cream, green onion, sour cream, shredded cheddar cheese, or jalapeño slices, if you like.

- In a microwave oven, cook beef, onion and garlic on high for 2 minutes in a covered 2-qt. microwave-safe dish; stir to crumble meat. Cover and cook for 2-minutes; drain. Add the next six ingredients; cover and cook on high for 3-1/2 minutes. Stir in the beans. Cover and cook 2-1/2 minutes more. Let stand 3-5 minutes. If desired, serve over macaroni and top with cheese and onions.

QUICK WEEKNIGHT CHILI
I often make this chili when I'm short on time. It uses mostly pantry ingredients so it's very convenient and fast. It can be simmered longer if you like, but I enjoy the fresher taste of the green peppers when it's served right away.

- Cook beef in oil until almost done.
- Chop onion and green pepper into 1/2" pieces and add to beef. Cook, stirring often 3-5 minutes depending on how soft you want the veggies.

EASY WEEKNIGHT CHILI
This is very tasty and very easy chili recipe. It was orginally a Weight Watchers recipe, but it is so good you wouldn't think of it as being healthy.

- Cook first 4 ingredients in Dutch oven over medium-high heat until beef is brown.
- Drain off fat.
- Return to pan and mix in next 7 ingredients.
- Bring to a boil and cover.
- Reduce heat and simmer for 20 minutes.
- Stir occasionally.
- Ladle in bowls and sprinkle with cheese.

- Place the beef in a skillet over medium heat, and cook until evenly brown. Drain grease.
- In a large pot, mix the beans, corn, tomato sauce, tomato paste, and water. Bring to a boil, and reduce heat to low. In a food processor, finely chop the jalapenos, habanero, onion, and garlic. Mix into the pot. Mix in the cooked beef. Stir in masa flour. Season with cayenne pepper, chili powder, salt, black pepper, and sugar. Cook 45 minutes to 1 hour, stirring occasionally.
