One 8- to 10-pound bone-in, smoked, fully-cooked ham, butt or shank portion
1/2 cup Dijon mustard
1/2 cup whole grain mustard
1/4 cup honey
1/2 cup panko breadcrumbs
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons chopped fresh thyme leaves
2 tablespoons extra-virgin olive oil

Steps:

  • Let the ham sit at room temperature 30 minutes. Preheat the oven to 325 degrees F. Trim off any skin from the ham if needed. Score the ham through the fat in a diagonal crosshatch pattern without cutting into the meat. Place the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch of water into the bottom of the pan. Roast the ham until it reaches an internal temperature of about 130 degrees F, about 2 1/2 hours or 15 minutes per pound.
  • Meanwhile, mix the mustards and honey together in a small bowl. Mix together the breadcrumbs, parsley, thyme and olive oil together in another bowl.
  • Remove the ham from the oven when it has reached 130 degrees F internally. Increase the oven temperature to 425 degrees F. Spoon or brush the mustard mixture all over the ham. Carefully pat the crumbs all over the ham. Add water as needed to the bottom of the pan. Return the ham to the oven and roast until the breadcrumbs are golden brown, about 25 minutes more.

Steps:

  • Preheat oven to 350°F.
  • Remove any thick skin from ham and all but about 3/4-inch layer of fat.
  • Mince and mash garlic with salt to a paste. Coarsely grind coriander and peppercorns in coffee/spice grinder and stir together with flour, butter, and garlic paste in a bowl.
  • Spread spice paste all over ham, then put ham, cut side down, in a greased large roasting pan. Bake in middle of oven until crust is golden and an instant-read thermometer inserted into center (do not touch bone) registers 150°F, about 1 1/4 hours.
  • Transfer ham to a platter and let stand 15 minutes before slicing.

1 tablespoon red wine vinegar
2 tablespoons Dijon mustard

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Trim excess fat off the ham and score in a diamond pattern with a sharp knife, making shallow cuts about 1 inch apart. Place in a roasting pan.

1 cup packed light or dark brown sugar

Steps:

  • Preheat oven to 325 degrees. Cut away any skin and trim the fat to a thickness of 1/4 to 1/2-inch. Place the ham, fat side up, in a shallow roasting pan lined with foil (since the sugar in the glaze can burn). As a rough guide, roast a fully cooked ham for about 10 minute per pound. A whole ham should cook in 2 1/2 to 3 hours, a half ham in 1 1/2 to 2 hours. Check the temperature after the minimum time with an instant-read meat thermometer. It should read 130 to 140 degrees. If not yet at the desired temperature, check it every 15 to 20 minutes. Serve the ham as is after a 20 to 30 minute rest or proceed to glaze it.
  • To glaze: when the ham is warmed through, raise oven temperature to 425 degrees. Remove the ham from the oven and score the surface of the fat to make a crisscross grid.
