100g golden caster sugar
juice ½ lemon
small pinch ground cinnamon , optional

Steps:

  • To make the compote, whizz two thirds of the blackberries with the sugar, lemon juice and cinnamon in a food processor until smooth, then sieve to remove the seeds. Fold the remaining fruit through the purée and set aside. Use within 2 days or freeze.

2 cinnamon sticks (2 inches)
12 whole cloves
1-1/2 cups orange juice
2/3 cup raisins
1/3 cup packed brown sugar
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 can (15-1/4 ounces) apricot halves
1 can (15-1/4 ounces) sliced pears, drained
1 can (15-1/4 ounces) sliced peaches, drained
1 can (15 ounces) pitted dark sweet cherries, drained

Steps:

  • Place cinnamon sticks and cloves on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag., In a large saucepan, combine the orange juice, raisins, brown sugar, salt and ginger. Add spice bag; bring to a boil. Reduce heat and simmer for 8 minutes. Add fruit; simmer for 3 minutes. Discard spice bag. Serve fruit warm or cold with a slotted spoon.

1 pinch salt

Steps:

  • Combine blackberries, sugar, lemon juice, and salt in a saucepan. Toss to coat and let sit for 5 minutes.
  • Bring berry mixture to a boil over medium-high heat. Reduce heat to medium and simmer until sauce has reduced and thickened slightly, 15 to 20 minutes. Cool slightly and serve warm, or refrigerate for later use. Mixture will thicken further as it cools.

2 firm-ripe apricots
1/4 cup water
1/4 cup sugar
1/4 teaspoon freshly grated lime zest
1 cup dry white wine
1 cup picked-over blackberries
Accompaniment if desired: Almond Macaroons

Steps:

  • Halve apricots lengthwise and pit. Cut each apricot half into 4 wedges and transfer to a heatproof bowl.
  • In a small saucepan bring water and sugar to a boil over moderate heat, stirring until sugar is dissolved. Stir in zest and wine and simmer 5 minutes. Pour syrup over apricots and stir in blackberries. Chill mixture 20 minutes. Serve compote with macaroons.

1/2 cup water
2 cups fresh blueberries
1 cup dried blueberries
2 peaches

Steps:

  • In a heavy-bottomed saucepan, combine the sugar and water and bring to a boil over medium-high heat. Add the fresh and dried blueberries and stir to combine. Turn the heat down to low and simmer for 20 minutes, stirring once or twice. remove from the heat and set aside.
  • Meanwhile, bring a small pot of water to a rolling boil and lower in the peaches. Cook for several minutes, just until the skins split. Remove and immediately plunge them into an ice-water bath. peel the peaches, remove the pits, and, working over a dish to retain the juices, cut the peaches into small chunks. Fold the peaches and juice into the blueberry mixture. Serve warm with pancakes. Tip: Add a little finely grated lemon zest to your pancake batter. Enjoy!

Spiced rice pudding with blackberry compote image

Cinnamon, cardamom and nutmeg flavour this healthier rice pudding served with a naturally sweetened, chunky berry sauce

200g brown rice
2 tsp cornflour
500g skimmed milk
405g can light condensed milk
1 long or 2 short cinnamon sticks
5 cardamom pods , crushed with a rolling pin
good grating nutmeg
1 vanilla pod , split and seeds scraped out
500g frozen blackberry
1 tbsp agave syrup

Steps:

  • Cook the rice following pack instructions - don't be tempted to cook it until al dente - it will not continue to cook in the milk later, so it needs to be nice and soft at this point.
  • Meanwhile, mix the cornflour to a paste with a little of the milk until smooth. Add this to a saucepan with the remaining milk, condensed milk, cinnamon, cardamom, nutmeg, vanilla and a good pinch of salt. Stir until smooth, then bring to a simmer. Turn down to very low heat and leave to gently infuse while the rice cooks.
  • When the rice is cooked, drain well, then add to the warm milk mixture. Turn up the heat and bubble until thick and creamy - this will take about 20-25 mins.
  • To make the blackberry compote, empty the blackberries into a saucepan, add the agave syrup and bring to a simmer. Boil for a few mins. Cool for a few mins before serving, or serve at room temperature with the rice pudding.

  • Blanch and peel peaches. Cut into 1/4-inch-thick wedges.
  • Simmer peaches, wine, and sugar in a 3-quart saucepan, stirring occasionally, 2 minutes, then remove from heat. Immediately transfer mixture to a bowl and add berries, tossing to combine. Cool compote completely.
  • Serve compote chilled or at room temperature.

1 tablespoon sugar
2 teaspoons fresh lemon juice
1/2 orange, rind of, grated
8 firm peaches, halved and pitted (2 1/2 lbs)
1 cup fresh blueberries

Steps:

  • Combine first 4 ingredients in 2 quart serving bowl and blend well.
  • Using a food processor (medium or thick slice disc): place peaches in food tube and slice, using light pressure.
  • Add to orange juice mixture.
  • Gently blend in blueberries, tossing lightly.
  • Cover and refrigerate at least 2 hours.
