16 ounces apple cider
2 cinnamon sticks
2 cloves
2 black peppercorns
1 star anise
8 ounces bourbon
Ground cinnamon, in a shaker, for sprinkling
4 apple slices

Steps:

Put the apple cider, cinnamon sticks, cloves, black peppercorns and star anise in a small saucepan and bring to a simmer. Immediately strain the mixture into 4 mugs, divided evenly. Top with the bourbon.
Sprinkle a small amount of cinnamon on top of each and garnish with an apple slice.

3 pink lady apples, quartered, plus 1, thinly sliced, for garnish
3 granny smith apples, quartered
3 honeycrisp apples, quartered
3 gala apples, quartered
4 whole cinnamon sticks, toasted, plus more for garnish
1 tablespoon whole clove
3 whole allspice berries
2 whole nutmegs, halved
1 fresh ginger, peeled, 2 in (5 cm)
1 orange, peeled
10 cups water, as needed
1 cup dark brown sugar
bourbon, or whiskey, for serving
6 slices orange slice, for garnish

Steps:

Add the quartered Pink Lady, Granny Smith, Honeycrisp, and Gala apples, cinnamon, cloves, allspice, nutmeg, ginger, and orange peel to the Instant Pot. Pour in enough water to cover the apples. Sauté on high until simmering, 15-20 minutes. Cover with the lid and pressure cook on high for 6 hours. Once done, let the pressure release naturally before opening the lid.
Strain the solids and pour the cider back into the pot. Add the sugar and sauté on high for another 5-10 minutes, until the sugar has dissolved.
Ladle the hot cider into mugs or glasses. If desired, stir in a shot of bourbon or whiskey. Garnish with the orange and apple slices. Alternatively, to serve cold, transfer the cider to a covered pitcher or container and refrigerate until chilled. The cider will keep in the refrigerator for up to 5 days, or in the freezer for up to 3 months.
