Spicy lamb stew, lamb shoulder slow cooked in white wine with onions, garlic, bell peppers, pasilla chiles, paprika, cumin, tomatoes, raisins, and herbs.

Number Of Ingredients 17

2-3 lbs of lamb shoulder stew meat, cut into 1½-inch cubes
Extra virgin olive oil
2 yellow onions, chopped
4 cloves garlic, minced
2 red bell peppers, chopped
2 dry pasilla chiles, chopped, stems and most seeds removed
1 Tbsp hot Hungarian paprika*
1½ teaspoon ground cumin
Pinch of ground cardamon
1½ cups chicken stock (use gluten-free stock for gluten-free version)
14 oz of canned whole tomatoes, put through a food mill, or puréed
8-10 sprigs fresh flat leaf parsley
4-5 sprigs of thyme
1 bay leaf
2/3 cup raisins
Salt and pepper
* Hot Hungarian paprika is not the regular Hungarian paprika which is sweet and mild. It is even hotter than cayenne. If you don't have access to hot paprika, I would substitute 1/2 with sweet paprika and 1/2 with chili powder.

Steps:

  • Sear the lamb on all sides: Pat the lamb dry with a paper towel. Drying the lamb this way first will help the lamb pieces brown. Heat 2 tablespoons of olive oil in a large, heavy, high-sided pot, such as a Dutch oven, over medium high heat. When the pot is hot, add the lamb pieces in batches, being careful not to crowd them. Cook, turning as needed so that the lamb pieces brown evenly on all sides, for 6-8 minutes. Transfer to a bowl.
  • Sauté onions, peppers, chiles, garlic: Return the pot to medium-high heat. Add the onions, dried peppers and red bell peppers and stir to coat with the oil in the pot. Cook, stirring occasionally, for 5 minutes. Add the garlic and cook 1 more minute.
  • Make a bouquet garni with parsley, thyme, bay leaf: Make a bouquet garni by placing the parsley, thyme and bay leaf in the center of a doubled over cheesecloth square. Gather the ends and secure with kitchen string.
  • Add spices, tomatoes, lamb, stock, raisins, herbs, simmer and cook: Stir in the paprika, cumin, and cardamom and cook for a minute. Add the puréed (or cooked tomatoes put through a food mill) tomatoes, lamb, chicken stock, raisins and bouquet garni. Bring to a boil over high heat, decrease heat to low. Cook, partially covered, for about 3 hours, or until lamb is tender. Season to taste with salt and pepper. Serve over couscous or rice (gluten-free option). 1 1/2 to 2 pounds boneless lamb shoulder (or stewing lamb)
1/2 teaspoon kosher salt (or to taste)
1/4 teaspoon ground black pepper
1/4 cup all-purpose flour
1 tablespoon olive oil
1 medium onion (chopped)
2 cloves garlic (minced)
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
dash coarsely ground black pepper
1 medium carrot (peeled, diced)
1 (14.5-ounce) can tomatoes (with juice, diced)
1 cup chicken stock
Juice of 1/2 lemon

Steps:

  • Trim any visible fat from the lamb and cut it into bite-size pieces. Sprinkle with salt and pepper and then toss with the flour.
  • Heat 1 tablespoon of olive oil-or vegetable oil-in a Dutch oven or large saucepan over medium heat. Add the floured lamb pieces and the chopped onion. Cook the lamb until browned on all sides, stirring frequently.
  • Add the onion and cook, stirring, for about 5 minutes longer, or until the onion is translucent.
  • Add the garlic and cook, stirring, for 1 minute longer.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat, cover, and simmer for about 1 hour, until lamb is tender.
  • Serve over hot cooked rice, grits or polenta, or couscous, or serve with hot buttered noodles or potatoes.

2 pounds lamb stew meat, cut into 3/4-inch cubes
3 tablespoons butter
1-1/2 cups chopped sweet onion
3/4 cup dried apricots
1/2 cup orange juice
1/2 cup chicken broth
2 teaspoons paprika
2 teaspoons ground allspice
2 teaspoons ground cinnamon
1-1/2 teaspoons salt
1 teaspoon ground cardamom
Hot cooked couscous
Chopped dried apricots, optional

Steps:

  • In a large skillet, brown lamb in butter in batches. With a slotted spoon, transfer to a 3-qt. slow cooker. In the same skillet, saute onion in drippings until tender. Stir in the apricots, orange juice, broth and seasonings; pour over lamb., Cover and cook on high for 5-6 hours or until meat is tender. Serve with couscous. Sprinkle with chopped apricots if desired.

4 lbs lamb or goat shank, cut into 2-3 inch chunks
2 tablespoons curry powder
1 tablespoon cinnamon
1 tablespoon chili powder
1 1/2 teaspoons ground allspice
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground ginger
2 teaspoons salt
3 tablespoons oil
2 onions, thinly sliced
5 cloves garlic, minced
1 can tomato paste
3 cups beef stock
2 cups chicken stock
3 medium potatoes, cut into chunks
5 medium carrots, cut into chunks
steamed rice, to serve
a handful of chopped cilantro (optional)

Steps:

  • Put the meat in a large bowl, and toss with all the spices and salt. Cover and refrigerate overnight. After the meat has had a chance to marinate, preheat the oven to 325 degrees F. Heat the oil in a large Dutch oven and sear the meat in batches until browned. Remove the meat from the pot and set aside on a plate. Add the onions, garlic, and tomato paste and fry until the onions are softened. Add the meat back to the pot, along with the beef stock and chicken stock. Bring to a simmer. Cover and transfer to the oven for 2 hours. Remove the pot from the oven and stir in the carrots and potatoes. Transfer back to the oven and cook uncovered for another 45 minutes, until the potatoes and carrots are tender. Serve over steamed rice and garnish with cilantro.

1 tbsp oil
12 shop-bought lamb meatballs
1 onion , sliced
2 large garlic cloves , crushed
2 tsp ground cumin
1 tsp ground coriander
½ tsp ground cinnamon
1 tbsp rose harrisa
400g can chopped tomatoes
200ml low-salt stock (lamb or beef)
2 x 400g can chickpeas
small bunch of parsley , finely chopped
½ small bunch of mint , chopped
50g pomegranate seeds

Steps:

  • Heat the oil in a large, shallow casserole dish or deep frying pan. Add the meatballs and fry for 3-4 mins, turning regularly, until golden. Remove and set aside.
  • Tip the onion into the pan and fry for 7 mins until softened. Stir through the garlic cumin, coriander and cinnamon, and cook for 1 min. Add the harissa, tomatoes and lamb stock, and bring to a simmer. Stir though the chickpeas and meatballs, season and simmer for 10-15 mins until slightly reduced and the meatballs are cooked through.
  • Stir through half the herbs, then scatter the rest on top along with the pomegranate seeds.

3 tablespoons olive oil
2 lbs lamb boneless lamb leg, cut into 1-inch cubes and seasoned with salt and pepper
1 small onion, finely chopped
2 medium celery stalks, finely chopped
3 medium garlic cloves, crushed
1/2 cup of dry marsala
1/2 teaspoon chili flakes
1/2 teaspoon red chili pepper
1 tablespoon crushed juniper berries
3 tablespoons tomato paste
1 cup chicken stock
1 teaspoon rosemary
4 small potatoes, sliced into cubes
2 tablespoons parsley (optional)

Steps:

  • Heat olive oil in a large pot. Add the lamb cubes in batches, so you don't overcrowd the base of the pot. Brown the lamb lightly over high medium-high heat. Remove each batch from the pot as it browns. Once the lamb has been browned and is removed from the pot, add the chopped onion, celery and garlic, then reduce the heat and cook for 4 to 5 minutes. Return lamb to pot. Pour in the Marsala wine and cook over medium-high heat until it is dark and brown and reduced by half. Add the chili flakes, red chili pepper and juniper berries and cook, stirring, for just 15 to 20 seconds. Add the tomato paste, chicken stock, and 1 cup of water (just enough to cover). Stir for 20 to 25 seconds. Add potatoes and rosemary. Cook for 10 minutes on medium heat, then reduce to low and simmer for 35-40 minutes until sauce thickens and potatoes are well-done. Finally, add parsley on top as a garnish.
