CARIBBEAN JERK SLIDERS

Caribbean Jerk Sliders image

Provided by Eddie Jackson

Categories     appetizer

Time 40m

Yield 8 sliders

Number Of Ingredients 17

1 pound ground beef chuck
1 1/2 teaspoons ground allspice
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons red pepper flakes
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons dried oregano
1 1/2 teaspoons packed light brown sugar
1 1/2 teaspoons dried thyme
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Cooking spray
8 standard slices mild cheddar cheese
8 brioche slider buns
3 tablespoons unsalted butter, melted
Jerk Ketchup
Red Ale Onion Rings

Steps:

  • Preheat a grill pan over medium-high heat. In a large bowl, combine the beef, allspice, cayenne, red pepper flakes, garlic powder, onion powder, oregano, brown sugar, thyme, salt and black pepper and gently mix just until combined.
  • Form the meat into eight 2-ounce patties, then press the center of each with your thumb to create an indent. Coat the grill pan with cooking spray.
  • Grill the sliders until the internal temperature reads 150˚, 2 to 3 minutes per side. Place a slice of cheese on each patty once you flip them. The cheese will melt over the sides of the patties. Remove the patties to a plate and cover loosely with foil to rest.
  • While the patties rest, brush the buns with the melted butter and grill until lightly toasted, about 2 minutes.
  • Assemble the sliders by putting a tablespoon-size dollop of the ketchup on the top and bottom buns, topping the bottom bun with the patty and finishing with an onion ring on top of each. Serve with the remaining onion rings and ketchup on the side.

Categories     side-dish

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 9

1 cup ketchup
1 tablespoon stone-ground mustard
1 tablespoon Sriracha
Vegetable or peanut oil, for fryer
3 large yellow onions, sliced 1/8-inch thick, in a bowl of ice water
1 cup all-purpose flour
1 tablespoon salt
1 teaspoon ground pepper
1 gallon ice water

Steps:

  • For the spiced ketchup: In a bowl, whisk together the ketchup, mustard and Sriracha, stirring well. Then refrigerate until serving.
  • For the onion rings: Preheat a deep-fryer to 375 degrees F with vegetable or peanut oil, waiting until heated. Next, drain the ice water from the cut onions, ensuring the water has drained. Next, in a bowl, blend the flour, salt and pepper, mixing well. Then add one-third of the onions. Mix the onions well, tap off excess flour and then add to the fryer, cooking until crisp, about 2 minutes. After removing, allow to drain excess oil on paper towels. Repeat with the remaining onions. Serve with the spiced ketchup.

Date Ketchup:
1 tablespoon olive oil
1/2 small red onion, finely chopped
1 cup ketchup
1 cup Medjool dates, pitted, chopped
1/2 cup pale lager
2 tablespoons apple cider vinegar
Kosher salt, freshly ground pepper
Sliders and Assembly:
1/2 small red onion, finely chopped
2 garlic cloves, finely chopped
1 pound ground lamb
8 ounces ground beef
1/4 cup finely chopped fresh flat-leaf parsley
1 tablespoon baharat (spice blend)
Kosher salt, freshly ground pepper
1 tablespoon vegetable oil
12 slider buns, split, toasted
Bibb lettuce, caramelized onions, and sliced feta (for serving)
Ingredient info:
Baharat is available at Middle Eastern markets and online.

Steps:

  • Date Ketchup:
  • Heat oil in a small saucepan over medium heat. Cook onion, stirring occasionally, until beginning to brown, 5-8 minutes. Add ketchup, dates, and beer; bring to a boil, reduce heat, and simmer, stirring occasionally and adding water as needed to prevent burning, until thick and slightly darkened, 20-25 minutes.
  • Remove pan from heat and stir in vinegar. Let mixture cool slightly. Purée in a blender, thinning with water if needed, until smooth; season with salt and pepper. Let cool.
  • DO AHEAD: Date ketchup can be made 5 days ahead. Cover and chill.
  • Sliders and assembly:
  • Using your hands, gently mix onion, garlic, lamb, beef, parsley, and baharat in a large bowl; season with salt and pepper. Form scant 1/4-cupfuls of lamb mixture into twelve 2"-diameter patties.
  • Heat oil in a large skillet over mediumhigh heat. Place patties in skillet and immediately reduce heat to medium. Cook about 3 minutes per side for medium-rare. Serve patties on buns with date ketchup, lettuce, caramelized onions, and feta.
