Steps:
- For all recipes, preheat two baking sheets at 450 degrees F on the top and bottom oven racks. Add spices to a 32-ounce bag of frozen fries and spread on the hot baking sheets. Bake as directed, switching the pans halfway through.
- Moroccan Fries: Toss the fries with 2 tablespoons olive oil, 2 teaspoons ground cumin, 1 teaspoon ground coriander, 1/2 teaspoon ground ginger and 1/4 teaspoon each ground cinnamon and cayenne; bake. Sprinkle with chopped cilantro.
- Cumin Ketchup: Toast 1 tablespoon ground cumin in a small dry skillet. Let cool, then mix with 1/2 cup ketchup, 3 tablespoons apricot preserves and a dash of hot sauce.
- Caraway-Dill Fries: Toss the fries with 2 tablespoons olive oil, 2 teaspoons each dried dill and ground caraway and 1/2 teaspoon mustard powder; bake.
- Pickled Mayo: Combine 1/2 cup mayonnaise, 1/4 cup chopped dill pickle and 2 tablespoons deli mustard.
- Celery Salt Fries: Toss the fries with 2 tablespoons olive oil, 1 tablespoon smoked paprika and 1 teaspoon celery salt; bake.
- Bloody Mary Ketchup: Combine 1/2 cup ketchup, 2 tablespoons horseradish, the juice of 1/2 lemon, 2 teaspoons Worcestershire sauce anda dash of hot sauce.
- Jerk-Spiced Fries: Toss the fries with 2 tablespoons olive oil and 2 tablespoons jerk seasoning; bake. Sprinkle with thinly sliced scallions.
- Chutney Mayo: Combine 1/2 cup mayonnaise, 1/4 cup mango chutney, the zest and juice of 1 lime and a dash of hot sauce.
- Chipotle Fries: Toss the fries with 2 tablespoons olive oil, 1 tablespoon smoked paprika and 1 teaspoon chipotle chile powder; bake.
- Smoky Barbecue Sauce: Combine 1/2 cup barbecue sauce, 1 to 2 tablespoons adobo sauce (from a can of chipotles) and 2 tablespoons pure maple syrup.
- Garlic-Parmesan Fries: Toss the fries with 2 tablespoons olive oil and 1 teaspoon granulated garlic; bake, sprinkling with 1/2 cup grated parmesan during the last 5 minutes. Sprinkle with chopped parsley.
- Herb-Anchovy Mayo: Pulse 1/2 cup mayonnaise, 1/4 cup each basil and parsley, 2 teaspoons dijon mustard, 2 anchovy fillets and 1 small crushed garlic clove in a food processor until smooth.

- Heat the oven to 425 degrees. Cut the skins off the sweet potatoes, squaring off the round sides to make each potato into a large rectangle. Cut into long fries about 1/4-inch thick and 1 inch wide. (If not using potatoes immediately, soak in water for up to 1 day. Drain and pat dry before cooking.)
- Put two large sheet pans in the oven to heat. Toss the potatoes, and skins if you like, with oil, paprika and 2 teaspoons of the salt. Arrange in one layer on the hot pans. (Don't use parchment paper; it will make the potatoes soggy.) Roast until tender and starting to brown on the bottom, about 15 minutes.
- Meanwhile, grind the cumin, coriander and 1 teaspoon salt together. Mix in the brown sugar.
- Remove pans from the oven and raise the heat to 450 degrees, or set to broil. With a spatula, carefully loosen the fries and turn each one over. Sprinkle with the spice and sugar mixture. Return to the oven and bake just until the fries are blistered and sizzling vigorously, about another 5 minutes. (If your oven has a convection feature, use it.) Do not overcook, or the fries will become leathery. Cool slightly.

- Blanch asparagus in boiling water about 2 minutes.
- Immediately drain and put asparagus in ice water to stop cooking.
- This will help keep a slight crunch to the asparagus and keep it bright.
- Dry asparagus thoroughly with paper towels.
- Use a little of the reduced fat mayonnaise to coat each asparagus spear, then roll in panko breadcrumbs.
- You can refrigerate at this point if needed.
- Mix mayonnaise and chipotle together with a whisk or in blender.
- Use 1-2 depending on how spicy you like it.
- Heat about 1 inch of oil heat to 370 F in a frying pan, put in asparagus but don't crowd.
- Turn to brown on all sides.
- Drop some dip into the bottom of a champagne flute, add 3-5 asparagus and serve.

SARASOTA'S SMOKY SPICY WHITE CHEDDAR CHEESE FRIES
I never really cared for chili cheese fries, not sure why. But cheese fries I loved. I used to make this for my son and he absolutely loves them. I guess it is more fries with a cheese dip. But I often pour the sauce right over the fries. A combination of smoky bacon, white cheddar and chipotles make this a great cheese sauce. If ambitious, make your own fries - personally, I buy a good "frozen" brand, thin cut without seasoning, and then I add my own seasoning. I try to make this easy. There is nothing better that a grilled bratwurst (for me) or just a good hot dog with chili. I prefer my chili on the dog rather than my fries ... and a side of these cheese fries. The seasoning is simple and just tossed with the fries before baking and then the cheese sauce is very basic. Smoky and spicy.

- Bacon -- For the bacon, I do mine right in the microwave. On a paper plate lined with 2 paper towels, then the bacon and top with 2 more paper towels - 4 minutes (approximately) and it is done and crispy. Let it cool and then chop up. Now, you can saute, oven bake or use any method you want. You just want the bacon crispy and diced.
- Fries -- In a large bowl, add the fries (slightly thawed; just enough so the spice and oil will stick to the fries), and add the olive oil and toss well. Add to a pan lined with parchment paper or foil (for easy clean up) and sprinkle with the seasoning. Toss lightly. Cook according to package directions until crispy brown.
- Cheese Sauce -- As the fries cook, in a small pot, melt the butter and shallot on medium low and cook for just a minute. Then stir in the flour to make a roux and cook just a minute to reduce the flour taste. Slowly whisk in the milk and bring to medium heat to thicken the sauce and then add in the cheese, chipotle, chopped cooked bacon, salt and pepper to taste.
- Serve -- A few ways to serve this. First, you can put the fries in a small casserole dish, pour the cheese sauce over, and broil for just a few minutes until golden brown. Second, you can just pour the sauce over the crispy fries and serve as it, or last; Third, you can serve the cheese sauce as a dip. Either way they are good. Cheesy, Smoky, Spicy. ENJOY!
