SPICY AND RICH CHEESY POTATOES WITH REAL POTATOES
Easy and delicious cheesy potatoes with real potatoes in a short-cut cheese sauce are baked until bubbly and golden. It is definite that they will become your favorite side dish and will elevate any meal into a treat.

Steps:
- Preheat oven to 190°C (375°F) and lubricate a 9x13 inch baking dish.
- Rinse potatoes. Place potatoes in a saucepan and boil for about 12-14 minutes or until fork-tender. Then, drain them and allow them to cool.
- Melt butter; add onion, chicken soup, 1 ½ cups cheese, and sour cream. Put in the potatoes and mix.
- Take a baking dish and spread potatoes in it.
- Top with cheese and bake for 28-30 minutes until golden browned.
- Serve cheesy potatoes.

- Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.

- Heat oven to 220C/200C fan/gas 7. Boil the potatoes for 5 mins. Drain well, place back in the pan, cover with a lid and shake vigorously to lightly roughen up the edges.
- Meanwhile, grind the spices using a pestle and mortar until lightly crushed, then mix with the oil. Put the spice mix in a roasting tin and place in the oven to heat up. Carefully put the potatoes into the roasting tin, tossing them in the hot oil and spice mixture. Roast in the oven for 40-45 mins or until crisp and golden, turning once or twice during cooking.

- Preheat oven to 350 degrees F (175 degrees C).
- Place potatoes, garlic, and salt into a large pot, fill with enough water to cover, and bring to a boil. Reduce heat to medium, and simmer the potatoes until tender but not mushy, 8 to 10 minutes. With a slotted spoon, transfer about half the potatoes to a 9x13-inch baking dish.
- Pour half of the cream over the potatoes, season with black pepper and nutmeg, and sprinkle half of the Gruyere cheese onto the mixture. Top with the remaining potatoes; sprinkle again with black pepper and nutmeg. Pour on the remaining cream, and sprinkle with remaining Gruyere cheese.
- Bake in the preheated oven until the cheese topping is crisp and brown on top, about 1 hour.

- Scrub about 3 pounds of potatoes. I always use Russet, but others should do. A medum large Russet is about 8 oz. Poke each potato a few times with a fork. This will help them not "explode" in the pot. They may still split some but not as bad.
- Add potatoes to the boiling water. Turn the heat down to low, so you don't boil all the water off and cover. Cook until fork-tender. That is when you can stick them with a large fork, and it will go all the way through—about 40 minutes. Time may vary some due to the potatoes.
