1/2 cup apple cider or juice
1/4 teaspoon minced fresh gingerroot
2 whole allspice
2 whole cloves
1 black tea bag
1/2 cup boiling water
1 tablespoon brown sugar

Steps:

  • In a small bowl, combine the first five ingredients. Add boiling water. Cover and steep for 5 minutes. Strain, discarding tea bag and spices. Stir in sugar. Serve immediately.

6 cups water
6 sweet apple tea bags (recommended: Celestial Seasonings Sweet Apple Chamomile)
1 1/3 cups Vanilla Simple Syrup, recipe follows
1 small apple, thinly sliced
1/2 lemon, thinly sliced
Ice
1 cup granulated sugar
1 cup water
1 vanilla bean, cut in 1/2 lengthwise and seeds removed

Steps:

  • In a medium saucepan, bring the water to a boil over high heat. Remove the pan from the heat and stir in the tea bags. Allow the liquid to cool to room temperature, about 1 hour. Remove the tea bags and discard. Add the Vanilla Simple Syrup and stir. Pour the mixture into a glass pitcher. Add the apple and lemon slices and refrigerate for 1 hour.
  • Pour the tea into ice-filled glasses and serve.
  • In a small saucepan over medium heat, combine the sugar, water, vanilla bean, and vanilla bean seeds. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Strain before using.
  • Yield: 1 1/3cups

5 tea bags

Steps:

  • In a small saucepan, combine the apple juice, cloves and cinnamon stick. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes., Meanwhile, in a large saucepan, bring water to a boil. Remove from the heat; add tea bags. Cover and steep for 5 minutes. Discard tea bags. Strain juice mixture, discarding cloves and cinnamon. Stir into tea. Serve warm, with additional cinnamon sticks if desired.

½ cup shortening
1 cup brown sugar
¼ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup milk
2 cups apple - peeled, cored, and chopped
¼ cup shortening
2 cups sifted confectioners' sugar
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
¼ cup evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. Sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
  • In a large bowl, cream together the shortening, brown sugar and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the chopped apples.
  • Spread batter evenly in prepared pan. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • To make the frosting: In a medium bowl, combine 1/4 cup shortening, confectioners' sugar, cinnamon and nutmeg. Beat until light and creamy. Beat in the milk, one tablespoon at a time, until desired spreading consistency is achieved. Spread over top of cooled cake.

  • In a teapot or small heatproof bowl, pour boiling water over tea bags; cover and let stand 5 minutes.
  • Remove tea bags.
  • In a medium saucepan, combine cider, honey, allspice, cloves and cinnamon sticks. Cover and simmer for 15-20 minutes.

This is great for the cold weather, and just the perfect remedy for red noses and itchy throats... and it tastes wonderful as well! 1 pinch cinnamon
1 pinch nutmeg
1 tea bag (use your favourite variety)

Steps:

  • Pour apple juice into a microwave-safe mug, add spices, and nuke at full power for 1 1/2 minutes or until it is hot, yet drinkable.
  • Remove from the microwave and steep the tea bag for as long as you like; I like a mild tea flavour so I just swish it around for about 15 seconds.
  • Remove tea bag and drink immediately!

175g butter , plus extra for greasing
175g light muscovado sugar , plus 1 tsp
3 large eggs , beaten
1 eating apple
1 tsp vanilla extract
200g dried mixed vine fruits
85g ground almonds
1 tsp baking powder
175g plain flour
1 tsp cinnamon
½ tsp ground nutmeg
splash lemon or orange juice
1 tbsp marmalade or apricot jam

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter a 900g/2lb loaf tin and line with a strip of baking paper, or use a loaf tin liner (see tip, below). Beat together the butter and sugar until pale and creamy, then beat in the eggs one by one. Grate half the apple and mix it into the batter with the vanilla, dried fruit and ground almonds. Mix the baking powder, flour and spices together with a pinch of salt, then fold into the mix until even. Spoon into the tin and level the top.
  • Thinly slice the remaining apple half, toss with the lemon or orange juice, poke the slices a little way into the batter, then sprinkle with 1 tsp more sugar. Bake for 45 mins, then turn the oven down to 140C/fan 120C/gas 1. Cover the cake with foil, then bake for another 45 mins until a skewer inserted into the middle comes out clean. Cool in the tin.
  • To finish the cake, melt the marmalade or jam in a small pan, sieve to remove any lumps, then brush it over the cake to glaze the top. Serve cut into thick slices, and spread with a little butter, if you like. Will freeze for up to 1 month.

10-inch (12-cup capacity) bundt-style pan
baking sheet for toasting walnuts
sharp, heavy knife for chopping walnuts
mesh sieve
fork
hand-held electric mixer
cake tester
wire rack
mixing spoon
For preparing the pan:
2 tablespoons unsalted butter, softened
2 tablespoons all-purpose flour
For the cake:
3 1/3 cups cake flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1 1/4 teaspoons ground allspice
1 1/4 teaspoons ground nutmeg
1 teaspoon ground ginger
1/2 teaspoon salt
3 extra-large eggs, at room temperature
1 2/3 cups packed dark brown sugar
1 cup vegetable oil
1 tablespoon pure vanilla extract
2 cups unsweetened applesauce
1 1/2 cup walnuts, toasted and coarsely chopped

Steps:

  • Baking time: 55 minutes
  • 1. Preheat the oven to 350°. with a rack in the center of the oven. Coat the sides and center tube of the pan with the butter. Toss in the flour and shake the pan to coat the tube surface and sides. Knock out the excess flour. Set aside.
  • 2. Place a mesh sieve over a medium mixing bowl and add the cake flour, baking powder, baking soda, cinnamon, allspice, nutmeg, ginger, and salt. Shake the contents into the bowl and set aside.
  • 3. Break the eggs into a large mixing bowl. Stir them briefly with a fork to break them up slightly, then add the dark brown sugar. With the mixer on high speed, beat the eggs with the sugar until the mixture is very thick, about 6 minutes. Move the beaters around the bowl and scrape down the sides of the bowl with a rubber spatula several times while mixing. Reduce the mixer speed to medium and beat in the oil and vanilla. Beat until the mixture is smooth, about 2 minutes. Reduce the mixer speed to low and beat in the flour mixture alternately with the applesauce, beginning and ending with the flour mixture. Fold in the walnuts with a rubber spatula. Scrape the batter into the prepared pan and smooth the top with a rubber spatula.
  • 4. Bake for 55 minutes, or until a cake tester inserted into the center of the cake comes out clean. Transfer the pan to a wire rack to cool for 10 minutes, then invert the cake onto the rack. Remove the pan and let the cake cool completely.
  • 5. The baked cake can be stored at room temperature, wrapped in plastic wrap, for up to 2 days, or refrigerated for up to 1 week. It may also be frozen for up to 3 months. Wrap the cooled cake securely in plastic wrap, then place it in a freezer-strength recloseable jumbo-size plastic bag. Label the bag with a waterproof marker and freeze. Defrost the cake, in its wrapping, overnight in the refrigerator or at room temperature for 3 to 4 hours.

This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.
