BARBECUE SAUCE

Barbecue Sauce image

The BEST barbecue sauce from scratch. An easy tangy and sweet homemade barbecue sauce recipe without ketchup. Ready in 15 minutes!

Provided by Erin Clarke / Well Plated

Categories     condiment

Time 15m

Number Of Ingredients 12

15 ounces tomato sauce ((1 standard can))
6 ounces tomato paste ((1 standard can))
1/3 cup apple cider vinegar
1/4 cup pure maple syrup
1/4 cup molasses
2 tablespoons Worcestershire sauce
2 teaspoons smoked paprika
1 teaspoon dry mustard powder
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/8-1/4 teaspoon cayenne pepper ((optional but encouraged))

Steps:

  • In a medium saucepan, stir together all of the ingredients: tomato sauce, tomato paste, apple cider vinegar, maple syrup, molasses, Worcestershire, smoked paprika, dry mustard, garlic, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat.
  • Cover with a lid slightly ajar so that the pot is mostly covered to deter splattering, but steam can still escape and the sauce can reduce. Let cook, stirring occasionally, until the sauce thickens, about 10 to 15 minutes.
  • Taste and adjust seasonings as desired. Enjoy immediately or let cool and store for later use.

BOBBY FLAY'S BARBECUE SAUCE

Bobby Flay's Barbecue Sauce image

I created this barbecue sauce to top the Wyoming burger, but it's also an ideal dipping sauce for French fries. After you've made this quick and easy sauce once, you'll want to slather it on grilled chicken, steak, pork chops...you might never go back to the bottled stuff.

Provided by Bobby Flay

Categories     Condiments

Time 1h

Number Of Ingredients 15

2 tablespoons mild vegetable oil
1 smallish onion (coarsely chopped (preferably a Spanish or other sweet onion))
3 small cloves garlic (coarsely chopped)
1 cup ketchup
1/3 cup cold water
1 heaping tablespoon Dijon mustard
1 tablespoon red wine vinegar ((or substitute sherry vinegar))
1 tablespoon Worcestershire sauce
1 canned chipotle in adobo (chopped (note that this is 1 chipotle pepper from a can of peppers, not 1 can of chipotle peppers))
2 tablespoons ancho chile powder
1 tablespoon sweet Spanish paprika (pimentón)
2 tablespoons packed dark brown sugar
1 tablespoon honey
1 tablespoon molasses
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oil in a saucepan over medium-high heat until warm and shimmering. Add the onion and cook until softened, 3 to 4 minutes. Add the garlic and cook for 1 minute. Add the ketchup and water and bring to a boil, stirring frequently. Reduce the heat to medium-low and simmer for 5 minutes.
  • Add the mustard, vinegar, Worcestershire sauce, chipotle chile, ancho chile powder, paprika, brown sugar, honey, and molasses to the pan and bring to a simmer. Cook, stirring occasionally, until thickened, about 10 minutes. Let cool for at least 10 minutes.
  • Scrape the barbecue sauce into a food processor or blender and purée until either smooth or the desired consistency. The sauce will be quite, quite thick. Let cool to room temperature. Taste and season with salt and pepper accordingly. You can start dousing and dolloping right away, although if you wait overnight you'll be rewarded with a more complex taste with even more depth. (You can cover and refrigerate the sauce for up to 1 week. Bring to room temperature before using.)

BARBEQUE SAUCE FROM FRESH TOMATOES RECIPE - (4/5)

Barbeque Sauce from Fresh Tomatoes Recipe - (4/5) image

Provided by á-48098

Number Of Ingredients 14

4 quarts (16 cups) peeled, cored, chopped red ripe tomatoes (about 24 large tomatoes)
2 cups chopped celery
2 cups chopped onions
1 1/2 cups chopped sweet red or green peppers (about 3 medium peppers)
2 hot red peppers, cored, and chopped
1 teaspoon black peppercorns
2 cloves garlic, crushed
1 cup brown sugar
1 tablespoon dry mustard
1 tablespoon paprika
1 tablespoon canning salt
1 teaspoon hot pepper sauce (e.g., Tabasco®)
1/8 teaspoon cayenne pepper
1 1/2 cups of (5%) vinegar

Steps:

  • *Caution: Wear plastic or rubber gloves and do not touch your face while handling or cutting hot peppers. If you do not wear gloves, wash hands thoroughly with soap and water before touching your face or eyes. 1. Wash and rinse canning jars; keep hot until ready to use. Prepare lids according to manufacturer's directions. 2. Combine prepared tomatoes, celery, onions, and peppers. Cook until vegetables are soft (about 30 minutes). Puree using a fine sieve, food mill, food processor or blender. Cook until mixture is reduced to about one half, (about 45 minutes). 3. Tie peppercorns in a cheesecloth bag; add with remaining ingredients and cook slowly until mixture is the consistency of catsup, about 1½ to 2 hours. As mixture thickens, stir frequently to prevent sticking. Remove bag of peppercorns. 4. Fill hot sauce into clean, hot jars, leaving ½ inch headspace. Remove air bubbles and adjust headspace if needed. Wipe rims of jars with a dampened clean paper towel; apply two-piece metal canning lids. 5. Process in a boiling water canner 20 minutes for half pint or pint jars. Let cool, undisturbed, 12 to 24 hours and check for seals.

  • Apple Barbecue Sauce. Ketchup, apples and a whole lot of flavor makes this one of my most popular barbecue sauces. The secret is to let these flavors cook down slowly to intensify the sauce.
  • Mango Barbecue Sauce. The tomato element of this sauce comes from diced, fresh tomatoes. Then it gets sweetened with mango. The depth comes from poblano chilies and it all gets cooked together with herbs and onion.
  • Peach Barbecue Sauce. Canned peaches and maple syrup give this barbecue sauce a rich sweetness that is perfect on pork and chicken, or practically anything.

  • In a medium saucepan, heat the olive oil over medium heat. Add the onion and cook, stirring until onion is softened and translucent (don't brown the onion). Stir in the garlic and heat for one minute or until fragrant (don't brown the garlic).
  • Add the guava, chopped tomatoes, ketchup, brown sugar, tomato paste, jalapeno (if using), cider vinegar, liquid smoke, worcestershire, bay leaves, ginger, dry mustard, salt and pepper. Heat to a low boil, reduce heat to a simmer and cover partway with the lid, so that steam can escape. Simmer for 20 minutes, stirring occasionally to make sure the sauce doesn't stick to the pan. Remove from heat.
  • Transfer the guava sauce to a food processor and pulse several times until smooth. If sauce is too thick, add 2-3 tablespoons of hot water and pulse again. Taste for seasoning and adjust as necessary. Let the sauce cool to room temperature, then transfer to a storage container and refrigerate until ready to use. Sauce will last two weeks in the refrigerator.
