Instant Pot® Spicy Beef Curry Stew image

Pegan and paleo-friendly spicy beef curry stew made in an Instant Pot®.

2 tablespoons olive oil
2 pounds cubed beef stew meat
salt and ground black pepper to taste
2 jalapeno peppers, chopped
4 cloves garlic, minced
1 tablespoon minced fresh ginger root
4 tablespoons curry powder
2 cups beef broth
1 (28 ounce) can fire-roasted diced tomatoes
1 pound Yukon Gold potatoes
3 carrots, sliced
1 large onion, sliced

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Pour in olive oil and heat until sizzling; add meat and season with salt and pepper. Cook until browned, 5 to 7 minutes per side.
  • Transfer meat to a plate, reserving juices in the pot. Add jalapenos, garlic, and ginger to the pot. Cook and stir until tender, about 2 minutes. Season with curry powder.
  • Pour 1/2 of the beef broth into the pot; scrape brown bits from the bottom of the pot using a wooden spoon. Return meat to the pot with remaining beef broth, tomatoes, potatoes, carrots, and onion. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions and set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes more. Unlock and remove the lid.

1 pound beef tenderloin or top sirloin steak, cut into 3/4-inch cubes
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
2 garlic cloves, minced
1 green onion, sliced
1/4 cup butter, cubed
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
1/2 pound sliced fresh mushrooms
1 tablespoon reduced-sodium soy sauce
1-1/2 teaspoons lemon juice
Hot cooked rice

Steps:

  • Toss beef with salt and pepper. In a large skillet, heat oil over medium-high heat; saute beef 2 minutes. Add garlic and green onion; cook and stir until beef is browned, 2-3 minutes. Remove from pan., In same skillet, heat butter over medium-high heat; saute asparagus and mushrooms until asparagus is crisp-tender. Add beef, soy sauce and lemon juice; heat through, tossing to combine. Serve with rice.

I've never found a recipe for crispy ginger beef like the ones in the restaurants. I have experimented, and found something pretty close. Serve with rice and some steamed veggies.

¼ cup cornstarch
¼ tablespoon salt
black pepper
12 ounces flank steak, thinly sliced
1 quart oil for frying
4 tablespoons soy sauce
1 tablespoon rice vinegar
½ tablespoon rice wine
1 ½ tablespoons honey
7 tablespoons granulated sugar
½ tablespoon chile paste
¼ cup water
3 tablespoons chopped fresh ginger root
1 tablespoon vegetable oil
2 cloves garlic, chopped
¼ cup sliced onion
¼ cup diced red bell pepper

Steps:

  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Meanwhile, in a mixing bowl, combine cornstarch, salt and pepper together. Mix thoroughly. Toss the steak slices in the cornstarch mixture and coat well.
  • Deep fry the coated steak slices until golden brown. Check to make sure they are cooked through. Remove from oil, and set aside.
  • In another mixing bowl, combine the soy sauce, rice vinegar, rice wine and honey. Add sugar, chili paste, water, and ginger. Mix well and set aside.
  • Heat a wok or deep frying pan over medium high heat. Add 1 tablespoon of oil, and quickly saute the onion, garlic and red pepper for 30 seconds. Add the sauce mixture, and cook another 30 seconds. Finally, add the strips of fried steak and toss to heat through and coat with sauce.

This is a recipe that I created, using some simple ingredients and spices I had available. The rich flavors and ease with which it is created is incredible in that it uses only one pan and one cutting board (cleaned between cuttings, of course).

1 tablespoon olive oil
1 small onion, diced
1 medium carrot, diced
1 lb steak, tenderized
1 tablespoon salsa (spiciness of choice)
1/4 teaspoon salt
1 pinch oregano
1 pinch garlic powder
1 pinch white pepper
1 dash cayenne pepper
1 pinch black pepper

Steps:

  • Preheat olive oil in a skillet at 350 degrees Farenheit.
  • Once oil is hot, add onion and carrot; saute until onions are translucent.
  • Add steak, salsa, salt, oregano, garlic powder, white pepper, cayenne pepper, and black pepper.
  • Stir.
  • Cook uncovered until meat is browned.
  • Lower heat and simmer until carrots are tender.
  • Serve.

2 tablespoons dark sesame oil
½ pound New York steak, cut into 1/4-inch strips
1 cup frozen broccoli florets
1 cup frozen sugar snap peas
1 cup baby carrots, cut into 1/4-inch pieces
1 green bell pepper, cut into chunks
1 cup Chardonnay wine
2 tablespoons honey
2 tablespoons dark soy sauce
1 teaspoon red pepper flakes

Steps:

  • Heat sesame oil in a large skillet over medium-high heat; cook and stir steak in hot oil until browned, about 5 minutes. Transfer meat to a plate and return skillet to stovetop. Cook and stir broccoli, snap peas, carrots, and bell pepper in the same skillet used to cook beef until vegetables start to become tender, 5 to 7 minutes. Transfer vegetables to the plate with the meat; return skillet to stovetop.
  • Stir wine, honey, dark soy sauce, and red pepper flakes into skillet, scraping up any browned bits from the bottom of the skillet. Stir beef and vegetables into wine mixture; simmer and stir until wine sauce is reduced, about 10 minutes.

1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cracked black pepper
1 tsp ground cumin
1/4 tsp savory season
1/2 tsp oregano, dried
1/2 tsp celery powder
1/2 tsp fennel seed
1/2 tsp chili flakes
1 tsp sage, dried
1 tsp marjoram, dried
1/2 tsp turmeric, ground
1/2 tsp paprika
1/2 tsp salt

Steps:

  • 1. MIX all spices together. ADD ground beef and blend well.
  • 2. ROLL sausage in 5 X 1 1/2 inch logs, ROLL up with foil, close ends. REFREGERATE up to 24 hours to let flavors season.
  • 3. HEAT oven. BAKE 350 for 30 minutes on cookie sheet WITH the foil on.
  • 4. (you can make patties and cook sooner if desired also beef can be 80/20 or lean also this is very good remove from foil and lightly fry...serve with breakfast, dinner, on a bun.)
