ITALIAN PICCANTE EGGPLANT SAUCE



Italian Piccante Eggplant Sauce image

Never have button mushrooms been more delicious than in this veg-packed spicy dip recipe, also ideal as a sandwich spread or finisher for simply prepared vegetables.

Yield Makes about 1 1/2 cups

Number Of Ingredients 6

1 small globe eggplant, halved lengthwise
2 tablespoons plus 1/2 cup olive oil
4 ounces button mushrooms, trimmed
1 small head of garlic, plus 1/2 small garlic clove, finely chopped
1/4 cup tomato sauce
2 tablespoons Calabrian chile paste or 1 fresh Fresno chile, chopped

Steps:

  • Preheat oven to 425°F. Lightly score eggplant flesh with the tip of a knife. Place skin side down on a rimmed baking sheet and drizzle with 1 Tbsp. oil; season with salt. Toss mushrooms and head of garlic with 1 Tbsp. oil on another rimmed baking sheet; season with salt. Cover tightly with foil. Roast vegetables on both sheets until very tender, 30-35 minutes. Let cool.
  • Scoop eggplant flesh from skin; discard skin. Chop eggplant and mushrooms until a coarse purée forms. Squeeze garlic cloves from skins; chop until mashed. Transfer both purées to a small bowl and mix in tomato sauce, chile paste, chopped fresh garlic, and remaining 1/2 cup oil; season with salt.
  • Serve with bread for dipping.
  • Sauce can be made 2 weeks ahead. Cover and chill.

1 tablespoon oriental sesame oil
2 tablespoons minced garlic
2 tablespoons minced peeled fresh ginger
4 cups 1/2-inch cubes unpeeled eggplant (about 3/4 pound)
1/2 pound mushrooms, coarsely chopped
1/3 cup water
2 tablespoons hoisin sauce*
1 tablespoon oyster sauce*
1 tablespoon chili paste with garlic*
Boston lettuce leaves
Chopped green onion
Chopped red bell pepper
Chopped jicama
Hoisin sauce is available at Asian markets and in the Asian section of some supermarkets.

Steps:

  • Heat oil in heavy large nonstick skillet over medium-high heat. Add garlic and ginger and stir until fragrant, about 1 minute. Add eggplant and mushrooms and sauté 2 minutes, stirring to coat with seasonings. Add next 4 ingredients and cover. Simmer until eggplant is tender, stirring occasionally, about 10 minutes. Uncover and cook until sauce is absorbed and mixture is thick, about 2 minutes. Season to taste with salt.
  • Arrange lettuce leaves around edge of platter. Spoon eggplant mixture into center. Spoon eggplant mixture into center. Spoon some eggplant mixture into each lettuce leaf. Garnish generously with chopped green onion, bell pepper and jicama. Fold up sides of lettuce as for a taco and serve.

Hot and Spicy Eggplant Patties image

4 baby eggplants, skin-on and diced
2 teaspoons salt
1/2 cup extra-virgin olive oil
2 cracked cloves garlic, plus 2 finely chopped cloves
1 red dry hot pepper, diced
1 large porcini, diced
2 eggs
3 tablespoons pecorino Romano
11/4 cups of unseasoned bread crumbs
1 1/2 cups vegetable oil or light olive oil
Fresh flat-leaf Italian parsley, finely chopped
Fresh basil, finely chopped
1/4 teaspoon black pepper

Steps:

  • Place the diced eggplant in a small deep bowl. Season with salt and compress with heavy object. Let it stand for approximately 1 hour. Squeeze out excess juice and set aside.
  • In a small frying pan, begin to heat 6 tablespoons extra-virgin olive oil, 2 cracked garlic cloves, hot pepper. When fragrant, add the eggplant and diced mushrooms for approximately 3 minutes until brown and crisp. Discard the garlic.
  • In a bowl, beat eggs, add grated cheese, black pepper, remaining 2 tablespoons of extra-virgin olive oil, chopped fresh basil, and parsley. Add the eggplant, mushrooms, 2 garlic finely chopped cloves, and bread crumbs, and mix thoroughly.
  • Heat vegetable oil in a large non-stick frying pan or skillet. Wet your hands and begin to scoop 1/2 cup of mix to make patties. Start to fry when oil is very hot. Cook for 4 minutes on each side until golden brown. Remove from pan and place on tray lined with paper towels to cool and absorb excess oil. Serve immediately.

Quite easy for an intermediate chef like me! I added 1 tablespoon Italian seasoning to it (instead of parsley) and 3 cloves of minced garlic. I increased the breadcrumbs slightly because the eggplant was large. It was very tasty and my husband loved it!

1 tablespoon salt
¼ cup butter, cubed
1 small onion, chopped
¾ cup soft bread crumbs
½ cup chopped fresh mushrooms
1 tablespoon Italian seasoning
1 pinch ground black pepper
½ cup shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch square baking dish.
  • Cut eggplant in half lengthwise and scoop out the flesh, leaving shells about 1/4 inch thick. Chop pulp and place into a colander. Sprinkle with salt and let eggplant pulp drip for 30 minutes. Blot moisture from eggplant pulp with a paper towel.
  • Melt butter in a skillet over medium heat; cook and stir eggplant pulp and onion in the hot butter until vegetables are tender, about 10 minutes. Stir bread crumbs, mushrooms, Italian seasoning, and black pepper into the eggplant mixture until thoroughly combined. Spoon the mixture into eggplant shells.
  • Bake in the preheated oven until eggplant shells are tender, about 15 minutes. Sprinkle with Swiss cheese, return to oven, and bake until cheese has melted, about 5 more minutes.

3/4 cup basmati rice
2 large eggplants
1 tablespoon olive oil
1 large brown onion, halved, finely chopped
1 red capsicum, halved, deseeded, finely chopped
2 garlic cloves, crushed
2 teaspoons ground coriander
1 teaspoon fresh ginger, finely grated
1/4 teaspoon chili, crushed
1/4 teaspoon ground turmeric
1/4 cup fresh flat leaf parsley, coarsely chopped
2 teaspoons lemon rind, finely grated
2 tablespoons fresh lemon juice
1/2 cup reduced-fat yoghurt
2 tablespoons of fresh mint, coarsely chopped

Steps:

  • Preheat oven to 200°C
  • Cook the rice in a large saucepan of boiling water for 15 minutes or until tender. Rinse under cold running water. Drain well.
  • Meanwhile, cut the eggplants in half lengthways and use a small sharp knife to cut a 1cm border around the edge of each eggplant half then scoop out the flesh within the border, leaving about 1.5cm of flesh on the base of each eggplant half.
  • Finely chop the flesh.
  • Heat oil in a frying pan over medium heat and add the onion and capsicum and cook, stirring, for 5 minutes or until soft.
  • Add the garlic, coriander, ginger, chilli and turmeric and cook, stirring, for 30 seconds or until aromatic.
  • Add the chopped eggplant and cook, stirring, for 10 minutes or until eggplant is soft. Remove from heat.
  • Add the rice, parsley, lemon rind and lemon juice to eggplant mixture, and stir to combine.
  • Place eggplant shells in a large baking dish and spoon rice mixture evenly among eggplant shells.
  • Bake in oven for 30 minutes or until eggplant shells are soft and filling is golden.
  • Place the yoghurt and mint in a small serving bowl and stir to combine. Serve with spicy rice-filled eggplant.
