MAPLE GLAZED RIBS
Steps:
- Preheat oven to 350 degrees F.
- Place ribs in a roasting pan and sprinkle with salt. Bake for approximately 25 minutes. After the ribs are golden brown, remove from the oven and baste with pure maple syrup.
- Lower the oven temperature to 250 degrees F. Tightly wrap the ribs with a foil tent, making sure not to put any holes in the foil in order to maintain moisture and flavor. Return to the oven for approximately 10 hours. When you open the foil to check the ribs (carefully avoiding the steam), you should be able to place a fork into the meat and it should immediately break off the bone. If there is any resistance or hardness, continue cooking in the oven for up to 2 hours longer.
- After cooking is complete, coat with another layer of maple syrup. If not serving immediately, wrap in plastic to keep moist until ready to use. To serve, cut each rack in half.

SPICY BEEF BACK RIBS
Steps:
- 1.Heat oil in medium saucepan over medium high heat until hot. Add onion, garlic and pepper flakes; cook and stir 4 to 5 minutes or until onion is tender. Add chili sauce, water and lemon juice; bring to a boil. Reduce heat and simmer 5 minutes, stirring frequently. Season with salt. Reserve 1/2 cup sauce for basting. 2.Prepare charcoal grill for indirect cooking by igniting an equal number of charcoal briquets on each side of fire grate, leaving open space in the center. When coals are medium, ash-covered (25 to 30 minutes), add 3 to 4 new briquets to each side. Position cooking grid with handles over coals so additional briquets may be added when necessary. 3.Place ribs, meat side up, in large (16-1/8 x 11-3/4 x 2-7/8 inches) foil roasting pan. Pour remaining sauce over ribs; turn ribs to coat. Cover tightly with aluminum foil; place foil pan on cooking grid. Cover with grill lid and grill over medium heat 1 to 1-1/2 hours or until ribs are fork-tender. Carefully remove roasting pan from grill; remove ribs from pan and place, meat side up, on grill rack. Baste ribs with reserved sauce; grill, covered, 10 to 15 minutes, turning and basting once. Cooks' Notes: Add 3 to 4 additional briquets to each side of fire grate every 30 minutes or as necessary to maintain proper heat during grilling.
STICKY MAPLE RIBS
For this recipe, excerpted from the book Baking with Kids, by Linda Collister (Ryland Peters & Small, 2006), you need good meaty spareribs or king ribs. For a filling supper, cook some large baking potatoes in the oven at the same time as you cook the ribs. I found this in a parenting magazine called Family.

Steps:
- Preheat the oven to 375°F.
- Add a little oil to the roasting pan and rub it around the inside with a piece of paper towel.
- Peel the skin away from the onion and throw it away. Grate the onion into a large mixing bowl using the coarse or large-hole side of a grater.
- Add the maple syrup, soy sauce, ketchup, mustard, Worcestershire sauce, and 4 grinds of black pepper.
- Mix together well.
- Add the ribs to the bowl one at a time and use a metal spoon to thoroughly cover the ribs with the sticky glaze.
- Carefully lift the ribs into the prepared pan.
- Put the roasting pan in the preheated oven. Bake for 30 minutes and then remove the pan from the oven.
- Using kitchen tongs, carefully turn over the ribs so they brown evenly.
- Put the pan back in the oven and bake for another 30 minutes.
- The ribs should be a dark golden brown and crispy around the edges. Lift the pan out of the oven.
- Carefully transfer the ribs to a serving plate and eat!

- Place ribs in a large pot, and cover with water. Cover, and simmer for 1 hour, or until meat is tender. Drain, and transfer ribs to a shallow dish.
- In a small saucepan, stir together the maple syrup, brown sugar, ketchup, vinegar, Worcestershire sauce, salt, and mustard powder. Bring to a low boil, and cook for 5 minutes, stirring frequently. Cool slightly, then pour over ribs, and marinate in the refrigerator for 2 hours.
- Prepare grill for cooking with indirect heat. Remove ribs from marinade. Transfer marinade to a small saucepan, and boil for several minutes.
- Lightly oil grate. Cook for about 20 minutes, basting with the cooked marinade frequently, until nicely glazed.

- In a small bowl, combine the sugar and seasonings. Rub all of it onto both sides of ribs. Make two stacks the three sheets of foil and place half the ribs in the center of each stack. Bring opposite long edges of foil together; fold down several times. Fold the short edges toward the food and crimp tightly to prevent leaks. Refrigerate overnight. Remove from refrigerator 30 minutes before grilling., Prepare grill for indirect heat. Place foil packets over indirect medium heat. SPICY MAPLE RIBS
My boyfriend and I just love ribs, especially in the summer. I came up with this recipe after experimenting with a few I'd found. Also being Canadian, maple syrup is a staple ingredient in my fridge so I had to include that (so much more exciting then plain old sugar). There's never any leftovers with these ones! Combine with some sweet potato fries and fresh coleslaw to make a fantastic meal. Enjoy!

Steps:
- Remove excess fat from ribs and cut into pieces. I cut them into 2 rib sections so they can be picked up and eaten easily.
- To parboil ribs, bring large pot of water to a boil. Place ribs in boiling water and cook for 35 minutes.
- Remove ribs from water and place in large shallow baking pan. Turn ribs so meat side is facing downwards.
- In a medium sized bowl, combine all sauce ingredients.
- Pour sauce over ribs.
- Bake ribs in oven, uncovered at 250 deg. for 3 hours or when sauce caramelizes on ribs and the liquid has evaporated.
