BETH'S SPICY OATMEAL RAISIN COOKIES

With a little experimenting, I came up with these chewy, spicy, oatmeal raisin cookies. They make your kitchen smell wonderful while they are baking. They almost remind me of Christmas because the spices smell so good.

½ cup butter, softened
½ cup butter flavored shortening
1 cup packed light brown sugar
½ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon salt
3 cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!

1 1/2 cups sifted flour
2 teaspoons cinnamon
2 teaspoons allspice
1 1/2 teaspoons cloves
1 1/2 teaspoons ginger
1/8 teaspoon salt
1/2 teaspoon finely ground black pepper
1/2 teaspoon baking soda
8 ounces unsalted butter
1 teaspoon vanilla
1 cup granulated sugar
1 cup light brown sugar, firmly packed
2 eggs
3 cups quick-cooking rolled oats

Steps:

  • Sift flour with spices, salt and baking soda. Set aside.
  • In large bowl of electric mixer, cream butter. Add vanilla and both sugars, and beat well. Add eggs and beat to mix.
  • On low speed, beat in sifted dry ingredients.
  • Stir in oats with spoon.
  • Line two cookie sheets with aluminum foil, shiny side down. Measure out 1/4 cup of batter for each cookie and place 5 to 6 cookies on each sheet.
  • Bake at 375 degrees for 12 to 15 minutes on racks that have been placed on the second and third rungs in the oven. Reverse sheets once during baking. The cookies should still be quite soft when they are done. Cool on rack before removing from sheet.

2 cups powdered sugar
2 tablespoons butter or margarine, melted
1 teaspoon vanilla
1/4 cup half-and-half or milk
1/2 cup butter or margarine, softened
1/4 cup shortening
1/2 cup granulated sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla
2 cups old-fashioned oats
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1 1/2 cups Gold Medal™ all-purpose flour
2 medium apples, peeled, chopped (2 cups)
1 cup coarsely chopped walnuts

Steps:

  • Heat oven to 350°F. In small bowl, stir glaze ingredients until smooth and thin enough to drizzle. Cover; set aside.
  • In large bowl, beat 1/2 cup butter, the shortening, 1/2 cup granulated sugar and the brown sugar with electric mixer on medium speed until thoroughly mixed. Beat in eggs and 1 teaspoon vanilla until well blended. Beat in oats, cinnamon, nutmeg, baking soda and flour, scraping side and bottom of bowl once, just until blended. Stir in apples and walnuts.
  • On ungreased cookie sheets, drop dough by rounded tablespoonfuls (scant 1/4 cup) about 2 inches apart.
  • Bake 13 to 17 minutes or until edges are golden brown and centers are set. Cool 2 minutes; remove from cookie sheets to cooling racks. Using spoon, drizzle about 1 teaspoon glaze onto each warm cookie. Cool completely, about 10 minutes.

  • In a small bowl, combine the first five ingredients. In a 1-qt. glass jar, layer flour mixture, brown sugar, sugar, oats, chips and coconut, packing well between each layer. Cover and store in a cool, dry place up to 6 months. Yield: 1 batch (4 cups). , To prepare cookies: Preheat oven to 350°. In a large bowl, beat butter, egg and vanilla. A friend of mine brought these cookies to a square dance several years ago and was nice enough to write out the recipe for me. I have no idea where she got it, but, I've made them for years and they are just so tasty.

2 cups sugar
1 cup shortening
4 eggs
3 cups oatmeal
1 cup chocolate chips
2 teaspoons baking soda
1 cup milk
1 teaspoon salt
1 teaspoon clove
2 teaspoons cinnamon
2 teaspoons vanilla
5 cups flour

Steps:

  • Mix ALL ingredients together, thoroughly.
  • I like to mix this in my Kitchen Aide Mixer.
  • Drop by rounded Tbsp onto greased cookie sheets.
  • These cookies rise as opposed to spreading out.
  • Bake in a pre-heated 400 degree oven, 12-15 minutes.
  • Remove to wire rack to cool.
  • Enjoy!

1 cup white sugar
½ teaspoon baking soda
1 teaspoon salt
¼ teaspoon ground nutmeg
¾ teaspoon ground cinnamon
¾ cup shortening
1 egg, beaten
1 banana
1 ¾ cups rolled oats

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, stir together the flour, sugar, baking soda, salt, nutmeg and cinnamon. Cut in the shortening, until the mixture appears mealy. Stir in the egg, mashed banana and oatmeal until well blended. Drop by rounded spoonfuls onto an unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Remove from baking sheet to cool on wire racks.

a pinch ground cloves
a pinch cayenne
1/2 teaspoon baking soda
1/2 teaspoon salt
2 sticks (1 cup) unsalted butter, softened
1 cup packed brown sugar
1 cup granulated sugar
1 large egg
1 teaspoon vanilla
3 cups old-fashioned or quick-cooking rolled oats
1 cup raisins

Steps:

  • Preheat oven to 375°F.
  • Into a bowl sift together flour, spices, baking soda, and salt. In a large bowl with an electric mixer beat butter and sugars until light and fluffy and beat in egg and vanilla. Add flour mixture and slowly beat until just combined well. Stir in rolled oats and raisins (dough will be stiff).
  • Working in batches, drop dough by level tablespoons about 2 inches apart onto an ungreased baking sheet and bake in middle of oven until golden, 8 to 10 minutes. Cool cookies on baking sheet 1 minute and transfer to racks to cool completely.
