Always tender pork tenderloin, cut into thin slices and quickly cooked on the stove-top with a spicy Asian sauce. Serve with lots of toppings and a sweet and spicy Gochujang sauce on flour tortillas.

1 1/2 lb. pork tenderloin (fat and silverskin removed)
8 small flour tortillas
1/2 large red onion (cut in 1/8-in. rounds then separated into rings)
1/3 cup white vinegar
1/4 tsp granulated sugar
1/4 tsp salt
1 clove garlic (halved)
3 Tbsp sambal oelek (or Asian Chili Garlic Sauce)
2 Tbsp brown sugar
1 tsp fresh ginger (minced, or ginger paste)
1 clove garlic (minced)
2 Tbsp soy sauce
2 tsp sesame oil
2 Tbsp gochujang
2 Tbsp brown sugar
1/2 tsp garlic (minced)
2 Tbsp white vinegar
1 tsp sesame seeds
Thinly sliced cucumbers
Thinly sliced jalapeno pepper
Chopped fresh cilantro
Diced green onions
Lime wedges (for drizzling)

Steps:

  • Make the Quick Pickled Red Onions: In a medium saucepan on the stovetop, boiL the vinegar with the sugar, salt and garlic until sugar dissolves. Remove from heat and add onion rings. Push onion down into liquid so it is mostly covered and let stand for at least 30 min. To store longer, cover and refrigerate. Can be refrigerated up to 1 week.
  • Prepare the pork: Thinly slice the pork tenderloin and place into a medium bowl.
  • Prepare the Spicy Pork Marinade: In a small bowl, whisk together the sauce ingredients. Pour over the sliced pork and toss to combine. Let stand on the counter while you prepare the toppings and sauce, if using, or if making ahead, cover and refrigerate.
  • Preheat oven to 350F, to warm the tortillas.
  • Prepare the toppings: Slice and chop the topping ingredients and set aside.
  • Prepare the Gochujang Sauce: Combine all the Gochujang sauce ingredients in a small bowl and stir to combine. Set aside.
  • Wrap the tortillas in aluminum foil and pop into the oven to warm for 7-8 minutes, while you cook the pork.
  • Heat a large skillet over medium-high heat. Add the marinated pork (with marinade) and spread into a thin layer. Let cook, undisturbed, until pork starts to brown, then stir and continue cooking, stirring, until pork is cooked through. Remove pork to a serving platter. Arrange the toppings in sections on the platter and place the small bowl of the gochujang sauce on the platter as well. Serve with warmed tortillas.

5 tablespoons apple cider vinegar
1 tablespoon molasses
1 tablespoon Dijon mustard
4 cloves garlic, roughly chopped
3 chipotle chiles in adobo, plus 2 tablespoons sauce
1 large yellow onion, roughly chopped
Kosher salt and freshly ground black pepper
2 teaspoons garlic powder
1 tablespoon paprika
1 tablespoon light brown sugar
1 teaspoon cayenne pepper
1 teaspoon chili powder
Kosher salt and freshly ground black pepper
4 1/2 pounds meaty country-style pork ribs (about 4 pieces total; cut 1 1/2- to 2-inches thick)
2 tablespoons olive oil
2 teaspoons dried Mexican oregano
3 cups chicken stock, plus more as necessary
12 to 16 corn tortillas, warmed in a skillet or charred over a flame
1/2 English cucumber, thinly sliced, for serving
1 avocado, cut into thin wedges
1/8 red cabbage, thinly sliced
1 cup crumbled Cotija cheese
5 radishes, thinly sliced
Pico de gallo, for serving
Cilantro sprigs, for serving

Steps:

  • For the barbecue sauce: In the bowl of a blender, combine the ketchup, apple cider vinegar, molasses, mustard, garlic, chipotles and sauce and onion. Season generously with salt and pepper. Blend until smooth.
  • For the ribs: In a small bowl, combine the garlic powder, paprika, brown sugar, cayenne, chili powder, 2 tablespoons salt and 2 teaspoons black pepper. Sprinkle the ribs with the rub on all sides.
  • In a skillet, warm the olive oil over medium-high heat. When shimmering, add the ribs and brown on all sides, working in batches if necessary. Transfer to a slow cooker.
  • Add the barbecue sauce, Mexican oregano and enough chicken stock to come halfway up the ribs. Set the slow cooker to high and cook, 8 to 10 hours. Remove the ribs and shred the meat into bite-sized pieces. (Discard the fat.) Taste the sauce and adjust the seasoning if necessary. Whisk to combine (the sauce may separate during cooking) and transfer to a serving bowl.
  • Construct tacos by spreading the tortillas with sauce and topping with pork, cucumbers, avocado wedges, cabbage, Cotija, radishes, pico de gallo and cilantro. Serve immediately with lime wedges.

Steps:

  • For the scallion and carrot relish: Toss the soy sauce, ginger, sesame oil, carrots, scallions and lime juice in a medium bowl. Set aside in the refrigerator until ready to serve.
  • For the pork: Heat a medium skillet over medium-high heat. Add the vegetable oil, and once hot, the pork. Cook the pork, breaking it up with the back of your spoon until it browns and is no longer pink, 5 to 6 minutes. Stir in the red pepper flakes, salt, garlic, ginger and shallots. Cook until they are aromatic and incorporated, another minute. Add the hoisin and stir to combine, then add the soy sauce. Cook until the pork is sticky and glazed, about 3 minutes. Transfer the pork to a serving bowl.
  • Serve the pork with the lettuce leaves, some scallion and carrot relish, cilantro leaves, mint leaves, peanuts and sriracha, letting everyone build their own wraps with all the fixings.

5 lb boneless pork shoulder
3 tablespoons achiote paste
2 tablespoons guajillo chili powder
1 tablespoon garlic powder
1 tablespoon dried oregano
1 tablespoon cumin
1 tablespoon salt
1 tablespoon pepper
¾ cup white vinegar
1 cup pineapple juice
1 pineapple, skinned and sliced into 1-inch (2 cm) rounds
10 small corn tortillas
1 white onion, finely chopped
1 cup fresh cilantro, finely chopped
1 cup salsa
1 avocado, diced
2 limes, cut into wedges
1 thick wooden skewer, trimmed to the height of your oven

Steps:

  • Slice the pork shoulder into about 1-centimeter (¼ in) slices, then transfer to a large dish or bowl. In a medium bowl, combine the achiote paste, chili powder, garlic powder, oregano, cumin, salt, pepper, vinegar, and pineapple juice, mashing and stirring until smooth with no lumps. Pour the marinade over the pork slices, then toss to make sure they are coated on all sides. Cover the bowl with plastic wrap, then refrigerate for at least 2 hours or up to 3 days.
  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper or aluminum foil.
  • Place a slice or two of the pineapple on the baking sheet. Take a wooden skewer and push it directly in the middle of the pineapple. Remove the pork from the fridge and push the slices through the skewer, layering one after the other until there is a 1-inch (2 ½ cm) gap at the top. Push another pineapple slice on top.
  • Bake for about 1½ hours, until the pork is slightly charred on the outside and deep red. Rest the meat for about 10 minutes, then carve off thin slices of pork and roasted pineapple.
  • To assemble, place some pork on the tortillas, followed by a few pieces of pineapple, a sprinkling of onion, a pinch of cilantro, and a spoonful of salsa, and some diced avocado. Serve with lime wedges.

10 large dried guajillo chiles, wiped clean
1 1/2 cups water
1 1/4 pounds plum tomatoes, cored and quartered
8 garlic cloves, peeled
4 bay leaves
Salt and pepper
3/4 teaspoon sugar
1/2 teaspoon ground cumin
1/8 teaspoon ground cloves
3 pounds boneless pork butt roast
1 lime, cut into 8 wedges
1/2 pineapple, peeled, cored, and cut into 1/2-inch-thick rings
Vegetable oil
18 (6-inch) corn tortillas, warmed
1 small onion, chopped fine
1/2 cup coarsely chopped fresh cilantro

Steps:

  • 1. Toast guajillos in large Dutch oven over medium-high heat until softened and fragrant, 2 to 4 minutes. Transfer to large plate and, when cool enough to handle, remove stems. 2. Bring toasted guajillos, water, tomatoes, garlic, bay leaves, 2 teaspoons salt, ½ teaspoon pepper, sugar, cumin, and cloves to simmer in now-empty Dutch oven over medium-high heat. Cover, reduce heat, and simmer, stirring occasionally, until guajillos are softened and tomatoes mash easily, about 20 minutes. 3. While sauce simmers, trim excess fat from exterior of pork, leaving ¼-inch-thick fat cap. Slice pork against grain into 1/2-inch-thick slabs. 4. Transfer guajillo-tomato mixture to blender and process until smooth, about 1 minute. Strain puree through fine-mesh strainer, pressing on solids to extract as much liquid as possible. Return puree to pot, submerge pork slices in liquid, and bring to simmer over medium heat. Partially cover, reduce heat, and gently simmer until pork is tender but still holds together, 90 to 105 minutes, flipping and rearranging pork halfway through cooking. (Pork can be left in sauce, cooled to room temperature, and refrigerated, covered, for up to 2 days.) 5. Transfer pork to large plate, season both sides with salt, and cover tightly with aluminum foil. Whisk sauce to combine. Transfer 1/2 cup to bowl for grilling; pour off all but 1/2 cup remaining sauce from pot and reserve for another use. Squeeze 2 lime wedges into sauce in pot and add spent wedges; season with salt to taste. 6A. FOR A CHARCOAL GRILL: Open bottom vent halfway. Light large chimney starter filled with charcoal briquettes (6 quarts). When top coals are partially covered with ash, pour evenly over grill. Set cooking grate in place, cover, and open lid vent halfway. Heat grill until hot, about 5 minutes. 6B. FOR A GAS GRILL: Turn all burners to high, cover, and heat grill until hot, about 15 minutes. Turn all burners to medium. 7. Clean and oil cooking grate. Brush 1 side of pork with ¼ cup reserved sauce. Place pork on 1 side of grill, sauce side down, and cook until well browned and crisp, 5 to 7 minutes. Brush pork with remaining ¼ cup reserved sauce, flip, and continue to cook until second side is well browned and crisp, 5 to 7 minutes longer. Transfer to cutting board. Meanwhile, brush both sides of pineapple rings with vegetable oil and season with salt to taste. Place on other half of grill and cook until pineapple is softened and caramelized, 5 to 7 minutes per side; transfer pineapple to cutting board. 8. Coarsely chop grilled pineapple and transfer to serving bowl. Using tongs or carving fork to steady hot pork, slice each piece crosswise into 1/8-inch pieces. Bring remaining 1/2 cup sauce in pot to simmer, add sliced pork, remove pot from heat, and toss to coat pork well. Season with salt to taste. 9. Spoon small amount of pork into each warm tortilla and serve, passing chopped pineapple, remaining 6 lime wedges, onion, and cilantro separately.

1 ½kg rindless pork shoulder , cut into 6 large chunks
1 red onion , roughly chopped
2 garlic cloves , crushed
2-3 tbsp habanero chilli sauce
3 tbsp tomato purée
juice 2 oranges (around 200ml/ 7 fl oz)
juice 3 large limes (around 75ml/ 2 1/2 fl oz)
3 tbsp white wine vinegar
2 tsp dried oregano
2 tsp ground allspice
2 tsp ground cumin
1 tsp ground nutmeg
½ tsp ground cloves
2 medium red onions , finely sliced
2 tbsp white wine vinegar or cider vinegar
2 tbsp caster sugar
24 corn tacos , warmed
4 Little Gem lettuces , trimmed and finely shredded
soured cream or half-fat crème fraîche

Steps:

  • Put the marinade ingredients in a large, zip-seal freezer bag and squish until well combined. Add the pork and onion, ensuring they're well coated. Seal and put in the fridge overnight.
  • Heat oven to 160C/140C fan/gas 3. Transfer the pork and its marinade to a medium casserole dish. Cover with a lid and place in the oven for 4-5 hrs or until the pork is very tender and falls apart when poked with a fork.
  • To make the pickled onions, put the sliced red onions in a heatproof bowl. Cover with just-boiled water and leave to stand for 10 mins. Drain well, then stir in the white wine vinegar or cider vinegar and caster sugar. Stand for at least 10 mins before serving.
  • Drain the pork in a colander, reserving the marinade, then transfer the pork to a board. Shred the pork with two forks, drizzle over 4-5 tbsp of the reserved marinade, and serve from the board with the pickled red onions, warmed corn tacos, shredded lettuce and soured cream.

1 1/2 pounds pork shoulder, not too lean, in thin 1/2-inch strips or cubes
Salt
pepper
3 garlic cloves, finely chopped

Steps:

  • Season the pork generously with salt and pepper. Add the garlic, chile powder and cumin, and mix well, massaging the seasoning into the meat with fingers. Let the meat marinate for at least an hour, or refrigerate overnight.
  • Heat the oil in a wide cast iron skillet over medium heat. When the oil looks wavy, add the meat and let it sizzle, stirring occasionally, until lightly browned and cooked through, 5 to 7 minutes. Turn off the heat and keep meat warm.
  • Heat the tortillas on an ungreased hot griddle or cast iron pan. Turn them once or twice until hot and slightly puffed. As they come off the griddle, stack them on a cloth napkin to steam, with another napkin on top.
  • To assemble the tacos, stack 2 hot tortillas on a plate. Spoon on a little sizzled pork, then top with a spoonful of tomatillo salsa and another of salsa cruda. Garnish with radishes and cilantro sprigs. Serve and eat immediately.
