SPICY SAUSAGE BITES

1 tablespoon extra-virgin olive oil
Two 8.5-ounce packages merguez sausage or spicy lamb sausage
10 ounces store-bought puff pastry, cut into 1-by-3-inch strips
1 egg, beaten
1/2 teaspoon caraway seeds
1/2 cup sour cream
1/4 cup chopped fresh mint
1/4 teaspoon salt

Steps:

  • Line a baking sheet with parchment paper.
  • Preheat a large skillet over medium-high heat. Add the oil to the pan, followed by the sausages. Sear the sausages on all sides, 6 to 8 minutes. Remove to a plate and let cool to room temperature.
  • Cut the sausages into 1 1/2-inch pieces and roll the each piece in a strip of puff pastry. Place the wrapped sausages, seam side down, on the prepared baking sheet. Brush the tops of the rolls with egg and sprinkle with the caraway seeds. Refrigerate for 30 minutes before baking.
  • Preheat the oven to 400 degrees F.
  • Transfer the baking sheet to the preheated oven and bake for 20 minutes, or until the pastry is puffed and golden brown.
  • While the rolls bake, prepare the dipping sauce. In a small bowl, whisk together the sour cream, mint and salt. Let the flavors marry for at least 5 minutes before serving alongside the sausage bites.

12 ounces Sausage Meat
3 tablespoons Wholegrain Mustard
1 teaspoon Sea salt
1 teaspoon Freshly Ground Black Pepper
1 sheet Ready-Rolled Puff Pastry
½ cup Plain flour (for dusting)
1 Egg
1 tablespoon Marmite (or yeast extract)
1 teaspoon Nigella Seeds (or sesame seeds)

Steps:

  • Season the sausage meat in a large bowl with mustard, salt, and pepper. Roll the puff pastry sheets on a lightly floured surface and create a large rectangle from it. Cut this sheet lengthwise to have two long strips.
  • Now, place half of the sausage mixture in the center of one of the pastry strips. Form a long sausage shape in the center from the sausage meat and brush the egg mixture (beaten egg and Marmite) over the pastry borders. Enclose the sausage in the pastry. Crimp the pastry to seal it using a fork and cut each long roll into six small rolls. Repeat this with the other pastry strip.
  • Line the baking sheet over the baking tray. Place the sausage rolls over this tray and transfer it into the refrigerator for about 30 minutes. Let the rolls firm and then bake them in the preheated oven for about 15 to 20 minutes. Remove from the oven when the pastry is crispy and golden. Serve warm or as a party buffet.
