Steps:
- Heat the olive oil in a large skillet over medium high heat add shrimp and brown for 1-2 minutes. Add garlic and tomatoes stir a few seconds then add vermouth. Cool until liquid is reduced and shrimp are cooked through 2-3 minutes longer.
- Add Butter and salt and pepper to taste, swirling pan to melt butter.

SHRIMP SCAMPI WITH CHERRY TOMATOES
Steps:
- Fill a high-sided skillet set over high heat with water. Add 3 tablespoons of the salt and bring to a boil. Add the pasta, and gently stir using tongs to make sure the pasta doesn't stick to itself. Cook the pasta for 12 to 14 minutes, and then drain.
- In a large skillet set over medium heat, add the oil. When hot, add the garlic, shallots, tomatoes and the remaining 1/2 tablespoon salt. Saute until the onions are translucent, 2 to 3 minutes. Stir in the paprika and chile flakes, and saute for 1 to 2 minutes. Pour in the wine, scraping up any bits on the bottom of the pan. Bring to a simmer. Add the cream and return to a simmer for 1 minute. Add the shrimp and cover with the sauce. Cook, stirring to make sure the shrimp cooks through, 3 to 5 minutes. Add the chives and parsley, and toss to mix. Serve the shrimp and sauce over the pasta.

A twist on shrimp scampi that I threw together for my hungry husband one day, made with things I had in the cupboard. It went over so well that it is a regular at our house now.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
- Heat the olive oil in a skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the tomatoes; simmer until heated through, about 5 minutes more. Add the lemon juice and shrimp. Cook and stir until the shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Stir in the parsley, then season with salt, pepper, and red pepper flakes. Serve shrimp and sauce over prepared penne pasta. Sprinkle with Parmesan cheese.

TOMATO-SHRIMP SCAMPI DIABLO
This dish evolved from my spicy omelette sauce recipe. This chunky sauce just "screamed out" to have seafood added and since butter, vermouth, and garlic are integral to this particular blend, I figured I could add shrimp and call it a scampi of sorts. You could also add calamari rings, bay scallops, mussels, and/or fish chunks if you wished and it would only add to this dish's superb flavor. In any case, it's not pop-your-eyeballs-out hot but you can supplement the heat from the cooking oil by adding a little Tabasco as directed. This is a shrimp dish that will be quickly devoured by a small crowd as I discovered when I first served it as one of multiple appetizers at a family gathering -- it was the first to disappear. As a meal, you can serve this over either cooked Basmati rice or egg noodles. I've offered some ingredient substitutions which have, so far, worked beautifully for me. As a final comment, I love to take this dish camping and cook it in a wok right over an open campfire. Enjoy this dish -- you won't be bored with it, I guarantee that much!

- In a large no-stick skillet over medium heat, pour in the cooking oil and the butter.
- When the oil has heated some, drop in the onion and minced garlic and sauté, stirring frequently, until the onion has tenderized, (about 6-8 minutes).
- Next add the stewed tomatoes with the juice and the salsa verde. Allow this blend to reduce for about 5 minutes, uncovered, stirring frequently.
- Add the honey, the vermouth, the raw shrimp, and the Tabasco (if using) and sautee for 6 more minutes, stirring constantly. (If adding mussels and/or fish chunks, cook for an additional 3 minutes and until all mussels have opened -- discard any mussels which fail to open after a few minutes).
- NOTE: If adding additional seafood, you may wish to add some extra liquid during the final sauté. I recommend using canned chicken broth which I have used with great success in this dish.
- You can serve this dish (on small plates) as an appetizer -- or, as a meal, you can serve it over either cooked rice or egg noodles.

- Pat shrimp dry, sprinkle with 1 teaspoon pepper and set aside.
- Heat ghee over medium heat in a wok or large (12-inch) frying pan until it has melted, about 30 seconds. Add ginger, garlic and onion and cook, stirring occasionally, until onion has softened, 5 to 7 minutes.
- Add chile powder, cumin, turmeric and Thai green chiles. Stir until fragrant, about 30 seconds. Add tomatoes and salt and cook, stirring occasionally, until the tomatoes have broken down and start to stick to the wok, about 15 minutes. Add coconut milk if you like it saucy.
- Add shrimp. Stir so that shrimp are evenly coated, and continue cooking, stirring occasionally so the shrimp cook evenly, until the shrimp turn pink and appear firm, 4 to 5 minutes.
- Turn off the heat, sprinkle with lemon juice, garam masala, cilantro and remaining ½ teaspoon black pepper. Serve with roti, store-bought pita or by itself.

This recipe was obtained from shrimp.com. My son wanted *something different* for new years eve dinner, and I yelled downstairs to him to find something with shrimp, as I had a bunch of shrimp leftover in the freezer from Christmas. The aroma of all that garlic while cooking made our mouths water! Very tasty meal and not a complicated recipe. Our guests raved about it. We doubled the recipe and served 4, however the portions were very generous, I'm sure I could have served 6 on the doubled recipe.

- Melt butter with the olive oil in a sauté pan.
- When the mixture is hot, add the garlic, white pepper, red pepper flakes, oregano, and cayenne pepper, making sure to stir well.
- When garlic looks cooked but not brown (about 3 minutes), add the Shrimp.
- Toss the Shrimp about in the pan, coating them with the spiced oil.
- Add the lemon juice and keep tossing over the heat.
- Quickly add the parsley, bread crumbs, and Parmesan.
- Toss to coat completely.
- The Shrimp should now be bright pink and cooked through.
- Place the pan under the broiler until cheese looks melted (1- 2 minutes).
- Taste and adjust seasoning if necessary.
- Serve over the cooked pasta, with additional Parmesan sprinkled over the top.

- Prepare your shrimp - peeled, deveined, tails off, rinse under cool water and then pat dry with a cloth or paper towel. Set aside in a bowl. Prepare your pot with water for cooking your linguini, I use 1 tablespoon oil and 1/4 teaspoon of salt, turn the heat up to medium and let it warm up as you continue with the sauce preparation, you will actually cook the pasta a little later on so it's not overcooked.
- Chop your garlic fine or use the chopped garlic in the jar. Chop your tomato into small pieces. Chop your parsley fine.
- In a saute' pan turn your heat to medium and add 1/2 cup olive oil, butter, tomato, garlic, parsley, capers, lemon juice, tomato sauce, anchovy paste, Tony Cachers. Cook 7 minutes stir occasionally and then reduce the heat to low.
- In a separate pan add 3 tablespoons olive oil and turn the heat to high, when the oil just starts to smoke add your shrimp be careful for splatter! keep the shrimp moving, I like to flip them in the pan or you can use tongs, cook them just until they get a little brown color on them, around 2 minutes -- 75% cooked. Remove them from the pan and cover them in a bowl.
- OK you can get the pasta water boiling now and add your linguini stir occasionally. Turn your sauce pan up to medium and add your shrimp and mix well coating all the shrimp, cook for around 5 minutes on medium then reduce the heat to med-low. Cook the pasta to your liking, I like it al dente, I keep taking a piece out of the pot and checking it -- don't cook it too much you can lower the heat a little and it will continue to cook.
- When the pasta is cooked pour it out into a strainer and shake it up a bit to remove access water, return it to the pot and add your shrimp and sauce and mix it up bringing the bottom to the top a couple of times.
- Pour the pasta out into a large serving bowl and sprinkle with some parsley. You and your guest can add some cheese as you like -- ENJOY!
